Steps:
- Preheat the oven to 375 degrees F and arrange a rack in the bottom third of the oven.
- In a medium bowl, combine the cream cheese, pumpkin puree, cream, brown sugar and pumpkin pie spice. Using electric hand mixer, add the eggs, 1 at a time incorporating completely between each addition.
- Pour the filling into the pie shell and bake on a sheet tray until the filling is mostly set and the crust has browned, about 50 to 60 minutes. The center will still look slightly loose. Remove from the oven and cool to room temperature.
- For Whipped Cream:
- In a chilled bowl, beat the heavy cream with a hand mixer until beginning to thicken. Add the brown sugar and pumpkin pie spice and continue to beat until soft peaks form. Spread the whipped cream over the pie and serve immediately or hold in the refrigerator for up to 2 hours before serving. .

- For the bars: Preheat the oven to 350 degrees F. Grease a 13-by-9-inch metal baking pan with nonstick baking spray and line the bottom and sides with parchment paper, leaving an inch of overhang on the sides.
- Whisk together the flour, cinnamon, baking powder, baking soda, ginger, salt, nutmeg and cloves in a large bowl until evenly combined. In another bowl, whisk together the granulated sugar, oil, vanilla, eggs and pumpkin puree until smooth. Pour the pumpkin mixture over the dry ingredients and stir until the batter just comes together.

- Set oven to 325 degrees.
- Grease two 8x4-in loaf pans, or use mini loaf pans if desired.
- In a med bowl, combine all filling ingredients until smooth; set aside.

- Preheat the oven to 350 degrees F (175 degrees C). Generously grease a 12-cup fluted tube pan (such as Bundt®).

- In a large bowl, beat eggs and sugar. Beat in remaining cake ingredients.
- Grease a 10"x15" jelly roll pan. Line pan with waxed paper, then grease and lightly flour the waxed paper.
- Pour batter into the pan and spread evenly. Bake at 350F for 15 minutes. *Cake cooks fast so watch carefully to avoid burning the edges.
- While cake is baking, sprinkle powdered sugar heavily over the kitchen towel, using a sieve or sifter.
- Turn hot cake onto the towel.
- Remove waxed paper. Trim off burnt or crusty edges.
- Sprinkle more powdered sugar over the hot cake and quickly roll up with towel inside. Let cake cool completely, about 30 minutes.
- Meanwhile, prepare filling by beating together all ingredients until smooth and creamy.
- Unroll cooled cake and spread with the filling mixture. Roll up cake with filling on the inside. Wrap in waxed paper and then foil.
- Refrigerate or freeze. To serve, slice cake about 1/3 inch thick and sprinkle with powdered sugar.
- Note - cake cuts best when still slightly frozen.

- In a medium saucepan over medium heat, melt butter. Stir in the sugar and mix well. Stir in graham cracker crumbs. Pat the mixture into baking dish.

- Preheat oven to 375 degrees.
- Grease and flour 18 muffin cups.
- FILLING: Beat cream cheese until soft.
- Add egg, vanilla and brown sugar.
- Beat until smooth.
- Set aside.
- STREUSEL TOPPING: Mix flour, sugar, cinnamon and pecans.
- Add butter and cut it in with a fork until crumbly.
- Set aside.
- MUFFIN BATTER: In a large bowl, sift together flour, sugar, baking powder, cinnamon and salt.
- Make a well in the center of flour mixture and gradually incorporate eggs, pumpkin, olive oil and vanilla.
- Beat together until smooth.
- Fill cups with pumpkin mixture until they're about 1/2 full.
- Carefully add one tbsp of the cream cheese mixture right in the middle of the batter.
- If you're using paper cups, try to keep cream cheese from touching the paper.
- Sprinkle on the streusel topping.
- Bake at 375 degrees for 20 to 25 minutes.

- Preheat oven to 350.
- Mix cream cheese with one egg and 3 tablespoons of sugar. Put the entire mixture on a piece of wax paper or parchment paper and shape it into a long log.
- Put it in the freezer while you mix and fill the pans, up to an hour.
- Unwrap and cut with a sharp knife so each cream cheese disk equals 1-2 teaspoons. If the cream cheese disks are too big around, cut thick slices and then cut them in half. This lets you push it down into the batter easier.
- Mix all ingredients together (except cream cheese and nuts).
- Fill muffin tins (greased or paper cups) half full.
- Put cream cheese disc in the middle, pressing down.
- Sprinkle with 1 tsp chopped nuts.
- Bake at 350 for 20-25 minutes, until a toothpick comes out clean from the muffin part (do not touch the cream cheese!).
- Let cool in pans for 5 minutes, then remove to racks to cool completely. Do not touch the cream cheese until it cools.
