Pumpkin Caramel Bread Pudding image

This bread pudding was a request from a pregnant friend who was having very specific cravings! A homemade caramel sauce is the base for the custard, which is both flavored and thickened by pumpkin puree. And of course, lots of warm pumpkin pie spice make this the ultimate autumn dessert (pro tip: it also makes a great breakfast treat with coffee).

Nonstick cooking spray
1 cup granulated sugar
3 cups heavy cream
4 tablespoons unsalted butter, cubed
1 teaspoon kosher salt
2 cups whole milk
4 large eggs plus 6 large yolks
1 cup pumpkin puree
1/2 cup packed light or dark brown sugar
2 teaspoons pumpkin pie spice
1 teaspoon pure vanilla extract
8 cups stale cubed challah (about one 1-pound loaf, cut into 1 1/2-inch cubes; see Cook's Note)
1/2 cup raw pecan pieces
Whipped cream or ice cream, for serving

Steps:

  • Preheat the oven to 325 degrees F. Spray a 9-by-13-inch baking dish with cooking spray.
  • Stir together the sugar and 3 tablespoons water in a medium saucepan until the consistency resembles wet sand. Brush down any sugar crystals from the sides of the pan with a wet pastry brush. Cook, undisturbed, over medium-high heat until the sugar melts and turns a dark amber, 8 to 11 minutes. Do not stir during this time but once it starts to turn caramel, you can swirl the pan to distribute the color.
  • While the caramel cooks, bring the heavy cream to a low simmer in a small saucepan. Once the caramel is dark amber, carefully whisk in the warm cream. The cream will bubble up. Add the butter and salt, whisk until smooth, then remove from the heat and set aside.
  • Whisk together the milk, eggs, yolks, pumpkin puree, brown sugar, pumpkin pie spice and vanilla extract in a large bowl. Carefully whisk in 1/3 of the warm caramel sauce until fully incorporated, then whisk in the remaining caramel sauce. Set aside.
  • Toss together the stale bread cubes and the pecans in the prepared baking dish, then arrange them in an even layer. Pour the caramel pumpkin custard over the top. Cover and let soak 30 minutes in the refrigerator, pushing down the bread occasionally to submerge it.
  • Bake until the custard has set and the top is a nice golden brown, 45 to 50 minutes. Remove from the oven and let cool slightly before serving with whipped cream or ice cream.

1 1/2 cups canned pumpkin
2 large eggs
1/4 cup cornstarch
1/2 cup packed light brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon nutmeg
1/4 teaspoon cardamom
2 cups milk
2/3 cup orange juice

Steps:

  • Beat pumpkin and eggs in a large saucepan. Combine cornstarch, brown sugar, cinnamon, ginger, nutmeg, and cardamom in a medium bowl and stir into the pumpkin mixture.
  • Add milk and juice.
  • Cook over medium heat, whisking continuously, until pudding is very thick.
  • Reduce heat and whisk pudding a few seconds to remove any lumps.
  • Divide among 8 dessert bowls.
  • Cover with plastic wrap and refrigerate about 2 hours.

Cooking spray, for pan
1 c. yellow cornmeal
1 c. all-purpose flour
1 tbsp. baking powder
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/2 tsp. baking soda
3/4 tsp. salt
1 c. pumpkin puree
1/2 c. sour cream
1/3 c. brown sugar
1/4 c. melted butter
2 eggs
For the whipped honey butter
1/2 c. butter, softened
2 tbsp. honey
1 tsp. salt
1/4 tsp. ground cinnamon

Steps:

  • Preheat oven to 400° and grease a 9" square baking dish with cooking spray. In a large bowl, whisk together cornmeal, flour, baking powder, cinnamon, nutmeg, baking soda and salt.
  • In a separate medium bowl, whisk together pumpkin puree, sour cream, brown sugar, and melted butter until smooth. Add eggs one at a time, beating well between each addition. Pour over the dry ingredients and stir until just combined.
  • Spread batter in prepared baking dish and bake until a toothpick inserted into the center comes out clean, about 20 minutes. Let cool before slicing into squares.
  • In a medium bowl, whip butter, honey, salt, and cinnamon until fluffy. Serve with cornbread.

This is such an great and easy recipe! We make it every Thanksgiving - we usually end up doubling it and putting it in a 13x9 pan, because every one loves it so much! It also goes great with ham. It's only slightly sweet, and REALLY corny - plus it reheats great for leftovers.

8 tablespoons butter or 8 tablespoons margarine, softened
1 cup sour cream, i use light sour cream
1 (16 ounce) can corn, drained
1 (16 ounce) can creamed corn
1 (9 ounce) box corn muffin mix
1 cup grated sharp cheddar cheese, optional
1 egg

Steps:

  • Preheat oven to 375 degrees Fahrenheit.
  • Grease a 8x8 pan or a 2-quart casserole with non-stick spray.
  • In a large bowl, mix the butter, sour cream, and egg.
  • Stir in the cans of corn and the muffin mix.
  • Pour the mixture into the pan and bake for one hour.
  • If you want to use the cheese- we don't use it- add it after 45 minutes cooking time and stir it in well.
  • The mixture will brown only slightly, but it should be set in the middle and slightly puffed.
