PUMPKIN CINNAMON ROLLS USING BREAD MAKER
Break out the Bread Machine again for this wonderful treat!! I had some pumpkin left over and immediately thought of my cinnamon rolls. Steps:
- 1. Add the first 9 ingredients to your bread machine in the order listed. My machine requires the wet ingredients first. Just check your manual if not sure on the order. Set aside the Pumpkin, Brown Sugar, Cinnamon, Pumpkin Pie Spice, Egg Yolk, raisins and walnuts for the filling. Program bread machine for the dough setting. My dough cycle takes about 1 1/2 hours.
- 2. While waiting for the dough cycle to complete, prepare the filling by combining the pumpkin, cinnamon, pie spice and yolk in a small bowl. Mix well. Store in refrigerator until ready to use. When dough has risen completely, remove from bread pan. Place on a floured surface and knead slightly. (about 2-3 minutes) Roll dough into a large rectangle.
- 3. With a spatula or clean hand, spread out the 1/4 cup butter onto the dough, making sure that all areas have some butter on it. Sprinkle on brown sugar and gently pat down, adding on top of this the pumpkin mixture spreading evenly, and top this with raisins and walnuts as an optional ingredient.
- 4. Roll into a log like a jelly roll and cut into 8 equal pieces. Place the eight rolls in a prepared 13x9 inch baking pan. I use a glass pan that I have buttered the inside. You can use a non stick spray if you like.
- 5. Cover rolls with a clean towel and place in a warm area to rise. (about an hour).
- 6. Preheat oven to 350° Fahrenheit. When rolls have doubled in size place on middle oven rack and bake for 15 to 20 minutes.
- 7. When finished remove to wire rack to cool, or serve warm. Icing is optional. NOTE: If you choose to freeze these, do not ice them before freezing. Let the rolls cool completely, wrap 1 or 2 in cling wrap and then place into freezer bag. Then you can pull the two out without having to defrost the whole thing to have one, and you can frost or not frost.

Cut into 12 slices., Place in a greased 9-in. round pan, cut side down. Cover; let rise in a warm place until doubled, about 45 minutes. Preheat oven to 375°., Bake until golden brown, 20-25 minutes. Place on a wire rack to cool slightly. Mix frosting ingredients; spread over warm rolls.

- In a bowl, combine 1-1/2 cups flour and yeast; set aside. In a saucepan, heat and stir pumpkin, milk, sugar, 2 tablespoons butter and salt until warm (120°-130°) and butter is almost melted. Add to flour/yeast mixture along with egg. Beat on low speed for 30 seconds. Beat on high speed for 3 minutes. Stir in enough remaining flour to make a moderately stiff dough., Knead on a lightly floured surface until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. - For the dough: In a large saucepan, combine the milk, vegetable oil and granulated sugar. Heat until hot but not boiling, then remove the pan from the stove and allow it to cool until the mixture is warm to the touch but not too hot. Sprinkle the yeast over the surface of the liquid and allow it to sit for 5 minutes. Stir in the pumpkin puree until combined.
- Combine 4 cups of the flour with the cinnamon, ginger and nutmeg. Sprinkle it into the saucepan and stir until it just comes together. Cover the saucepan with a dish towel and set in a warm, draft-free place for 1 hour.
- After 1 hour, the mixture should be very puffy and at least doubled in size. Stir in the baking powder, baking soda, salt and remaining 1/2 cup flour until totally combined.
- Preheat the oven to 375 degrees F. Drizzle butter into 3 pie pans (or a larger baking dish) and smear it all over the bottom of the pans.
- Turn out the dough onto a floured surface and press it into a rectangular shape. If it is overly sticky, sprinkle generously with flour until easier to handle. Flour a rolling pin and roll the dough into a large rectangle about 18 inches by 24 inches.
- For the filling: Drizzle the melted butter over the dough and smear it all over the surface with your fingers. Mix together the brown sugar, granulated sugar, cinnamon, ginger and nutmeg in a medium bowl. Sprinkle this mixture all over the surface of the dough, covering all the melted butter. Sprinkle with 1/2 cup to 3/4 cup chopped pecans.
- Starting at the top, roll the dough toward you into a large log, moving back and forth down the line of dough (in a "typewriter" motion) and always rolling toward you. Roll it tightly as you go so the rolls with be nice and neat. When it's all rolled, pinch the seam closed and turn the roll over so that the seam is facing down. Slice into 1/2- to 3/4-inch slices and place the slices in the buttered pan(s). Allow to rise for 20 minutes.
- Bake until the rolls are nice and golden brown around the edges, 15 to 18 minutes.
- For the frosting: While the rolls are baking, make the frosting by combining the cream cheese, powdered sugar, milk, butter and salt in the bowl of an electric mixer. Beat until fluffy, adding more milk if you'd like a thinner frosting.
- Frost the rolls the second they come out of the oven. Sprinkle the extra pecans over the frosting, then allow them to sit for 15 minutes before serving.
- Delicious!
PUMPKIN CINNAMON ROLLS
Heres a new look at an old favorite. Yumm. I used 1 1/2 tsp cinnamon and 1/3 tsp of nutmeg, 1/2 a cup of brown sugar and a really good handful of raisins (not originally ask for at all). After all, isn't it the good stuff in the middle that makes a cinnamon bun?

- In small saucepan, heat milk and 2 tablespoons butter just until warm (120-130 degrees) and butter is almost melted, stirring constantly. In large mixer bowl, combine pumpkin, sugar and salt. Add milk mixture and beat with electric mixer until well mixed. Beat in egg and yeast.
- In separate mixing bowl, combine flours. Add half of flour mixture to pumpkin mixture. Beat mixture on low speed 5 minutes, scraping sides of bowl frequently. Add remaining flour and mix thoroughly (dough will be very soft). Turn into lightly greased bowl, then grease surface of dough lightly.
- Cover and let rise in warm place until doubled, about 1 hour. Punch dough down. Turn onto floured surface. Knead a few turns to form a smooth dough, sprinkling with enough additional flour to make dough easy to handle. On lightly floured surface, roll dough into 12x10 inch rectangle.
- In small bowl, combine brown sugar and cinnamon. Brush surface of dough with melted butter. Sprinkle with brown sugar mixture. Beginning with long side of dough, roll up jellyroll style. Pinch seam to seal. With sharp knife, cut roll into 12 1- inch slices. Place rolls, cut side up, in greased 9 inch square baking pan. Cover and let rise until nearly doubled, 30 to 45 minutes.
- Bake rolls at 350 degrees about 20 minutes or until golden. Remove from pan to waxed paper-lined wire rack. Cool 10 to 15 minutes. Drizzle with Caramel frosting. Makes 12 rolls.
- Frosting:.
- In small saucepan, heat butter until melted. Stir in brown sugar and milk.
- Stir in brown sugar and milk. Cook over medium low heat 1 minute.
- Transfer to small mixer bowl and cool mixture. Stir in vanilla, salt, and confectioners' sugar. Beat with electric mixer until well blended. If necessary, add more confectioners' sugar for desired consistency.

- Method for Buns:.
- 1. Place flour, sugar, cinnamon, yeast, salt and butter in the pan of your bread machine.
- 2. Mix milk, butternut and eggs together and pour this on top of dry ingredients and butter already in your bread machine pan.
- 3. Select the dough cycle of your machine according to your manufacturer's directions (about 2hours), (alternatively you can mix by hand, kneading and allowing time to rise).
- 4. When cycle is complete, remove dough to a lightly floured board and punch down.
- 5. Line a baking tray about 9 x 12 x 2 with butter.
- 6. Mix together the dry ingredients for the filling (pecan nuts, brown sugar and cinnamon) and put to one side.
- 7. Roll the dough out to form a rectangle about 18 x 12 inch's.
- 8. Spread the 120ml of butter from the filling evenly on the one side of the rolled out dough.
- 9. Evenly spread the filling ingredients (pecan nuts, brown sugar and cinnamon) over the buttered dough rectangle and roll up from the shortest side to make a cylinder of rolled up dough.
- 10. Divide the rolled up dough by cutting it into 12 equal pieces and place these in the baking sheet 3 rows of 4. .
- 11. Now cover and let rise in a warm place until doubled (about 40mins to 1 hour).
- 12. Bake at 160°C or 350°F for 18 to 20 minutes or until lightly browned.
- 13. Remove from the oven and let cool for 5 mins before topping with the icing.
- Method for Icing:.
- 1. In a bowl mix together the icing sugar, finely chopped pecan nuts and ground cinnamon and pour in a few teaspoons of warm boiled water to get a stiff liquid consistency.
- 2. Pour a tablespoon of the icing liquid on top of each bun and allow it to cool and the icing to set.
- 3.Enjoy with a cuppa.
