Vegan Pumpkin Spice Bread with Sourdough Discard image

Pumpkin bread isn't just for fall! I always have a lot of sourdough discard in the refrigerator and this is a great way to use it up no matter what the season. This is based on a King Arthur® recipe but tweaked a bit based on sugar and spice preferences, and made vegan so my daughter can enjoy it. I love to make multiple batches, slice the loaves, and freeze them in 1/2-loaf portions to thaw and enjoy as desired.

Number Of Ingredients 16

1 ¾ cups sourdough starter discard
4 ¼ cups all-purpose flour
1 ¾ teaspoons ground cinnamon
1 ¼ teaspoons salt
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground ginger
¾ teaspoon ground cloves
1 (15 ounce) can pumpkin puree
1 cup mashed ripe banana
1 cup brown sugar
⅔ cup canola oil
⅓ cup molasses
2 teaspoons vanilla extract
¾ cup raisins
¾ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F. Lightly grease two 9x5-inch loaf pans.
  • Stir sourdough discard in a bowl. Let sit until bubbles start to form, about 5 minutes.
  • Meanwhile, whisk flour, cinnamon, salt, baking powder, baking soda, ginger, and cloves together in a medium bowl until well combined.
  • Combine pumpkin puree, mashed banana, brown sugar, oil, molasses, and vanilla extract in a separate large bowl; whisk vigorously until brown sugar is completely incorporated with no chunks remaining. Stir in sourdough discard until evenly distributed. Add flour mixture gradually, at first whisking to combine and then switching to a heavy spoon and stirring until just incorporated; batter will be thick. Stir in raisins and walnuts and spoon into the prepared loaf pans.
  • Bake in the preheated oven until a toothpick inserted in the center of each loaf comes out clean, 60 to 70 minutes. Remove from the oven and let cool in the pans for 5 minutes. Transfer loaves to a wire rack and cool completely before slicing, about 30 minutes.

A moist and spicy pumpkin bread with a strong pumpkin flavor! The cardamom and pepper give this recipe a Scandinavian flair. This recipe makes loaves or muffins, and can be made with or without sourdough starter. To substitute starter add 2/3 cup water to wet ingredients and 1 1/4 cups flour to the dry ingredients

1 (15 ounce) can pumpkin puree
4 eggs
1 cup vegetable oil
1 1/4 cups unfed sourdough starter (300 grams by weight)
1 1/4 cups white sugar
1/2 cup brown sugar
2 1/3 cups flour
2 teaspoons baking soda
2 teaspoons salt
2 teaspoons ground cinnamon
2 teaspoons ground ginger
1 1/2 teaspoons ground black pepper
1 1/2 teaspoons ground cardamom
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves

Steps:

  • Preheat oven to 350. Grease and flour 3 3x7 loaf pans or line muffin pans.
  • Combine pumpkin, eggs, starter (or water if using), and sugars until smooth.
  • In a separate bowl, combine flour, soda, salt, and spices.
  • Gradually add dry ingredients to wet ingredients until fully incorporated.
  • Pour into prepared pans and bake until a toothpick inserted into the center comes out clean (Approximately 30 minutes for muffins, 60 minutes for loaves).

I love pumpkin and I love using my sourdough starter so this recipe combines both. It is a good bread and can be frosted with either a simple glaze or cream cheese frosting if desired.

1/2 cup sugar
1/2 cup brown sugar
4 cups Bisquick
2 teaspoons cinnamon, heaping
1 teaspoon pumpkin pie spice
2 eggs
1 cup sourdough starter
1 cup pumpkin, canned
1 cup raisins
1 1/2 cups milk
4 tablespoons vegetable oil
2 cups pecans, chopped

Steps:

  • Preheat oven to 350 degrees F.
  • Grease 2 loaf pans and set aside.
  • Combine sugars, bisquick, cinnamon, pie spice and set aside.
  • In a mixing bowl beat eggs.
  • Stir in sourdough starter and then remaining ingredients.
  • Stir in dry ingredients just until moistened.
  • Taking care not to over blend.
  • Pour into prepared pans and let rest at least 15 minutes.
  • Bake for aprox.
  • 40 minutes or until pick comes out clean.
  • Cool out of the pans on a wire rack.
  • I slice this bread after it has cooled and freeze some of the slices as it thaws beautifully.

1 1/2 cups whole wheat flour
1 tablespoon sugar
1 tablespoon baking powder
1 teaspoon cinnamon

1 cup whole milk (more as needed)

1 cup sourdough starter
1 cup pumpkin

Steps:

  • Dump all in a bowl.
  • Preheat pan w/non-stick spray.
  • Whisk together. Add more milk as needed.
  • Test pan for readiness by waiting until water droplets sizzle.
  • Drop by 1/4 c amounts onto hot pan. Flip when bubbly.

  • Preheat the oven to 350°F. Line 9x5 loaf pan with parchment paper and spray with baking spray (or butter and flour the pan).
  • Combine the dry ingredients in a large bowl. Whisk to combine the ingredients and set aside. In a separate large bowl, combine the eggs and whisk well. Add the oil, sugar, starter and vanilla. Stir until it is all combined. Add the pumpkin and mix until incorporated. Use a spatula to get all the ingredients from the side of the bowl and combine them.
  • As soon as you prep batter, prep the candied pepitas (pumpkin seeds). There are two ways to make it: you could heat up the pumpkin seeds with the honey and oil in a small skillet until it is combined, OR if you have a microwave, microwave it for 10 seconds to melt the honey and help it combine easier.
  • Transfer batter to prepared pan. Smooth the top and sprinkle the candied pepitas (pumpkin seeds) over the top (INSTRUCTIONS HOW TO CANDY THEM IS ABOVE).
