PAUL'S PUMPKIN BARS
These are very moist, and so far I haven't found anyone who doesn't love them!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix the eggs, sugar, oil, and pumpkin with an electric mixer until light and fluffy. Sift together the flour, baking powder, baking soda, cinnamon and salt. Stir into the pumpkin mixture until thoroughly combined.
- Spread the batter evenly into an ungreased 10x15 inch jellyroll pan. Bake for 25 to 30 minutes in preheated oven. Cool before frosting.
- To make the frosting, cream together the cream cheese and butter. Stir in vanilla. Add confectioners' sugar a little at a time, beating until mixture is smooth. Spread evenly on top of the cooled bars. Cut into squares.

- Butter one 9x13 inch baking pan. Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl combine shortening, brown sugar, flour, baking soda, baking powder, cinnamon, ginger, nutmeg, vanilla pumpkin and eggs. Mix until smooth. Spread evenly in pan and bake for 25 minutes. Frost with cream cheese frosting when cooled.

- In a medium bowl, combine dry ingredients (flour, oats, pumpkin pie spice, salt and baking soda). Stir to combine.
- In a large bowl, beat 2 eggs. Add pumpkin puree, applesauce, brown sugar and vanilla extract. Stir to combine the wet ingredients. Add the dry ingredients to the wet ingredients and stir to blend, making sure to scrape the bottom of the bowl to combine all the ingredients.
- Add half of the pepitas and pecans to the batter. Pour into your prepared 8x8 pan and spread evenly throughout the pan.. Sprinkle the remaining pepitas and pecans over the top.

- Preheat oven to 350°F. Line an 8x8 or 9x9 pan with foil, leaving overhang on at least two sides so that the bars can be easily removed. Lightly grease the foil (I mist it with nonstick spray).
- Whisk sugar, spices and salt until combined. Add pumpkin, eggs, egg yolk, half-and-half, and vanilla and whisk until combined. Pour the filling into the crust, then return to the oven.
- In a small saucepan, combine the brown sugar, butter and salt. Bring to a simmer and cook for 2 minutes, whisking frequently. Keep it on the heat and add the half and half, whisking constantly. Continue whisking and simmer (don't boil) for one additional minute. Off the heat, fold in the chopped pecans. Allow the sauce to cool to room temperature. It will thicken up a bit and become the perfect consistency for pouring over the pie.
