Steps:

  • In a large deep skillet, saute 2 chopped red onions, 2 minced garlic cloves and 3 chopped celery stalks in 1 stick butter for 1 minute.
  • Season with salt and pepper and add 4 diced peeled apples, 1 tablespoon chopped thyme, 1 teaspoon aniseed and 1 cup golden raisins; cook 5 minutes.
  • Pour in 4 go 6 cups chicken broth. Simmer until step 5.
  • In a large bowl, mix 3 eggs, a scoop of grainy mustard and 3 tablespoons each chopped parsley and tarragon.
  • Add to the bowl 8 cups each toasted pumpernickel and sourdough bread cubes and the hot broth mixture.
  • Gently toss the stuffing, then spread in a buttered 9-by-13-inch baking dish. Dot the top with butter or turkey pan drippings, cover and bake 30 minutes at 350. Uncover and bake until golden, 20 more minutes.

1 apple - peeled, cored, and chopped
1 small onion, chopped
1 celery stalk, diced

1 cup unsweetened applesauce
1 ½ cups water

½ teaspoon kosher salt
¼ teaspoon ground cloves
¼ teaspoon ground nutmeg

1 (3 pound) boneless rolled pork loin roast

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Melt the butter in a medium saucepan over medium heat. Stir in the apple, onion, celery, and walnuts, and cook 5 minutes, until vegetables are tender. Mix in the applesauce, water, and breadcrumbs. Cook and stir until the breadcrumbs have absorbed the liquid. Season with cinnamon, kosher salt, cloves, nutmeg, and ginger.
  • Unroll the pork roast, and place in a baking dish. Season with salt and pepper to taste. Spoon the stuffing mixture over the roast. Arrange any excess stuffing around the roast. Roll the roast so that the fatty side is on top, and tie with kitchen twine.
  • Bake 45 to 50 minutes in the preheated oven, to an internal temperature of 145 degrees F (63 degrees C).

Steps:

1 cup SunMaid brand raisins
1-1/2 cups chopped walnuts, but not too fine you want to see the walnuts in the stuffing
1 teaspoon sage
1/2 teaspoon poultry seasoning
1 teaspoon salt
1/2 teaspoon pepper
1-1/2 cups water

Steps:

  • Put dry bread crumbs in a large bowl - set aside.
  • Melt butter in frying pan and add all ingredients, except the water and bread crumbs. Cook on medium heat until the onions and celery are transparent, but not burned. Turn off burner.
  • Add the water to mixture and add all at once to the dry bread crumbs. Depending on climate you may want to add a little less or more water to moist the bread crumbs but not too wet! Once stuffing is cooled down, stuff your turkey.

1 lb cremini mushrooms, trimmed and quartered
1/4 cup chopped fresh dill

1 tablespoon caraway seeds, lightly crushed

Steps:

  • Preheat oven to 200°F.
  • Cut enough of both breads into 1-inch cubes to measure 6 cups each. Spread bread cubes in 2 large shallow baking pans and bake in upper and lower thirds of oven, stirring occasionally and switching position of pans halfway through baking, until bread is dry, 50 minutes to 1 hour total. Cool.
  • Increase oven temperature to 400°F.

1/2 cup rye flour
2 packages (1/4 ounce each) active dry yeast

3-1/2 to 4 cups bread flour
1-1/2 cups unsweetened apple juice
3/4 cup plain yogurt
1/4 cup butter, cubed
1 large egg, room temperature
2 cups dried apples, chopped
1 cup raisins
1 cup chopped walnuts
1 large egg, lightly beaten, optional

Steps:

  • In a large bowl, mix whole wheat flour, rye flour, yeast, salt and 2 cups bread flour. In a small saucepan, heat apple juice, yogurt and butter to 120°-130°. Add to dry ingredients; beat on medium speed 2 minutes. Add egg; beat on high 2 minutes.
