- Combine milk and chicken broth in a large pot. Add pulled pork and barbecue sauce and stir. Stir in chili powder, black pepper, oregano, and salt. Let simmer over low heat, stirring occasionally, for 45 minutes.

PULLED PORK
The easiest pulled pork recipe you'll ever make. No tricky measurements involved, minimal ingredients and a mouth-watering smoky barbecue result

- Mix together 2 tsp each smoked paprika, ground cumin, pepper, and brown sugar, plus 1 tsp salt. Rub over the 2.5kg boneless shoulder of pork.
- Put the pork in a big casserole dish, skin-side up, and pour in 2 medium mugfuls of cider.
- Cover with a lid and cook in the oven at 150C/130C fan/gas 2 for anywhere between 4 and 8 hrs until falling apart. Check every few hours in case it gets dry - if it does, add another mugful of cider.
- Take it out of the oven and put the meat in a big dish, leaving the liquid in the casserole.
- Cut the skin off, then shred the meat using two forks. Ditch any fatty bits, and skim any excess fat off the surface of the sauce.
- Add a mugful of a good smoky BBQ sauce to the casserole, mix it in, then ladle some into a bowl for dipping.
- Put the pulled pork back in the casserole with the juices so it stays moist. Season to taste. Can be made one day ahead.
- Serve in soft white rolls with coleslaw and the bowl of juices on the side for 'French dipping' the sandwich while you're eating.

QUICK TACO SOUP WITH PORK CARNITAS
Enchiladas in a bowl! A thick, chunky soup on the table in 15 minutes with amazing flavours. This recipe is part of my Pork Carnitas series so is made using Pork Carnitas (Mexican Pulled Pork) but you can also make this with shredded chicken. By using pre cooked meat this is a super fast meal you can get on the table in 15 minutes!

- Heat the oil in a large saucepan over high heat.
- Add the pulled pork and cook for 1 minute until parts of it are browned, then remove from the saucepan. Do this step even if you are using shredded chicken or another meat.
- Add garlic and onion, sauté until onion becomes translucent (2 minutes), then add the capsicum (bell pepper) and cook for 1 minute until softened.
- Return the pulled pork into the saucepan and add all other ingredients except salt and pepper. If you are making this ahead to FREEZE, see below for instructions.
- Stir to scrap the brown bits from the pulled pork off the bottom of the pan to mix in with the soup flavours.
- Bring to boil then turn down heat slightly and allow to simmer rapidly for 3 minutes so the flavours can come together. If you are using crushed tinned tomatoes instead of passata, let it simmer for a further 5 minutes to let the tomatoes breakdown a bit. If the soup gets too thick to your liking, just add a bit more water.
- Do a taste test, then season with salt and pepper. It is important to season last because different stock brands have different levels of saltiness.
- Serve with toppings of choice. The more toppings = more delicious!

- MAKE THE SPICE BLEND: Combine the spice blend ingredients, from the garlic powder through the salt, in a bowl. Set aside.
- MAKE THE MARINADE: In a bowl, combine the pork marinade ingredients from the olive oil through the vinegar.
- Rinse and pat dry the pork, then place it in a large sealable plastic bag. Pour in the marinade, seal, and toss the pork gently a few times to make sure all the meat is well coated with the marinade. Place in the refrigerator to marinate overnight or at least 8 hours.
- PREPARE FOR SLOW COOKING (PHASE 1): Have your slow cooker at the ready. Coat a skillet with oil spray. Heat the skillet on medium, and add the bacon. Cook until the bacon is crisp, turning occasionally. Will take 5 to 10 minutes. Remove the bacon to a plate lined with paper towel and set aside to cool.
- Pour out excess bacon grease from the skillet. Heat a tablespoon of olive oil in the skillet used for the bacon. Add the onions, and cook on medium for 5 minutes.
- Take the pork out of the marinade, reserving the marinade. Add the pork to the skillet, and cook for 5 to 10 minutes, turning the meat occasionally to brown it on all sides.
- Transfer the pork and onions to the slow cooker.
- Add the remaining Phase 1 ingredients to the slow cooker: tablespoon of spice blend, maple syrup, soy sauce, apple cider chicken broth, and reserved marinade.
- Cover the slow cooker. Set the slow cooker to low, and cook for 8 hours.
- After the 8 hours of slow cooking, the meat will be fall apart tender. Remove the meat to a platter, and give it a few minutes to cool. Then use two forks to shred the pork, breaking it into bite sized pieces.
- Return the shredded pork to the slow cooker along with the Phase 2 ingredients: mustard, maple syrup, soy sauce, 1 teaspoon of spice mix and cabbage.
- Cook on low another 30 to 60 minutes. The longer cook time will allow for more of the liquid to be absorbed by the pork.
- Scoop and serve the pork out of the slow cooker with a slotted spoon. Enjoy!

LEFT OVER PORK AND BLACK BEAN TACO SOUP
I made this today using some left over pork roast. You can adjust according to your own tastes. This soup will freeze well. Cooking time includes dry bean cooking. If using canned it should only take 20 minutes.

- For dry black beans, rinse and sort. Soak them in 6 cups of water. Simmer on medium for about 1 hour until tender. If using canned beans, place them in the pot with 4-5 cups of water.

- Make the soup: Combine the bacon, onion, garlic, tomato paste, smoked paprika, Creole seasoning and chili powder in a food processor; pulse to make a coarse paste.
- Heat the vegetable oil in a Dutch oven or heavy-bottomed pot over medium heat. Add the bacon-spice paste and cook, stirring occasionally, until dark brown, about 6 minutes. Add the ribs, turning to coat. Stir in the vinegar and molasses, scraping up any browned bits from the bottom of the pot.
- Stir in the tomatoes, chicken broth and 2 cups water. Cover and bring to a simmer, then reduce the heat to low and gently simmer, stirring once or twice, until the ribs are tender, 2 hours to 2 1/2 hours.
- Transfer the ribs to a cutting board and shred the meat; discard the fat and bones. Position the pot halfway off the burner and increase the heat to medium. The fat will migrate to the cooler side; use a ladle to skim it off. Reposition the pot over the burner and add the shredded pork and the beans. Cook, stirring occasionally, until heated through, about 10 minutes.
- Meanwhile, prepare the bread: Spread each slice evenly with the butter and relish. Top with the scallions and parsley. Ladle the soup into bowls and serve with the bread.

- SOFTEN: Heat a saucepan or dutch oven over low-medium heat. Dice the onion, then smash and peel the whole garlic cloves. Add the oil, diced onion and smashed garlic to the pan, stirring through the oil to coat. Allow the onion and garlic to soften, stirring occasionally to avoid any burning or coloring. Meanwhile, chop the cauliflower into evenly sized florets and add to the pan along with the salt and broth. Increase the heat to medium-high and bring the broth to a simmer. - Start with the pulled pork. Preheat the oven to 150°C/300°F. Heat the oil in a large oven-proof pan on a high heat. Season the pork with the salt and pepper and place the pork in the pan. Brown on all sides (this should take about 15 minutes altogether).
