PULLED PORK TAMALE CASSEROLE

Pulled Pork Tamale Casserole image

From time to time, I cook a pork shoulder and pull the pork to be used with a few different meals. This is a recipe I came up with that may not be a traditional tamale but the ingredients meet the criteria and it is a filling comfort food. There is no reason why you couldn't substitute shredded chicken or ground beef for the pork.

PULLED PORK

Pulled pork image

The easiest pulled pork recipe you'll ever make. No tricky measurements involved, minimal ingredients and a mouth-watering smoky barbecue result

Provided by Emma Freud

Categories     Dinner, Main course

Time 8h15m

Number Of Ingredients 10

2 tsp smoked paprika
2 tsp ground cumin
2 tsp pepper
2 tsp brown sugar
1 tsp salt
2 medium mugfuls of cider
boneless shoulder of pork (about 2.5kg)
a mugful of a good smoky barbecue sauce
soft white rolls
coleslaw (see 'Goes well with...' below)

Steps:

  • Mix together 2 tsp each smoked paprika, ground cumin, pepper, and brown sugar, plus 1 tsp salt. Rub over the 2.5kg boneless shoulder of pork.
  • Put the pork in a big casserole dish, skin-side up, and pour in 2 medium mugfuls of cider.
  • Cover with a lid and cook in the oven at 150C/130C fan/gas 2 for anywhere between 4 and 8 hrs until falling apart. Check every few hours in case it gets dry - if it does, add another mugful of cider.
  • Take it out of the oven and put the meat in a big dish, leaving the liquid in the casserole.
  • Cut the skin off, then shred the meat using two forks. Ditch any fatty bits, and skim any excess fat off the surface of the sauce.
  • Add a mugful of a good smoky BBQ sauce to the casserole, mix it in, then ladle some into a bowl for dipping.
  • Put the pulled pork back in the casserole with the juices so it stays moist. Season to taste. Can be made one day ahead.
  • Serve in soft white rolls with coleslaw and the bowl of juices on the side for 'French dipping' the sandwich while you're eating.

4 Cups Pulled Pork
4 Cups Mashed Cauliflower, 1 Cup Separate
3 Cups Sauteed Shredded Cabbage
1/2 TSP Kosher Salt
1/4 TSP Black Pepper
1/4 TSP Balsamic Vinegar

Steps:

  • Use a large, heavy bottom sautee pan. Add in the cooking fat over high heat. Add in all the ingredients for the cabbage. Cover and cook for 5 minutes. Reduce the heat to medium-low, stir every 4-5 minutes and cook until tender- about 20 minutes more. Set aside.

  • In an oven proof pan, add the onions to the bottom. Layer on the browned pork on top. Smear each piece of pork with the dijon mustard. Add in the remaining ingredients. Cover with foil and braise for 1.5 hours. Remove from the oven and shred the pork with two forks. Discard the braising liquid or use for another recipe.
  • Preheat your oven to 350 degrees. Lightly grease a 9X13 casserole dish. Add 1 cup cauliflower to the dish and spread to cover the bottom. If you need more, add more.
  • In a bowl, combine the remaining ingredients. Keep 1 CUP shredded cheese set aside for the topping. Taste the mix and adjust any seasonings. Add the mixture into the baking dish and spread with a spatula until it is even. Top with the cheese and cook for 30 minutes in the oven. Serve hot and enjoy!

PULLED PORK WITH CARAMELIZED ONIONS

Pulled Pork with Caramelized Onions image

Traditional pulled pork is barbecued, which gives it a smoky flavor. But the slow cooker happens to be the absolute easiest way to cook pulled pork--and you can get a hint of smoke by adding chipotle chile. Serve the pulled pork with potato salad, collard greens and grits. Or make it into a sandwich and serve it on a bun with coleslaw.

Provided by Judith Finlayson

Categories     Healthy Pulled Pork Recipes

Time 9h

Number Of Ingredients 11

1 tablespoon extra-virgin olive oil
3 large onions, thinly sliced
⅓ cup raw cane sugar, such as Demerara or turbinado (see Notes)
4 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon freshly ground pepper
½ teaspoon salt
⅓ cup cider vinegar
1 cup chili sauce, such as Heinz
1 1/2-3 teaspoons minced chipotle chile in adobo sauce (see Notes)
3 pounds boneless pork shoulder or blade (butt) roast, trimmed

Steps:

  • Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until they begin to soften, 3 to 6 minutes. Add sugar and continue to cook, stirring constantly, until the onions are golden brown, 6 to 8 minutes more. Add garlic, oregano, pepper and salt and cook, stirring, for 1 minute. Add vinegar and bring to a boil. Cook until mostly evaporated, 30 seconds to 1 minute. Remove from the heat and stir in chili sauce and chipotle to taste.
  • Place pork in a 4-quart (or larger) slow cooker and cover with the sauce. Cover and cook until the pork is almost falling apart, about 4 hours on High or 8 hours on Low.
  • Transfer the pork to a cutting board and shred using two forks. Stir back into the sauce.
