TURKEY CRANBERRY SANDWICH

JUST AWESOME!!! This sandwich is similar to the one on the menu at Applebee's Restaurant and is absolutely delicious! Bread of your choice can be used, but it must be grilled to get the true flavor and the goodness of melted cheese.

2 slices cooked turkey
2 slices cooked bacon
1 slice provolone cheese
1 tablespoon mayonnaise
2 tablespoons whole cranberry sauce
1 teaspoon red onion, finely chopped
2 slices wheat bread (or your choice)
2 teaspoons butter (for grilling)

Steps:

  • Chop red onion very fine and mix with whole cranberry sauce.
  • Smear mayonnaise on one side of sliced bread. Smear cranberry-onion mixture on the other slice of bread.
  • Layer turkey slices, bacon and provolone on one side of bread and top with other slice of bread.
  • Using a skillet or grill pan, grill sandwich with butter and remove from heat when cheese has melted. Cut sandwich into 2 halves and serve.

SLOW-COOKER PULLED TURKEY

1 1/2 teaspoons salt
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/4 teaspoon pepper
3 medium onions, quartered
12 cloves garlic, peeled
1 bone-in skin-on whole turkey breast (about 6 pounds), rinsed and dried
1/2 cup (1 stick) butter, room temperature

Steps:

  • In a small bowl, mix the salt, garlic powder, smoked paprika and pepper until well combined. Put the onions in the bottom of a 6-quart slow cooker with the garlic cloves.
  • Slowly work your fingers under the skin of the turkey breast to separate the skin from the breast, being careful not to tear the skin. Rub the butter under the skin, covering the entire breast as evenly as possible, then rub the outside of the skin with the garlic powder mixture.
  • Place the turkey breast on top of the onions and garlic in the slow cooker and set the slow cooker to low. Cook until the meat is falling apart, 6 to 8 hours depending on the size of the breast.
  • Remove the turkey and any bones from the slow cooker. Pull the meat off of the bone and place the turkey back into the juices left in the slow cooker. Using 2 forks, shred the meat in the juices and allow to rest for 5 to 10 minutes before serving.

leftover cranberry sauce
3 tbsp. ketchup
2 tbsp. Worcestershire sauce
1/2 tsp. smoked paprika
4 c. shredded leftover cooked turkey meat
1/4 c. lower-sodium chicken broth
1/2 c. mayonnaise
4 hamburger buns
1 c. shredded carrots
Dill pickle slices

Steps:

  • In 2-quart saucepan, whisk cranberry sauce, ketchup, Worcestershire, smoked paprika, and 1/8 teaspoon salt. Cook on medium 2 minutes or until hot.
  • Meanwhile, in microwave-safe baking dish or bowl, combine turkey and broth. Cover with vented plastic wrap and microwave on high 2 minutes or until hot.
  • Add cranberry mixture to turkey; stir until well coated. Spread mayonnaise on buns; top each with one-fourth of turkey mixture. Top turkey with carrots and pickle slices.

1 1/2 cups barbecue spice rub
One 3- to 4-pound boneless turkey breast
1/2 head green cabbage
1/4 head red cabbage
1 medium carrot
3/4 cup mayonnaise
1/3 cup sugar
1/4 cup white vinegar
1/8 teaspoon salt
1/8 teaspoon ground black pepper
3 cup fresh cranberries
1 cup sugar
1/2 cup orange juice
1 tablespoon barbecue spice rub
1 1/2 habanero chiles, finely chopped
Four 6-inch deli rolls
8 slices Swiss cheese
Barbecue sauce, for serving

Steps:

  • For the smoked turkey breast: Combine 1 cup spice rub and 2 gallons water in a large container, then add turkey breast to brine. Cover and place in refrigerator overnight.
  • Preheat a smoker for cooking at 200 degrees F.
  • Remove turkey breast from brine and pat dry. Rub with remaining 1/2 cup spice rub. Place in smoker and cook until it reaches an internal temperature of 150 degrees F, about 3 1/2 hours. Remove from smoker and let rest 15 minutes, then slice thin.
  • For the cole slaw: Meanwhile, thinly cut both cabbages and put in a medium bowl. Grate the carrot and add to the bowl. Add the mayonnaise, sugar, vinegar, salt and pepper and mix well.
  • For the gorilla berry habanero sauce: Add cranberries, sugar, orange juice, spice rub and habanero to a saucepan. Cook, stirring occasionally, over medium-high heat, about 20 minutes. Break down with an immersion blender.
  • For the sandwich: Cut open the rolls. Open and toast, with two slices of cheese on the top halves. When cheese is melted, remove from heat and add about 3 tablespoons Gorilla Berry Habanero Sauce to each roll bottom. Add turkey breast, barbecue sauce and 1/2 cup cole slaw to each. Close sandwiches, then cut in half and enjoy!

1 small red onion, chopped
4 turkey thighs (about 4 pounds)
1 tablespoon chili powder
1 teaspoon ground cumin
Kosher salt and freshly ground black pepper
1/2 cup ketchup
1/4 cup packed light brown sugar
2 tablespoons yellow mustard
1 tablespoon apple cider vinegar
Serving suggestions: seeded hamburger buns, pickle slices, prepared coleslaw

Steps:

  • Spread the onions in the bottom of a 6- to 8-quart slow cooker. Rub the turkey thighs with the chili powder, cumin, 1 teaspoon salt and 1/2 teaspoon pepper and place over the onions. Stir together the ketchup, sugar and mustard and pour over the turkey. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours. The turkey should be very tender with the meat falling off the bones.
  • Uncover and stir. Let cool for 10 minutes. Using two forks, shred the turkey meat, discarding the bones. Stir in the vinegar and season to taste with salt and pepper. Serve on hamburger buns with pickles and/or coleslaw if desired.

Oh what a good way to enjoy your holiday leftovers. I like whole berry cranberry sauce, so I used that when making this sandwich. But, the jelly would work too. Can't wait to make these again!

3 c shredded leftover cooked turkey (chicken or pork)
1 large onion, sliced
1 clove garlic, minced
1/3 c cranberry sauce
1/3 c chunky applesauce (cinnamon works well)
1/4 c turkey gravy (chicken or pork)
1/2 c bbq sauce
4 Tbsp ketchup
3 Tbsp apple cider vinegar
1/2 tsp chili powder
1/4 tsp cumin
salt and pepper
4 crusty rolls (or 6-8 small slider rolls)

Steps:

  • 1. In a saucepan on med-high cook sliced onion in butter and salt. Cook until slightly browned. Add garlic and cook for another min.
  • 2. Combine onions and the rest of the ingredients (except turkey & rolls). Turn heat to med-low, stirring and cooking for 3-5 min. Stir in turkey, cover and continue warming for another five minutes, or until warmed through. Serve on rolls. Goes great with a apple coleslaw, on side or top of shredded turkey.
