Make these moreish meatball sliders with tomato sauce and melted cheese for a party or buffet. They're easy to make and the whole family will enjoy them

1 tbsp olive oil
12 beef meatballs
12 small bread rolls (check the bakery section of the supermarket for a batch of rolls that are baked together, so they're still attached to one another)
100g tomato pasta sauce
100g grated mozzarella
50g butter, melted
1 tsp dried oregano
20g grated parmesan

Steps:

  • Heat the oil in a large pan, and fry the meatballs for about 8-10 mins, or until browned and cooked through. Set aside. Heat the oven to 180C/160C fan/gas 4.
  • Carefully split the whole batch of rolls through the middle, ensuring they remain attached at their sides. Lay the bottoms of the rolls in a roasting tin lined with a sheet of scrunched-up baking parchment or foil. Spread the tomato sauce over, then place one meatball on every roll. Sprinkle over the mozzarella, then cover with the tops of the rolls, pressing down gently.
  • Brush with the melted butter, then sprinkle over the oregano and parmesan. Cover with foil and bake for 20 mins, uncovering for the final 5 mins so the tops become golden.

1 12-pack pull-apart dinner rolls
2 tablespoons unsalted butter
3 tablespoons hot sauce (such as Frank?s RedHot)
1 1/2 cups shredded rotisserie chicken
1/4 cup brie cheese (rind removed), cut into small pieces
1/4 cup crumbled blue cheese
1/4 cup thinly sliced celery
1/2 teaspoon celery seeds

Steps:

  • Preheat the broiler. Split the whole pack of attached dinner rolls in half horizontally. Place the top and bottom halves cut-side up on a baking sheet. Broil until toasted, 1 to 3 minutes. Remove from the oven and preheat to 400 degrees F.
  • Melt the butter with the hot sauce in a small saucepan over medium-high heat, whisking, until smooth. Toss the chicken with all but 1 tablespoon of the spicy butter in a medium bowl.
  • Spread the chicken mixture evenly on the bottom bread piece; dot evenly with the cheeses and sprinkle with the celery. Cover with the top bread piece, then brush the roll tops with the reserved 1 tablespoon spicy butter and sprinkle with the celery seeds. Bake until the bread is toasted and the cheese is melted, 12 to 15 minutes.

1 tablespoon vegetable oil
10 slices bacon
1 12-pack pull-apart dinner rolls
6 tablespoons salted butter, melted
1/2 tomato, finely chopped
4 slices provolone cheese
3 slices muenster cheese

Steps:

  • Preheat the broiler. Heat the vegetable oil in a large nonstick skillet over medium heat. Add the bacon and cook, turning occasionally, until browned, about 10 minutes. Transfer to a paper towel?lined plate to drain, then crumble into small pieces.
  • Split the whole pack of attached dinner rolls in half horizontally. Place the top and bottom halves cut-side up on a baking sheet. Brush with all but 1 tablespoon of the melted butter and broil until toasted, 1 to 3 minutes. Remove the top bread piece from the baking sheet. Flip the bottom piece and continue to broil until toasted on the other side, 1 to 2 more minutes. Remove from the oven and preheat to 400 degrees F.
  • Turn the bottom bread piece cut-side up and sprinkle with the bacon. Top with the chopped tomato, then shingle the provolone and muenster on top, alternating the two. Cover with the top bread piece, then brush the roll tops with the remaining 1 tablespoon melted butter. Bake until the bread is toasted and the cheese is melted, 12 to 15 minutes.

The secret to this sandwich is the blend of spicy Italian sausage and ground beef in the meatballs. They are simmered in jarred sauce before they are layered with mozzarella, basil, and more sauce. This is a hearty way to head to any picnic.

12 ounces ground beef
12 ounces hot Italian sausage, casing removed
1/2 cup panko
1 large egg
2 tablespoons whole milk
1/4 teaspoon kosher salt
One 24-ounce jar marinara sauce
Four 8-inch hoagie rolls
4 slices mozzarella
1 cup fresh basil leaves (large leaves work best for this)

Steps:

  • In a large bowl, combine the beef, sausage, and panko. In a small bowl, whisk together the egg, milk, and salt and add to the meat. Use clean hands or a fork to mix the ingredients until evenly combined, being careful not to over-mix. Form the mixture into 8 meatballs.
  • Add the marinara sauce to a straight-sided skillet and bring the sauce to a simmer over medium heat. When the sauce is simmering, gently nestle in the meatballs. Turn the heat down to low and cover the pan. Cook for 15 to 20 minutes, flipping the meatballs halfway through.
  • Slice each hoagie roll through the center, but do not slice all the way through. This will help keep everything in the sandwich. Working one at a time, tear a slice of cheese in half and place the halves on the base of the roll. Place a few basil leaves on the top half of the roll. Transfer 2 meatballs on top of the cheese and use a fork to smash the meatballs, exposing the meat in the center and spreading it to cover the base of the roll. Spoon a few tablespoons of extra sauce onto the meat. Close the sandwich and transfer it to a square of parchment paper. Tightly wrap the sandwich with parchment paper. Slice each sandwich in half diagonally and serve.

Steps:

  • Preheat oven to 350°F (180°C). Mix tomato sauce, 3 tsp (15 mL) Italian seasoning and 1 tsp (5 mL) garlic powder in large bowl. Add meatballs; stir to coat in sauce mixture. Set aside.
  • Remove rolls from package but do not separate. Cut entire package of rolls in half horizontally, leaving bottom half slightly thicker than top half. Place bottom half of rolls in 13x9-inch (33x23 cm) baking dish, cut side up. Layer provolone cheese over bottom half of rolls. Top with meatballs and sauce. Sprinkle meatballs with mozzarella. Place top half of rolls, cut side down, on top of mozzarella.
  • Mix butter with remaining spices. Brush tops of rolls with butter mixture. Cover with foil. Bake 25 to 30 minutes or until heated through and cheese is melted.

6 tablespoons unsalted butter, at room temperature
2 tablespoons Dijon mustard
Kosher salt and freshly ground pepper
1 18-inch baguette
6 ounces deli-sliced ham
4 ounces brie cheese, cut into 6 slices
6 cornichons, sliced
2 tablespoons chopped fresh chives

Steps:

  • Preheat the oven to 425˚ F. Line a baking sheet with parchment paper. Combine the butter and mustard in a bowl and mash with a spoon; season with salt and pepper.
  • Trim the ends off the baguette. Cut the bread on an angle into 12 slices, leaving the bottom of the loaf intact. (You can position chopsticks along the long sides of the bread to keep from cutting all the way through the loaf.) Transfer to the baking sheet.
  • Brush all but 2 tablespoons of the mustard butter between the bread slices. Fold each piece of ham in half or into quarters, then stuff into every other slice in the bread, starting with the first slice. Stuff a slice of brie into each piece of ham. Brush or rub the top and sides of the bread with the remaining mustard butter.
  • Bake until the edges of the ham are crisp and the cheese has melted, about 18 minutes. Pull apart or slice into individual sandwiches. Sprinkle with the cornichons and chives.
