Puff Pastry Toasted Sandwiches in Your Sandwich Maker! image

My Zaar friend Kooka suggested making a toasted sandwich without the toast ! I got curious, played around with her idea and et Voila! she told me to post the recipe. Ok, healthy.. not really... yummy... sure is! Puff pastry here in the Netherlands is a pest to use in regular large pies becuase it comes in a box of 10 small individual squares. think jig-saw pieces then you want to make a large pie, and it usually takes me less time to make and roll my own... but my small ready made squares are PERFECT for this recipe.. if you are lucky enough to be able to buy ready made puff pastry in one big piece you will need to cut it up to fit. COMFORT FOOD... the fillings are as endless as peoples' personal taste.. but things that cook quick, yes? I used three Knackworstjes but the Zaar database doesn't recognise those so Smokies (mini knackworstjes) are the closest description I can get. In Honour of Kooka's idea I dedicate this to ZWT REGION: Australia.

1 sheet puff pastry (ready made)
50 g grated cheese (1.5 oz)
25 g butter (3/4 oz)
5 smokies
spring onion (finely chopped)
chives (finely chopped)
1 egg (beaten)
tomatoes
ham
mashed potatoes
onion (minced)
salami

Steps:

  • Melt the butter and spread on the toasted sandwich maker inside top and bottom cooking plates.
  • Cut thawed pastry to the same size that the bread would usually be and place one piece on the bottom of the sandwich maker top with grated cheese and extra fillings of your choice. Top with another piece of pastry.
  • Repeat with the other side of the toasted sandwich maker to fill up the other side.
  • Close the sandwich maker to seal the pastry together and enclose the filling.
  • Cook until pastry is golden brown and cooked (about 10 minutes).
  • Trim off any uncooked pastry (I had a little bit but it was only a thin sliver).

1 cup water
1/2 cup butter
1 cup all-purpose flour
4 large eggs
EGG SALAD FILLING:
6 hard-boiled large eggs, chopped
1/3 cup mayonnaise
3 tablespoons chutney, finely chopped
2 green onions, finely chopped
1 teaspoon salt
1/2 teaspoon curry powder
HAM SALAD FILLING:
1 can (4-1/4 ounces) deviled ham
3 ounces cream cheese, softened
2 tablespoons finely chopped green pepper
1-1/2 teaspoons prepared horseradish
1 teaspoon lemon juice

Steps:

  • In a saucepan over medium heat, bring water and butter to a boil. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. , Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. Drop by teaspoonfuls 2 in. apart onto greased baking sheets., Bake at 400° for 20-25 minutes or until lightly browned. Remove to wire racks. Immediately cut a slit in each puff to allow steam to escape; cool completely., In separate bowls, combine the ingredients for egg salad filling and ham salad filling. Split puffs and remove soft dough from inside. Just before serving, spoon fillings into cream puffs; replace tops. Refrigerate leftovers.

1 sheet frozen puff pastry (half of 17.3-ounce package), thawed
3 tablespoons sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon instant espresso powder
1 cup sliced almonds
1 large egg white
2 pints mocha almond fudge ice cream

Steps:

  • Preheat oven to 400°F. Line baking sheet with parchment paper. Cut pastry into thirds lengthwise along folds, then cut each strip crosswise into 4 pieces. Arrange squares on prepared sheet, spacing apart. Whisk sugar, cinnamon, and espresso powder in medium bowl. Add almonds and egg white; stir to coat. Spread almond mixture atop squares, dividing evenly.
  • Bake pastry squares until tops are golden around edges, 18 to 20 minutes. Cool completely. Using serrated knife, cut each piece horizontally in half. Spread 1/3 cup ice cream over each pastry bottom, then press on top to adhere. Freeze until ice cream is hard, about 1 hour.

You all know the sweet bakery Napoleons, layered with custard and laced with chocolate. This savory version uses frozen puff pastry, baked and split; then the crispy layers are filled to make tiny sandwiches. I have included a list of sandwich spread suggestions after the directions.

17 ounces frozen puff pastry, thawed
1 egg, beaten

Steps:

  • Preheat oven to 400º F.
  • Thaw pastry according to package directions.
  • Unfold pastry onto floured surface.
  • Cut each sheet into three strips, following the fold lines, then cut each strip into 5 pieces.
  • You should then have 30 pieces total, using both pastry sheets.
  • Place on parchment lined baking sheets, 15 pieces per sheet, and brush top with egg. (Don't let egg drip down sides of pastry, because that will stop the dough from expanding as it bakes.)
  • Bake pastries at 400º F for 15-18 minutes until well puffed and golden brown.
  • Cool on wire racks.
  • Split the pastries in half, place on ungreased cookie sheet split side down, and bake once more at 400 degrees for 3 minutes to crisp the bottoms.
  • Fill each set of layers with your choice of fillings or sandwich spreads - I recommend ham salad, any cheese spread, traditional sandwich fillings, or roasted vegetables.
