1 egg
1 tablespoon water
2 tablespoons granulated sugar
3 tablespoons all-purpose flour
1/4 teaspoon ground cinnamon
2 large Granny Smith apple, peeled, cored and thinly sliced (keep Granny Smiths on hand- they are great for both baking and eating)
2 tablespoons raisins
1/2 of a 17.3-ounce package Pepperidge Farm® Puff Pastry Sheets (1 sheet), thawed
1 tablespoon confectioners' sugar (optional)

Steps:

  • Heat the oven to 375°F. Beat the egg and water in a small bowl with a fork. Stir the granulated sugar, 1 tablespoon flour and cinnamon in a medium bowl. Add the apples and raisins and toss to coat.Sprinkle the remaining flour on the work surface. Unfold the pastry sheet on the work surface. Roll the pastry sheet into a 16 x 12-inch rectangle. With the short side facing you, spoon the apple mixture onto the bottom half of the pastry sheet to within 1 inch of the edge. Roll up like a jelly roll. Place seam-side down onto a baking sheet (this will help keep it from unrolling during baking). Tuck the ends under to seal. Brush the pastry with the egg mixture. Cut 4 deep slits in the top of the pastry.Bake for 35 minutes or until the pastry is golden brown. Let the pastry cool on the baking sheet on a wire rack for 20 minutes. Sprinkle with the confectioners' sugar, if desired. Tips For some nutty crunch, 1/4 cup sliced almonds may be added with the apples and raisins. For best results, make sure to toss the apples and raisins until they're evenly coated with the flour mixture. The flour helps to thicken the juices released by the apples as they cook. For a Vanilla Sauce to serve with the strudel, stir 3/4 cup milk, 1/2 cup light cream, 1/3 cup sugar, 4 egg yolks, beaten and 1/2 vanilla bean in a 2-quart saucepan. Cook and stir over medium heat until the mixture boils and thickens. Remove the saucepan from the heat. Cover and refrigerate for 1 hour. Remove the vanilla bean. Any leftover sauce is delicious over fresh berries or ice cream. For Pear and Cranberry Strudel, you can substitute Bosc pears and dried cranberries for the apples and raisins in this recipe.

100g golden granulated sugar , plus extra
seeds scraped from 1 vanilla pod
4 Granny Smith apples, peeled and diced
25g each currant and sultanas
1 tsp ground allspice
1 tsp ground nutmeg
85g walnuts , chopped
6 large sheets filo pastry
50g butter , melted
200ml tub crème fraîche

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat 75g of the sugar and the vanilla seeds in a medium, heavy-based frying pan over a medium-low heat for 5-8 mins, or until golden brown and caramelised. Add the apples, currants, sultanas, allspice, nutmeg and walnuts, then cook for 10 mins or until the apple is tender. Remove the apple mix from the pan with a slotted spoon and cool to room temperature.
  • Line two baking trays with baking paper. Place a sheet of filo on one of the trays, then brush lightly with the melted butter. Sprinkle over 1 tsp sugar. Repeat the process until there are 3 layers of filo. Repeat with the remaining sheets of filo on the second tray.
  • Divide the apple mix along the shorter edge of both pastry sheets and gently roll into 2 logs, tucking in the ends as you go. Brush with melted butter and sprinkle over 1 tbsp sugar. Can be made up to one day ahead, kept chilled. Bake for 25 mins, or until the pastry is golden brown and crisp. Let cool slightly, then cut each strudel into 6 diagonal slices. Serve two slices each with a dollop of crème fraîche on the side.

Apple Strudel - or Apfelstrudel in German - is a classic Austrian pastry. This delicious dessert made from thinly rolled dough packed with sweetened apples and rum-soaked raisins is best enjoyed with vanilla sauce!

1 1/2 cups all-purpose flour
a pinch of salt
1 medium-sized egg
1 tablespoon oil
1/3 cup + 1-2 teaspoons water (lukewarm)
1 teaspoon oil for brushing
1/3 cup breadcrumbs (unseasoned)
3 tablespoons butter
4 apples (e.g. granny smith)
1/4 cup sugar (more to taste)
1 teaspoon cinnamon
2 tablespoons lemon juice
2 tablespoons rum
1/3 cup raisins (more or less to taste)
3 tablespoons butter (melted)
powdered sugar for dusting

Steps:

  • Add the flour, a pinch of salt, egg, and oil to a medium-sized mixing bowl.
  • Mix everything together using the spiral dough hooks of your electric mixer while slowly adding the lukewarm water. Keep mixing for approximately 5 minutes until the dough has an elastic consistency and sticks together.
  • Shape the dough into a ball using your hands. Brush all sides of the ball of dough with one teaspoon of oil and place it back into the bowl. Cover the bowl with a dishtowel and let the dough rest on the counter for 30 minutes.
  • In the meantime, prepare the filling. First, melt three tablespoons of butter in a medium-sized frying pan. Add the breadcrumbs and fry them on medium heat until golden brown. Stir regularly. Once they are golden brown, remove them from the heat and set them aside.
  • Next, peel the apples. Then cut them into quarters and remove the core. Cut each quarter into thin slices. Then cut these slices into small pieces (see process photo above for reference).
  • Place the small apple pieces into a medium-large mixing bowl. Also add the sugar, cinnamon, lemon juice, rum, raisins, and browned breadcrumbs to the bowl and mix everything together. You can also decide to not add the breadcrumbs now and keep them separate. It's easier to mix everything together but adding them separately from the apples can make for a slightly more moist filling (because the breadcrumbs don't soak up as much juice from the apples during baking).
  • Preheat the oven to 390 degrees Fahrenheit.
  • Once you're done with preparing the filling and the 30 minute dough rest time is up, take a finely-threaded large dish towel (that will not give off small threads/fibers/"fuzzies"), sprinkle some flour onto it, and roll out the dough with a rolling pin. Use more flour as needed. Then carefully stretch out the dough with your hand until it has a dimension of approximately 24 x 17 inches. Be gentle so you don't rip the dough.
  • Once the dough is rolled out thin and you can see the dishtowel through the dough, gently brush some melted butter (approximately 1 tablespoon) onto the whole surface of the dough.
  • Now cover the left side of the rectangle with the filling leaving a gap of approximately 2 inches along the edges. If you didn't mix the breadcrumbs and the apples earlier, first place the breadcrumbs onto the dough and then add the apple-mixture on top of that.
  • Fold over the long top and bottom edges, then gently roll up the dough from the left side - the side with the filling - using the dishtowel. Make sure that the seam is at the bottom once you are done rolling.
  • Carefully place the strudel onto a baking sheet lined with parchment paper. Brush the top and the sides of the dough with some more melted butter.
  • Bake the apple strudel on the medium rack of your oven for around 30-40 minutes. Take the strudel out after approximately 15 minutes and brush it with a little bit more melted butter.
  • Once the strudel is done baking and lightly browned, remove it from the oven and let it cool for a few minutes on the baking sheet. Then dust it with powdered sugar. Apple strudel can be served warm or cold and tastes delicious with some homemade vanilla sauce.

2 large Golden Delicious apples, peeled, cored and sliced 1/8 to 1/4-inch thick
1 lemon, juiced
1 cup raisins
1/4 cup sugar, plus 3 tablespoons
2 tablespoons cold butter, cut into small pieces, plus 2 tablespoons butter, melted
All-purpose flour, for dusting
1 sheet frozen puff pastry, thawed

Steps:

  • Position an oven rack in the center of the oven and preheat to 375 degrees F.
  • In a medium bowl, toss the sliced apples with the lemon juice until the apples are thoroughly coated. Add the raisins, 1/4 cup sugar, and the 2 tablespoons cold cubed butter and toss well. Set aside.
  • Lightly dust the counter or work surface with flour. Lay the puff pastry on top and dust the rolling pin with additional flour. Gently roll the puff pastry to 1/8-inch thickness.

SUPER EASY PUFF PASTRY APPLE STRUDEL

Make ceratin to use a good quality apple pie filling, I use E.D.Smith brand for this, it really makes a difference in the taste. This makes two strudels, you can cut the recipe in half and use just one puff pastry sheet and one can pie filling. This takes much less time to make than your traditional strudel version, but I think it is just as good! Prep time includes 40 minutes pastry thawing time.

Here is my take on apple strudel, with a simplified version of puff pastry which is less hassle to make.

250g Plain Flour
250g Cold Unsalted Butter (Half Cubed/Half Grated)
35g Caster Sugar
150ml Cold Water
2 Tbsp Demerara Sugar (for sprinkling)
250g Plain Flour
250g Cold Unsalted Butter (Half Cubed/Half Grated)
35g Caster Sugar
150ml Cold Water
2 Tbsp Demerara Sugar (for sprinkling)
2 Large Bramley Apples (Peeled and Cubed)
3 tbsp Caster Sugar
3 tbsp Sultanas
1 tsp cinnamon
1 tbsp Water

Steps:

  • Firstly, in a large bowl, add the flour and half of the butter which are cut into cubes. Rub in the butter to the extent where you can still see bits of fat in the flour. Add the water and mix to form a soft dough. Knead the dough against the sides of the bowl until all the crumbs have been incorporated into the dough. (don't be tempted to add more water). Wrap and Chill for 15 minutes.
  • Pat the dough into a rectangle shape, and roll into a 40 x 20 cm rectangle on a lightly floured surface. Now using the other half of the butter which has been grated and left in a freezer for 5 mins, scatter half of the shards onto the middle third of the pastry sheet. With care, fold the left third up to cover the middle third. Scatter the remaining shards on top of the side currently folded, and fold over the last third of pastry.
  • Making sure the open ends are the pointing north and south, taper the dough and roll into a 40 x 20 cm rectangle. Fold into thirds and leave to freeze for 5 minutes (which is quicker). Repeat this process 3 more times whilst remembering to rotate the dough so the open ends are north and south between rolls. Once the dough is completed leave to chill until needed.
  • Pre-heat your oven to 210C/190C Fan. For the filling, add the apples, sugar, sultanas, water and cinnamon to a large saucepan and stew on a medium-low heat for 15-20 minutes until the apples are tender but firm; whilst stirring occasionally. Leave to cool completely.
  • Roll the dough out into a 25 x 50 cm rectangle, until the thickness represents and one-pound coin. Trim the edges with a knife and split into two squares. Spoon half of the apple filing evenly onto one half of the pastry, brush the edges with egg wash and fold the pastry over and pinch down on the edges to create a seal. Brush the remaining top half of pastry with egg wash.
  • With a sharp knife, make scores along the top with about half an inch of a gap, and sprinkle on the demerara sugar. Bake for around 35-40 minutes until the pastry is golden, flaky and risen. Serve Instantly.

squeeze of lemon juice (for the apples)
3 tablespoons butter, divided
1/4 cup 20g breadcrumbs
1/8 cup 30g sugar
1/8 cup 20g raisins
1/4 teaspoon ground cinnamon
1 teaspoon vanilla sugar
1 teaspoon chopped almonds
flour for work surface
powdered sugar for dusting
whipped cream, vanilla ice cream or vanilla sauce (optional toppings)
rum, orange juice or warm water (optional, enough to soak the raisins in)

Steps:

  • Defrost one sheet of puff pastry.
  • If you want to soak the raisins in rum, orange juice or warm water, do this at least a couple hours ahead of time.
  • Cut apples into thin slices and add to a medium bowl. Squeeze a little lemon juice over the apple slices so they don't turn brown.
  • Melt 2 tablespoons butter in the microwave or on the stove over medium low heat. Take it off the heat and let cool for a few minutes.
  • Add raisins, bread crumbs, cinnamon, vanilla sugar, chopped almonds, and melted butter to the apples. Stir until everything is well combined. Set aside.
  • Place defrosted puff pastry on a floured surface and gently roll dough out on all sides.
  • Spoon apple mixture along the short side of one end of the puff pastry and then roll up the pastry.
  • Pinch the bottom seam together and tuck the ends under to seal the strudel. Place seam side down on a lined baking sheet.
  • Melt 1 tablespoon butter and brush on the strudel. Bake at 350F/180C for 30-35 minutes or until golden brown.
  • Take strudel out of the oven and let cool. Dust with powdered sugar. Serve warm with a side of whipped cream, vanilla ice cream or vanilla sauce.
  • This strudel will be the flakiest the day it's made. (It will taste good the next day, it just won't be as flakey).

2 tablespoons raisins
Confectioners' sugar (optional)

Steps:

  • Heat the oven to 375 degrees F. Beat the egg and water in a small bowl with a fork or whisk. Stir the sugar, flour and cinnamon in a medium bowl. Add the apples and raisins and toss to coat.
  • Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a 16 x 12-inch rectangle. With the short side facing you, spoon the apple mixture onto the bottom half of the pastry sheet to within 1 inch of the edge. Roll up like a jelly roll. Place seam-side down onto a baking sheet. Tuck the ends under to seal. Brush the pastry with the egg mixture. Cut several slits in the top of the pastry.
  • Bake for 35 minutes or until the strudel is golden brown. Let the strudel cool on the baking sheet on a wire rack for 20 minutes. Sprinkle with the confectioners' sugar, if desired.
