My Classic Puerto Rican Carne Guisada image

This is one of Puerto Rico's favorites. My family loves it when I make this, especially my husband. I hope you enjoy it too! Because of the time it takes, this is good to make on the weekends. Buen Provecho!

1 ½ tablespoons corn oil
2 pounds beef round steak, cut into serving-size pieces
3 cloves cloves garlic, crushed
½ teaspoon ground black pepper
½ teaspoon dried oregano
½ cup dry white wine
2 tablespoons sofrito
1 tablespoon salt
1 cube beef bouillon
3 bay leaves
3 potatoes, peeled and cubed
3 carrots, peeled and chopped
1 ½ tablespoons Spanish olives
1 tablespoon tomato paste

Steps:

  • Heat oil in a skillet over medium to high heat and saute meat on all sides until brown, about 10 minutes. Crush garlic with pepper and oregano in a mortar.
  • Pour wine into skillet with beef. Add crushed garlic mixture, sofrito, salt, beef bouillon cube, and bay leaves; stir to combine and bring to a boil. Reduce heat to low, cover, and cook until meat is tender, about 1 hour. If meat is not tender yet, add 1/2 cup of water and continue to cook until meat can easily be pierced with a fork.
  • Stir in potatoes, carrots, olives, and tomato paste. Cook on low heat until vegetables are done and sauce thickens, about 20 minutes.

1 tablespoon vegetable oil
2 ½-3 lbs beef stew meat, cubed
1 small onion, diced
1/2 cup sofrito
8 oz tomato sauce
1 tablespoon adobo
½ teaspoon garlic powder
¼ teaspoon oregano
¼ teaspoon black pepper
1 packet Sazón (optional)
1-2 cups water
1 lb potatoes (about 2), peeled and cubed
1/4 lb carrots (about 2), peeled and cubed
½ cup Spanish green olives or alcaparrado
White rice, for serving

Steps:

  • Heat the oil in a large 6-quart pot over high heat. Add the beef and brown on all sides.
  • Add the sofrito and onion; saute for 2 minutes then stir in the tomato sauce, adobo, garlic powder, oregano, black pepper and Sazón.
  • Add just enough water to cover the meat, about 1-2 cups, and bring to a boil. Cover, reduce heat to a simmer and cook for 1-2 hours, or until meat is tender (check after 1 hour).
  • After meat is tender, add the potatoes, carrots and olives. Add additional water, if needed. Cover and cook for about 30 minutes, or until vegetables are soft.
  • Taste the stew and season with additional adobo or salt if desired.
  • Serve with rice.

Among the most recognizable dishes of my culture, carne guisada will cure what ails you. Beef is slowly braised with aromatic sofrito and tomatoes, producing a rich, delicious dish you're likely to eat too much of. For those who have lived in Puerto Rican enclaves such as New York, Philadelphia, Chicago or Orlando, Fla., this is a daily staple at cafeteria-style lunch counters, as it is on the island. You can also use this recipe to make pollo guisado, equally popular and common, simply by using chicken and adjusting the cooking time accordingly.

2 teaspoons olive oil
2 teaspoons white vinegar
2 large garlic cloves, finely minced
1 teaspoon dried oregano
1 teaspoon kosher salt, plus more to taste
1/2 teaspoon black pepper
2 to 3 pounds beef chuck roast or boneless short ribs (see Note), trimmed of excess fat and cut into 2-inch pieces
1 tablespoon vegetable oil
1 tablespoon olive oil, plus more as needed
1 cup fresh sofrito
1 tablespoon store-bought or homemade sazón
1 1/2 cups low-sodium beef broth (or water), plus more if needed
1 (14.5-ounce) can whole peeled tomatoes, chopped
3 dried bay leaves
1 medium carrot, peeled and chopped
1 large celery stalk, chopped
1 pound Yukon Gold potatoes, peeled and chopped
Cooked white rice, for serving

Steps:

  • Prepare the adobo: Combine the adobo ingredients in a small bowl, or blend in a large pilón or mortar and pestle.
  • Prepare the guisado: Pat meat dry and put in a medium lidded bowl or a resealable bag. Evenly coat with the adobo and let marinate for at least 30 minutes at room temperature, or in the refrigerator overnight.
  • Heat vegetable oil in a large lidded, heavy-bottomed pot over high. Working in batches as needed to prevent crowding, add beef, shaking loose any additional adobo beforehand. Cook for 3 to 5 minutes, flipping often to brown evenly. Transfer meat to a clean bowl and set aside.
  • Lower heat to medium, add 1 tablespoon olive oil and pour in sofrito, adding olive oil as needed if the pan is too dry. Sauté for 5 to 7 minutes until liquid has evaporated.
  • Add sazón and sauté for 1 minute. Add the broth (or water), tomatoes and their juices, and bay leaves, and scrape up any browned bits using a wooden spoon.
  • Nestle meat into sauce and bring to a simmer. Reduce heat to low, then cover with a lid and simmer for 1 hour, stirring occasionally.
  • Add carrot and celery, and cook, covered, for 1 more hour, adding more water or broth if needed. At this stage, check the tenderness of the meat. It should start to get close to falling apart when pressed with the back of a spoon.
  • Add potatoes and cook, covered, for 30 minutes more, until meat and potatoes are cooked through and tender.
  • Adjust salt to taste, and serve on a plate or in a shallow bowl over a mound of white rice.

¼ cup sofrito sauce
1 (.18 ounce) packet sazon seasoning

1 tablespoon olive oil
2 1/2 lbs chuck or round roast, cut into 1/2" cubes (or other stew meat)
2 teaspoons Adobo seasoning
1/4 cup sofrito
1 medium onion (sliced)
2 teaspoons Sazon seasoning (with annatto)
1 teaspoon powdered chicken bouillon
32 oz. box unsalted beef broth
1/3 cup dry red wine (like Merlot or Cabernet Sauvignon)
1/2 cup tomato sauce (low sodium is best)
3 dried bay leaves (or 1 fresh)
1/2 teaspoon dried Italian seasoning (or dried oregano)
10 pimento stuffed olives
1 cup carrot, sliced into thick rings
1 cup diced potatoes
1-2 teaspoons red wine vinegar (apple cider vinegar works too!)

Steps:

  • Season the beef cubes with 2 teaspoons of Adobo.
  • Heat a Dutch oven to medium heat, then add the olive oil.
  • In 2-3 batches, sear the beef for 3-5 minutes per side, in order to get some nice browning on the outside.
  • Once the beef is browned, remove from the pan and set it aside.
  • Add the onions and sofrito to the pan.
  • Scrape the bottom of the pan with a wooden spoon to loosen the brown bits.
  • Next, add the Sazon, powdered chicken bouillon, beef broth, red wine, tomato sauce, bay leaves and Italian seasoning.
  • Bring the mixture to a boil, then add the beef back in.
  • Stir, then cover and reduce the heat to simmer. Cook the carne guisada for 2 hours, stirring occasionally.
  • Next, add the potatoes, carrots, and olives, then cook for 30 minutes more.
  • When the carrots and potatoes are tender, the carne guisada is done.
  • Stir in the vinegar, then check the stew for seasoning.
  • If it needs more salt, add a little bit more powdered chicken bouillon (this stuff is super salty, so use sparingly).
  • Serve with white rice, tostones and a salad.

  • Mix flour, salt and pepper in freezer bag. Add stew beef and coat evenly. Add enough olive oil to cover the bottom of a large skillet over medium-low heat. Add sugar. When sugar caramelizes, add meat and brown on all sides. Remove beef from the skillet and place in the bottom of slow cooker. Add remaining ingredients and cover. Cook on low for 8-10 hours or high for 4-6 hours.

1/4 cup sofrito sauce (or to taste)
6 fresh cilantro leaves
4 cups water (or more)
1 beef bouillon cube
2 tablespoons vinegar
1/2 teaspoon whole dried oregano, crushed
2 bay leaves
1/2 cup tomato sauce
1 tablespoon salt
1/2 lb carrot, cut into rounds
1/2 lb potato, peeled and cubed
5 stalks celery, cut into rounds
salt (to taste)

Steps:

  • In a large caldero or pot, heat oil, add sofrito and culantro leaves.
  • Add meat and stir constantly, cook until meat looses red color. Add water and bouillon cube, bring to a boil. Add vinegar, oregano, bay leaves and tomato sauce. Reduce heat to low and cook.
  • Add carrots, potatoes, celery and salt.
  • Cook for about 2 hours. Taste and adjust seasoning. Boil uncover to thicken sauce.

There's always something comforting about this meal that makes me feel close to home, and especially close to my family. I make this dish every week for my children, but when I do I eat it all day too.

2 pounds chuck roast or other beef stew meat, cut into 1/2-inch cubes (see Cook's Note)
1/2 cup adobo
2 to 3 tablespoons olive oil
1/2 cup tomato paste
1 cup thick-cut carrot rounds (1 to 2 large carrot)
1 cup peeled and diced potatoes (1 medium potato)
1/4 cup sofrito with recao (culantro)
2 tablespoons sazón con achiote (5 packets)
10 pimento-stuffed olives
3 dried bay leaves
1/2 cup fresh cilantro, chopped
Cooked white rice, for serving

Steps:

  • Place the beef in a medium bowl, sprinkle with the adobo, toss to coat and set aside.
  • Heat the oil in a large pot or Dutch oven over medium-high heat. Add the beef and cook, stirring frequently, until seared and mostly browned on all sides, 3 to 5 minutes. Add the tomato paste and cook, stirring constantly to avoid burning, until the meat is coated. Stir in the carrots, potatoes and sofrito until coated. Stir in the sazón until coated. Stir in the olives and bay leaves. Add 4 cups water or enough to fully cover the beef and bring to a boil. Reduce the heat and simmer, stirring occasionally, until the meat is tender, about 1 hour.
  • Remove the stew from the heat and adjust the seasoning if needed. Discard the bay leaves. Stir in the cilantro before serving with white rice.
