This is so easy and everyone at my office always requests this cake. It's great anytime. You can alternate with white cake mix and pistachio pudding or chocolate cake mix and fudge pudding etc.

Steps:
- Preheat oven to 350 degrees.
- Grease and flour tube or 10" bundt pan.
- Combine all ingredients in a large bowl.
- Beat at medium speed with electic mixer for 2 minutes.
- Pour into pan and bake for 50 to 60 minutes or until toothpick or knife comes out clean when inserted in the middle.
- Cool in pan for 25 to 30 minutes.
- Invert onto serving plate, cool completely.
STICKY TOFFEE PUDDING CAKE

- For the cake: Preheat the oven to 350 degrees F. Spray a bundt pan with a nonstick cooking spray.
- Put the dates in a medium bowl, pour the boiling water over them and let sit 10 minutes.
- In a large bowl, beat the granulated sugar, butter and eggs. Add the vanilla. In a medium bowl, combine the flour, baking powder, baking soda and salt and mix. Add the dry ingredients to the wet and gently mix. Add the dates with their liquid and mix. Use a light hand; don't overbeat or the cake will be tough.
- Add the batter to the prepared pan and bake for 45 minutes to an hour, making sure to check after 45 minutes to make sure the cake does not get too dry. Let cool for 15 minutes, then unmold the cake and cool on a rack until slightly warm.
- For the pudding: In a medium pot, combine the brown sugar, butter, cream, vanilla and salt. Bring to a boil and then simmer, stirring constantly, until thickened, about 10 minutes.
- Place the cake on a platter, pour the pudding over and garnish with the crushed toffee bar.
GOOEY CHOCOLATE PUDDING CAKE

- Preheat the oven to 350 degrees F.
- For the cake: Whisk together the sugar, flour, cocoa, baking powder and salt in a bowl. Whisk in the milk, butter and vanilla. Stir together until smooth with a wooden spoon or spatula.
- Pour the batter into an ungreased 9-inch square baking pan. Use an offset spatula to level into pan.
- For the topping: Whisk together the sugars and cocoa and sprinkle it evenly over the batter. Pour the hot water over the top, resist the temptation to stir it into the batter.
- Bake about 30 minutes, you want the center to bubble and look almost set, almost like an undercooked brownie. Take out of the oven and let stand 15 minutes. Serve in dessert dishes, spooning sauce from bottom of pan over top. Serve with mint chocolate chip ice cream, if desired.
BLUEBERRY PUDDING CAKE

- Put oven rack in middle position and preheat oven to 375°F. Butter a 9-inch square baking pan.
- Stir together 1/3 cup sugar with water, lemon juice, and cornstarch in a small saucepan, then stir in blueberries. Bring to a simmer, then simmer, stirring occasionally, 3 minutes. Remove from heat.
- Whisk together flour, baking powder, salt, and remaining 1/2 cup sugar in a medium bowl.
- Whisk together egg, milk, butter, and vanilla in a large bowl, then add flour mixture, whisking until just combined.
- Spoon batter into baking pan, spreading evenly, then pour blueberry mixture evenly over batter (berries will sink). Bake until a knife inserted into center of cake portion comes out clean, 25 to 30 minutes. Cool in pan on a rack 5 minutes.

- In ungreased 9 inch square pan, stir together flour, white sugar, cocoa, the baking powder, and salt. Mix in milk, oil, and vanilla with a fork until smooth.

CHOCOLATE PUDDING CAKE I
This is a very quick and simple no bake dessert cake. I've been making it for years without a written recipe. I have also tried it with different flavors such as Coconut/Pineapple. This recipe lends itself well to experimentation. Note: If desired, chopped nuts may be added to the pudding before spreading over cake, or may be sprinkled over the top of the pudding before adding the whipped topping layer.

- Tear angel food cake into bite size pieces into a 9x13 inch cake pan (preferably glass).
- Prepare chocolate pudding as directed on package. Gently spread over the top of cake pieces, spreading to edges of pan.

- Roll the fondant out on a surface lightly dusted with icing sugar to about the thickness of a £1 coin. Using the cake tin the fruitcake was baked in as a template, cut a 20cm circle from the fondant. Cut horizontally across the circle, about a third of the way down, in an undulating motion to create the dripping custard effect of your pudding design. Set aside, keeping the offcuts covered.
- Warm the jam in a small pan over a low heat until loosened. Brush over the top third of the fruitcake, then carefully place the fondant shape on top, gently pressing down to stick the fondant to the cake. Pull a small amount of fondant from the offcuts, dab with a little red food colouring and briefly knead to distribute the colouring, adding more as you go to create a deep red colour. Roll into one or two grape-sized balls. Colour the remaining fondant offcuts a deep green, then roll out. Cut out two or three holly leaf shapes using a sharp knife or a shaped cutter. If you like, use a cutlery knife or skewer to create veins in the leaves for a more realistic look.
- Arrange the leaves and berries at the top end of the fondant 'custard' using a little jam to help them stick. Use a fine paintbrush to dust the holly and berries with a little edible gold leaf, if you like.

- Preheat oven to 350 degrees, and set a kettle of water to boil. Butter a shallow 2-quart baking dish; coat with granulated sugar, tapping out excess.
- In a large bowl, whisk egg yolks with granulated sugar until lightened in color. Whisk in melted chocolate; set aside.
- In a large, clean bowl, using an electric mixer on high, beat egg whites with salt until soft peaks form. Whisk 1/3 of whites into chocolate mixture. Add remaining whites, and gently fold with a rubber spatula just until combined (do not overmix).
- Transfer batter to prepared baking dish. Set dish in a roasting pan, and pour enough boiling water into pan to come about 1 inch up side of dish. Bake until puffed and just set (center of cake should barely move when jiggled), 25 to 35 minutes. Let cool 5 minutes; dust with confectioners' sugar just before serving.
