1 (18 ounce) box 2 layer size lemon cake mix
1 (3 ounce) box lemon gelatin
1 cup water
2/3 cup vegetable oil
4 eggs
2 cups sifted powdered sugar
1/4 cup lemon juice

Steps:

  • Preheat over to 350°F.
  • Grease 13x9-inch baking pan.
  • In large bowl mix cake mix, gelatin, water, eggs and oil.
  • Beat on low speed of mixer until combined.
  • Beat on high 2 minutes until smooth.
  • Pour into prepared pan.
  • Bake 35-40 minutes until toothpick inserted comes clean.
  • Cool on wire rack.
  • Stir together powdered sugar and lemon juice, adding more water if needed to make a thinner glaze for drizzling.
  • Spoon glaze over hot cake.
  • Let stand until cool or serve slightly warm.

The inside of the cake is sweet and tender, laced with a subtle lemon flavor throughout, while the outer part of the cake, brushed with a simple lemon juice-confectioners' sugar glaze, is distinctly tart and slightly crunchy. The two together is a sort of perfection.

1/2 cup unsalted butter, at room temperature, plus additional for greasing pan
2 cups all-purpose flour, plus additional for pan
1 1/4 cups sugar
4 teaspoons grated lemon zest
3 eggs
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon kosher salt
3/4 cup sour cream
1/2 cup confectioners' sugar
1/2 cup fresh lemon juice

Steps:

  • Preheat the oven to 350 degrees. Butter and flour a 9-by-5-by-3-inch loaf pan. Using an electric mixer, cream together the butter and sugar until light. Add the lemon zest, then the eggs, one at a time, mixing until light and fluffy. Mix in the vanilla.
  • Sift together the flour, baking soda, baking powder and salt. Add the dry ingredients alternately with the sour cream, mixing just to combine. Spoon the batter into the prepared pan. Bake until a toothpick inserted into the cake's center comes out clean, about 1 hour. Place on a rack.
  • Put the confectioners' sugar in a bowl and gradually whisk in the lemon juice. Brush some of the mixture over the top of the cake. Let stand for 10 minutes. Turn the cake out of the pan and brush the cake top, sides and bottom well with the lemon mixture. Repeat after 10 minutes. Slice and serve.

1 box duncan hines supreme lemon cake mix
4 large eggs
1 pkg instant lemon pudding mix
1/3 c oil
3/4 c water
1/4 c lemon juice
TANGY LEMON GLAZE
1 c powdered sugar
1 Tbsp butter
1 Tbsp or more of lemon juice
1 tsp milk

Steps:

  • 1. Preheat oven to 350F. Mix all cake ingredients in mixing bowl. On low combine and scrape bowl. Mix on medium high for 2 minutes.
  • 2. In a bundt pan sprayed with Pam, pour all cake mix evenly.
  • 3. Bake for 45-50 or when tooth pick comes out clean. Cool on rack for 20 minutes.
  • 4. Glaze: melt butter the combine all ingredients. Drizzle over cake a soon as it comes out of the pan. It will be runny.
  • 5. When cooled top with whipped cream. Zest a lemon and place on top of cake.

I love my Aunt TC's Lemon-Lime Soda Cake, so I thought it would be fun to make my own pound cake to share with her. Instant lemon pudding mix is the key to making this pound cake extra moist, and the lemon drizzle on top adds another layer of citrusy goodness.

Nonstick cooking spray, for the pan
3 cups all-purpose flour
One 3.4-ounce package instant lemon pudding mix
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup (2 sticks) unsalted butter, at room temperature
1/3 cup vegetable oil
2 1/4 cups granulated sugar
3 large eggs
1 teaspoon pure vanilla extract
2 tablespoons lemon zest
2 tablespoons fresh lemon juice
1 cup whole milk
1 cup confectioners' sugar, plus more as needed
Juice of 1 small lemon (1 1/2 tablespoons)
2 teaspoons pure vanilla extract

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Grease a Bundt pan.
  • Whisk together the flour, pudding mix, baking soda and salt in a medium bowl. Set aside.
  • Beat the butter, oil and granulated sugar in the bowl of a stand mixer fitted with the paddle attachment at medium-high speed, scraping down the sides of the bowl as needed, until pale and fluffy, 4 to 6 minutes. Reduce the speed to low and add the eggs, one at a time, beating until the yellow disappears after each addition. Beat in the vanilla extract, lemon zest and lemon juice just until combined.
  • Beat in the flour mixture alternately with the milk in 3 additions, beginning and ending with the flour mixture. Beat just until the ingredients are combined.
  • Scrape the batter evenly into the prepared Bundt pan and bake until the cake is golden brown and a toothpick inserted in the center comes out mostly clean with only a couple of moist crumbs, 1 hour 5 minutes to 1 hour 10 minutes. Let the cake cool in the pan for 15 minutes. Run a knife around the edges of the cake and invert onto a cooling rack to cool completely, about 45 minutes.
  • Meanwhile, make the lemon drizzle: Whisk together the confectioners' sugar, lemon juice and vanilla until thick. (If it's too runny, add a little more confectioners' sugar.) After the cake is cooled, pour the lemon drizzle over the top.

1 teaspoon baking powder
1/2 teaspoon salt
1 cup (2 sticks) butter, softened at room temperature
1 cup sugar, plus 1/3 cup
4 eggs
2 teaspoons pure vanilla extract
1/4 cup lemon juice, plus 1/3 cup

Steps:

  • Preheat the oven to 350 degrees F. Butter a 6-cup loaf pan and line it with parchment or waxed paper. In a medium bowl, combine the flour, baking powder, and salt.
  • In a mixer fitted with a whisk attachment (or using a hand mixer), cream the butter. Add 1 cup of the sugar and mix. With the mixer running at low speed, add the eggs one at a time. Add the vanilla.
  • Working in alternating batches, and mixing after each addition, add the dry ingredients and 1/4 cup of the lemon juice to the butter mixture. Mix until just smooth.
  • Pour into the prepared pan and bake until raised in the center and a tester inserted into the center comes out dry and almost clean (a few crumbs are OK), 65 to 75 minutes.
  • Meanwhile, make the glaze: In a small bowl, stir together the remaining 1/3 cup sugar and the remaining 1/3 cup lemon juice until the sugar is dissolved.
  • When the cake is done, let cool in the pan 15 minutes (it will still be warm). Run a knife around the sides of the pan. Set a wire rack on a sheet pan with sides (to catch the glaze) and turn the cake out onto the rack. Peel off the waxed paper.
  • Using a turkey baster or pastry brush, spread glaze all over the top and sides of the cake and let soak in. Repeat until the entire glaze is used up, including any glaze that has dripped through onto the sheet pan. Let cool at room temperature or, wrapped in plastic wrap, in the refrigerator (Well wrapped, the cake will last up to a week). Serve at room temperature, in thin slices.

I have used this cake for so many different things. Its great if you need something at the last minute. Its always comes out good. It's good just as a pound cake, without the drizzled lemon. We like it for strawberry shortcake.

1 tablespoon lemon juice

1 large lemon
1 cup golden raisin
1/3 cup pecans
2 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 1/2 cups sugar
1/2 cup butter, softened
1 teaspoon lemon extract (or vanilla if you don't have lemon)
3/4 cup milk
2 large eggs
1/4 cup milk

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a 9 x 13" cake pan with non-stick spray and set aside.
  • Wash the outside of your lemon and pat dry. Cut in half and juice the lemon, reserving the liquid to use later. Pick out the seeds and cut each half into four pieces.
  • Put these 8 pieces along with the raisins and the pecans into a food processor and pulse until very finely chopped. That's right, you're using the entire lemon in this cake. Set this mixture aside.
  • In your electric mixer bowl, add one cup of flour, the salt, baking soda, and sugar. Mix them on LOW for about 30 seconds.
  • Add the second cup of flour and mix on LOW for about 30 seconds.
  • Add the softened butter, the lemon extract and 3/4 cup of milk. Beat on LOW until the flour is well moistened. Then turn the mixer up to MEDIUM-HIGH and beat for 2 minutes.
  • Shut off the mixer and scrape down the sides of the bowl.
  • Turn the mixer on LOW and add the eggs, one at a time, beating continuously. Now add the last of the milk.
  • Once everything is incorporated, turn the mixer up to MEDIUM-HIGH and beat for 2 minutes. Turn off the mixer, remove the bowl and scrape down the sides.
  • Gradually add the ground lemon, raisin and pecan mixture, folding it in gently so you don't deflate all that lovely air you just beat into the mixture.
  • Pour into your prepared pan and smooth out as evenly as possible. This batter is a bit stiff.
  • Bake for 40-50 minutes or until a toothpick inserted in the center comes out clean. Remove to a wire rack.
  • While the cake is still warm, drizzle 1/3 cup of the fresh lemon juice over the surface of the cake. It will instantly be absorbed.
  • In a small bowl, combine 1/2 cup white sugar and 1 tsp ground cinnamon until well mixed. Sprinkle this cinnamon/sugar mixture over the still warm cake.
  • Optional: Sprinkle 1/4 cup finely chopped pecans on top of the cinnamon/sugar mixture.
  • Let your cake cool to room temperature, cover with plastic wrap and put it in the refrigerator. This will keep your cake nice and moist.
  • You can serve the cake right out of the fridge or let it come to room temperature.
  • It also freezes well if you wrap it in plastic wrap, then foil, and place the whole thing in a sealable freezer bag.

1 1/2 cups cake flour
1 teaspoon baking powder

Steps:

  • Preheat oven to 350°.
  • Grease 9 x 5-inch loaf pan with butter.
  • Dust pan with cake flour.
  • Mix together flour, baking powder and salt.
  • Melt butter, whisk thoroughly to reincorporate any separated milk solids.
  • In food processor or blender, process sugar and lemon zest until combined.
  • Add lemon juice, eggs and vanilla, process until combined (about 5 seconds).
  • With machine running, add melted butter through the feed tube in steady stream (about 20 seconds).
  • Transfer mixture to large bowl.

  • Pour batter into prepared pan.
  • Bake for 15 minutes at 350°F.
  • Reduce oven temperature to 325°F and continue to bake until deep golden brown and skewer in center comes out clean (about 35 minutes).
  • Cool in pan for 10 minutes.
  • Turn onto wire rack.
  • While cake cooling bring sugar, lemon juice and zest to boil in small saucepan.
  • Stir occasionally to dissolve sugar.
  • Reduce heat to low and simmer until thickened slightly, about 2 minutes.
  • With toothpick poke holes on all sides of cake.
  • Brush on Lemon Glaze.
  • Allow to cool at room temperature at least one hour before serving.

Let cake rest in pan for 3 minutes then remove from pan to serving plate. --- Bring glaze ingredients to a boil in a small saucepan. Poke holes all over cake with a small dowel or chopstick. Spoon the hot glaze over the hot cake so it will soak down while both are hot. Do this slowly and any left over serve with each serving.
