Time 2h50m

Yield 1 liter, 6 serving(s)

Number Of Ingredients 13

1 tablespoon olive oil
2 large onions, chopped finely
4 large garlic cloves, peeled and crushed
1 liter full-bodied red wine, such as Cotes du Rhone
2 cloves
2 cups water
1 1/4 lbs tomatoes, seeded and coarsely chopped
1 bay leaf
1/2 cup chopped fresh herb (basil, thyme, rosemary, savory, parsley)
salt and pepper
1/3 cup black nyons or nicois olive, pitted and chopped finely
3 tablespoons capers, drained, rinsed and chopped finely
2 -3 tablespoons chopped fresh parsley

Steps:

  • 1. Heat the oil in a large, heavy-bottomed casserole over low heat and add the onions. Saute stirring frequently, until the onions begin to brown, about 20 minutes.
  • 2. Add one of the garlic cloves and saute with the onions, stirring, until the garlic just begins to color, about one minute.
  • 3. Add the cloves and wine. Raise the heat to medium high and bring to a boil. Boil for 5 minutes.
  • 4. Add remaining garlic, water, tomatoes, bay leaf, herbs, 1/2 teaspoons salt and pepper. Bring back to a boil.
  • 5. Reduce heat to low and simmer uncovered for 1.5 hours, stirring from time to time. The mixture should be thick and reduced by about half. Most but not all of the liquid will have evaporated. Remove from heat.
  • 6. Remove the cloves and bay leaf and discard. Put the sauce through a food mill with the fine blade or food processor.
  • 7. Return to the pot and stir in olives and capers. Heat through over medium heat for about 15 minutes. Taste and adjust salt and pepper. Just before serving stir in parsley.
  • ** Note this sauce can be refrigerated for 3 days or frozen.

PROVENCAL PORK STEW WITH FENNEL AND OLIVES

Provencal Pork Stew With Fennel and Olives image

I made this from a recipe I found in Cooking Light this month. It was a great recipe, but trust me when I tell you to cook it, cool it, put it in the fridge, and serve it the NEXT NIGHT! It was soooooooo much better the 2nd day! The stew was a lot richer and all the flavors just intensified over night... Mmmm.

Time 1h20m

Yield 6 serving(s)

Number Of Ingredients 14

1 tablespoon olive oil, divided
4 cups sliced fennel bulbs (about 2 large bulbs)
3 cups sliced onions (about 3 small)
8 garlic cloves, minced
1/3 cup flour (I omitted this for dietary purposes)
2 lbs pork tenderloin, trimmed and cut into bite sized pieces
1/2 teaspoon fresh ground pepper
1/2 teaspoon salt
1 cup dry white wine
1 cup chicken broth
1 tablespoon herbes de provence
3 (14 1/2 ounce) cans tomatoes, undrained
1/2 cup nicoise olives or 1/2 cup kalamata olive, pitted
fresh parsley, chopped

Steps:

  • Heat 1 tsp of the oil in a large dutch oven over medium heat. Add fennel and onion and saute for 8 minutes until tender. Add the garlic and saute 2 minutes more.
  • Spoon the fennel mixture into a bowl and put aside for now.
  • Place the flour in a shallow powl. Dredge the pork in flour, shaking off excess.
  • Heat remaining oil in the dutch oven over medium high heat. Add half of the pork and sprinkle with salt and pepper. Cook 6 minutes browning on all sides. Repeat with the remaining pork.
  • Add wine to the pan, scraping up the browned bits. Stir in fennel mixture, broth, herbes and tomatoes and bring to a boil.
  • Cover and reduce heat. Simmer for 45 minutes. Stir in remaining salt and pepper and the olives. Simmer 10 minutes more.
  • Sprinkle with parsley and serve.

OMELET PROVENCAL

Omelet Provencal image

Create the perfect omelet with the savory French flavors of Provence: tomatoes, garlic, olives and herbs. Make one omelet for two, or two omelets for four. Either way, this easy main dish becomes the highlight of a quick, nutritious meal. Just prepare a crisp salad, slice some crusty baguette bread - and your Provencal dinner is ready to serve!

Categories     Breakfast

Time 20m

Yield 2 Omelets, 2 serving(s)

Number Of Ingredients 9

1 tablespoon water
3 large eggs (If you need to restrict cholesterol, use 3/4 cup egg substitute, or use some egg whites in place of )
1 pinch fresh ground black pepper
2 teaspoons olive oil
1/2 cup diced canned tomatoes with onion and garlic, drained
1/4 cup shredded muenster cheese
2 tablespoons canned sliced black olives
2 tablespoons chopped fresh parsley
1 teaspoon herbs de provence parsley sprig, for garnish

Steps:

  • Combine eggs, water and pepper in a small bowl; whisk gently to blend the whites and yolks, but not to make them frothy. Melt the olive oil in a 10-inch, non-stick skillet over medium-high heat, tilting to coat the bottom and sides. Once the oil is hot, pour the eggs inches.
  • As the eggs start to set, lift the edges so the uncooked egg mixture flows underneath. Cook until the eggs are set and no visible liquid egg remains, about 1 1/2 to 2 minutes.
  • Top half the omelet with tomatoes, cheese and olives; sprinkle with parsley and herbs de Provence. Flip the unfilled half of the omelet over the top. Heat until lightly browned on the bottom, then slide onto a plate to serve. Garnish with parsley sprigs.

PROVENCAL OLIVES

Provencal Olives image

A hint of orange, the robustness of garlic and rosemary, and the sweetness of fennel and balsamic vinegar mingle together to evoke the flavors we associate with the South of France. Marinating the olives for several days before serving will allow all of the seasonings, especially the more subtle ones, to penetrate more deeply. Enjoy! RADIATORE PROVENCAL

Radiatore Provencal image

Posted for Zaar World Tour 2005. All the delectable flavors of southern France. From Vegetarian Times Cooks Mediterranean. After I tried this, I decided my personal preference would be to add more tomatoes, because I like tomatoes and I prefer a higher sauce to pasta ratio. So, I recommend using 8 tomatoes instead of 5. I also changed the directions for chopping the eggplant to 1/2 inch instead of 1 so it will get a little softer and cook quicker. I really liked garlic breadcrumbs and parmesan cheese on top so I recommend that as well. Enjoy.

Time 45m

Yield 6 serving(s)

Number Of Ingredients 11

1 lb pasta (radiatore or penne)
2 tablespoons olive oil
1 large onion, chopped
1 large green bell peppers or 1 large yellow bell pepper, chopped
2 garlic cloves, minced
1 small eggplant, unpeeled, cut into 1/2 inch cubes
1 lb plum tomato, ripe, chopped (about 5 medium)
salt & freshly ground black pepper, to taste
1/4 cup basil, shredded
garlic breadcrumbs (optional)
freshly grated parmesan cheese (optional) or parmesan soy cheese (optional)

  • Start large pot of water to boil for pasta.
  • In large skillet, heat the olive oil over medium heat. Add the onion, bell pepper and garlic and cook, stirring often, until soft, about 5 minutes.
  • Add the eggplant and tomatoes and cook, stirring often, until the vegetables are tender and the tomatoes release their juices, about 20 minutes. Season with salt and pepper.
  • Meanwhile, start cooking the pasta according to package directions.
  • While the vegetables are still cooking, drain the pasta, reserving 1/2 cup of the water. Transfer the pasta to a serving bowl. Add vegetables to pasta.
  • Add the reserved pasta water to the skillet and cook over high heat, stirring, until reduced slightly. Add to pasta and vegetables and toss to combine.
  • Serve pasta topped with basil, garlic bread crumbs and grated parmesan or soy cheese, if desired.
  • NOTE: Sauteed garlic crumbs can be made with 2 tablespoons olive oil, 2 garlic cloves, minced, and 1 3/4 cups soft whole wheat or white bread crumbs, cubed. In large non-stick skillet, heat the olive oil over medium-high heat. Add garlic and cook, stirring constantly, until opaque but not brown. Addd the bread crumbs and cook, stirring often, until the crumbs turn golden, 5-8 minutes. Scrape crumbs on paper towels and let cool.
