PROVENCAL GARLIC SOUP IS OUT OF THIS WORLD GOOD
Provencal garlic soup is one of those deceptively sophisticated French soups that are actually incredibly easy to make. It's indescribably delicious and satisfying. And if no one told you, you'd probably never guess it was made with garlic.

- Bring the water to a simmer in a large stock pot.
- Break the head of garlic apart into individual cloves. No need to peel them yet. Drop them into the boiling water.
- After two minutes, scoop the garlic cloves back out of the water with a hand sieve. Now peel them (the peels should come right off). Return the garlic cloves to the pot.
- Add all of the herbs and the salt. Allow to simmer, covered, for about 15 minutes.
- Strain the soup into a large bowl, catching all of the garlic and herbs in a sieve. Return the strained soup to the stock pot and return to a simmer.
- Using the back of a wooden spoon, smash the garlic cloves in the sieve over the stock pot, pressing the solids through the seive. All of this pulverized garlic will turn the stock cloudy.
- Meanwhile, slowly drizzle the olive oil into the egg yolks in a clean bowl, whisking as you go to make a liaison.
- While still whisking the egg and oil mixture, add a ladlefull of hot garlic stock. Continue to whisk so eggs don't scramble. Add a second ladleful of stock. Continue whisking. Finally, dump the now warmed egg and olive oil liaison into the garlic stock and whisk until smooth.
- Serve with slices of toasted baguette and shredded cheese.

HERB AND GARLIC BROTH-AIGO BOUIDO
This is basically aigo bouido(which translates into garlic bouillon), kicked up a bit with a little tomato to make a hearty stock. This is a very old preparation once made by most housewifes in Provence. It's immensely fortifying, good for colds and hangovers, as well as a great foundation for potato dishes and winter stews. - Separate the garlic cloves by pressing down on the heads. Remove most of the papery skins, then smash the cloves with the flat side of a knife to open them up.
- Heat the oil in a soup pot, add the tomato paste, and fry over medium heat for about 1 mintue.
- Add the garlic, remaining ingredients, and 2 quarts water. Bring to a boil. Lower the heat and simmer, partially covered, until the garlic cloves are soft, about 45 minutes. Strain. Press the garlic throught the strainer with the back of a spoon into the broth or press it into a dish and use for another purpose. The broth can also be frozen in ice cube trays(or 1 cup containers) and added to vegetables or soups, etc. for extra flavor.
- To make this as a soup, place one to two slices of toasted bread in each bowl and ladle the broth over. Sprinkle with parsley and serve.

- Combine all the ingredients for the stock in a pot and bring to a boil over high heat.
- Reduce the heat and simmer partially covered for 30 minutes. Strain the stock, pressing on the solids to extract as much liquid as possible.
- Discard the solids and return the stock to the pot, keeping it at a simmer.
- Whisk the egg yolks in a small bowl until thick and sticky.
- Adding the olive oil a few drops at a time, continue whisking to form a mayonnaise.
- Immediately before serving, whisk a ladleful of the hot stock into the egg mixture, then whisk the egg mixture into the stock - do not boil.
- Garnish by floating a slice or two of toasted French bread topped with shredded cheese in the soup.

- Heat olive oil in heavy large saucepan over medium heat. Add onion, sauté until golden, about 10 minutes. Add broth, potatoes, garlic and bay leaf; bring to boil. Reduce heat to medium-low; cover and simmer until potatoes are very tender, about 20 minutes. Cool slightly. Discard bay leaf. Coarsely puree soup in blender 1 cup at a time, about 20 seconds per batch (do not overprocess). Return soup to same saucepan. Season to taste with salt and pepper. Simmer until heated through. Ladle soup into bowls. Sprinkle with chives and thyme and serve.

- Split the garlic heads in half widthwise, and season with salt and pepper. Place the cut sides down on a heavy baking sheet lightly coated with about 2 tablespoons of the canola oil.
- Roast the garlic in the oven for 20 to 25 minutes, until the garlic is soft. Once the garlic is cool, after about 30 minutes, squeeze the garlic out of its skin. You should have about 1 ½ cups of squeezed garlic.
- Over medium-high heat, melt the butter with the remaining 2 tablespoons of canola oil in a large, heavy sauté pan, until the butter begins to brown. Add the onions and saute them over high heat until they begin to soften and become translucent, 7 to 10 minutes. Turn the heat down to medium-low and continue cooking, stirring occasionally, for about 20 minutes, until the onions are golden brown. Season with salt and pepper and set aside.
