1/3 cup extra-virgin olive oil
1/4 cup chopped parsley
1 teaspoon lemon zest, from 1 lemon
1/4 teaspoon salt
3/4 teaspoon kosher salt
1/4 teaspoon dried oregano
1/4 teaspoon red pepper flakes
8 chicken breast cutlets
8 slices Prosciutto di Parma
8 slices provolone picante cheese
8 oil-cured sundried tomatoes
1 tablespoon extra-virgin olive oil

Steps:

  • Preheat a charcoal grill to medium-high heat. Move the coals to the side so that one part of the grill has indirect heat.
  • In a small bowl stir together the olive oil, parsley, lemon zest and salt. Set aside.
  • In a separate small bowl, mix together the salt, oregano and red pepper flakes.
  • Lay the chicken cutlets flat on a cutting board, lengthwise, and season all sides with the salt mixture. Place a piece of prosciutto on each cutlet. Fold each piece of provolone in half and place on top of the prosciutto. Follow with 1 sundried tomato.
  • Working one at a time, roll the chicken up, in a continuous spiral roll, and seal by sticking 2 parallel skewers through the roll. Proceed with the remaining chicken, sticking 2 rolls on each pair of skewers for easy flipping. Drizzle the chicken with the olive oil and grill starting directly over the coals. Sear the chicken on all sides flipping as needed, until golden brown, about 10 minutes. Move the skewers to indirect heat and continue to cook until cooked through, about an additional 10 minutes or. Remove from the grill and allow to rest for 5 minutes. Remove the skewers from the involtini, slice and serve, drizzled with the parsley oil.

Vegetable oil, for the grill
2 pounds skinless, boneless chicken breasts, cut into 24 pieces (about 1 1/2 inches each)
1 tablespoon extra-virgin olive oil
1 tablespoon white or red wine vinegar
1 teaspoon chopped fresh rosemary
1 clove garlic, grated
1/4 teaspoon red pepper flakes
Pinch of kosher salt
4 ounces Fontina cheese, cut into 24 cubes (about 1/2 inch each)
24 thin slices prosciutto (about 6 ounces)
1 pint grape tomatoes

Steps:

  • Preheat a grill to medium high and brush the grates with vegetable oil. Toss the chicken with the olive oil, vinegar, rosemary, garlic, red pepper flakes and salt in a large bowl. Place a cheese cube on a piece of chicken and wrap tightly with a slice of prosciutto. Repeat with the remaining cheese, chicken and prosciutto.
  • Thread the chicken bundles onto eight 10-inch skewers along with the tomatoes. Grill the kebabs, covered, turning occasionally, until the prosciutto is crisp and the chicken is cooked through, about 10 minutes.

1 box frozen spinach, defrosted
3 tablespoons pine nuts
1/2 cup ricotta cheese
1/4 cup grated Parmigiano-Reggiano
2 cloves garlic, grated or finely chopped
Salt and freshly ground black pepper
A few grates nutmeg
6 chicken breasts
6 slices prosciutto di Parma, 1/3 pound
3 to 4 tablespoons extra-virgin olive oil

Steps:

  • Preheat oven to 400 degrees F.
  • Wring out defrosted spinach in clean kitchen towel.
  • Toast nuts and combine with spinach in a bowl, mix in cheeses, garlic, salt, pepper and nutmeg.
  • Cut into and across but not all the way through the chicken breasts, opening them up like a book with a sharp knife. Season the chicken with salt and pepper. Fill each with a small mound of stuffing. Flap chicken breasts back over stuffing and wrap each breast with prosciutto to seal them, carefully covering the whole breast. Brush chicken all over with some extra-virgin olive oil and roast 18 to 20 minutes until cooked through.

Oh My! IF you want to impress someone by a chicken dish that will leave them asking for more and extremely delighted by the dish, then fix this! It is one of the most outstanding recipes for chicken I have ever tried! I got it off myrecipes.com. I adapted it to my liking. IT ROCKS! Also, a couple of tips, make sure your prosciutto is cold otherwise you will have trouble with the wrapping of the chicken and make sure your pan is thoroughly heated on medium for about 5 minutes before you put in olive oil. If it gets too hot, turn down heat. This is a really good dish to have with couscous. The prosciutto will be really crusty when finished cooking. It is beautiful!

4 boneless skinless chicken breasts
1/2 teaspoon black pepper
salt
4 slices prosciutto
2 tablespoons fresh oregano or 1 1/2 teaspoons dried oregano
3 -4 tablespoons olive oil
8 garlic cloves, unpeeled
1/2 cup dry white wine

Steps:

  • Season the chicken with 1/2 teaspoon pepper and salt to your liking.
  • Lay the proscuitto on a cutting board or plate and sprinkle with the oregano.
  • Lay each chicken breast on a slice of prosciutto and wrap the prosciutto around the chicken.
  • Heat the oil and garlic in a large skillet (try to use a stainless steel skillet for the deglazing later) over medium heat.
  • Add the chicken and cook until the proscuitto is crisp and the chicken is cooked through, 6 to 7 minutes per side. (I used a splatter screen because it can really splatter!).
  • Transfer the chicken and garlic to plates.
  • Put white wine in skillet and scrape bottom of pan to deglaze. Simmer until reduced by half, 3 to 4 minutes.
  • Spoon sauce over chicken.

1/4 cup all-purpose flour
Coarse salt and ground pepper
4 fresh whole sage leaves, plus 4 minced leaves
4 (6 to 8 ounces each) chicken cutlets
4 slices (3 ounces) thinly sliced prosciutto
4 teaspoons olive oil
3/4 cup dry white wine
1/3 cup reduced-sodium canned chicken broth
1 tablespoon cold butter

Steps:

  • In a shallow bowl, stir together flour, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Set aside.
  • Lay 1 sage leaf lengthwise on each cutlet, then wrap a prosciutto slice around middle of each cutlet, encasing sage. Flatten with the palm of your hand to help prosciutto adhere to the chicken. Dredge cutlets in seasoned flour; tap off excess.
  • In a large nonstick skillet, heat 2 teaspoons oil over medium-high heat. Cook 2 cutlets until golden brown and cooked through, 3 to 4 minutes per side. Remove cutlets, and keep warm. Repeat with remaining 2 teaspoons oil and 2 cutlets.
  • Add wine and broth to skillet; cook over high heat until reduced by three-quarters, about 2 minutes. Remove from heat; let cool 1 minute. Add butter and minced sage; stir until butter is melted, about 30 seconds. Spoon sauce onto plates; top with cutlets. Serve immediately.

  • Cut the chicken breasts into 8 thin slices and beat them with a meat tenderizer. Layer one slice of prosciutto, one chicken slice, another slice of prosciutto and top with 2 sage leaves on the side. Roll up starting from the sage leaves side, so that they end up in the core. Secure the roll-up with a toothpick. Repeat procedure until you have 8 involtini.
  • Add butter and 4-5 sage leaves to a skillet and melt on medium heat. Raise heat to medium high and when the butter bubbles, add chicken involtini to the pan. Allow to cook for a couple of minutes, then turn and brown the other side.
  • Add the white wine and let the alcohol evaporate for a couple of minutes. Reduce to theat to medium, cover the pan and let simmer for 4-5 minutes.
  • Remove the lid and let any excess wine evaporate so that only a small amount of glaze is left on the bottom of the pan. Scoop up the glaze and pour on chicken involtini when serving.

  • First, you need to slice the zucchini/courgette as thin as you can (don't worry if the strips aren't perfect). Rub them in a little olive oil then place them on a hot griddle pan until soft and slightly charred on each side, set them aside to cool.
  • Finely chop the onion and add to a pan with a little olive oil, sauté until soft and translucent. Once soft add the spinach and 1 chopped garlic clove and cook down until the spinach has wilted. Set aside to cool.
