- Cut pears in half lengthwise, then use a melon baller or small knife to remove the cores. Cut each half lengthwise into 3 slices.

- Place a rack in upper third of the oven and heat to 450 degrees F. Place 1 sage leaf on a pear slice and secure by wrapping 1 piece prosciutto like a "belt" around the pear. Repeat to make 24 pieces.
- Evenly space pears on a baking sheet and place in oven to cook until prosciutto is crisp and pears are slightly softened, about 15 minutes. Serve immediately. Pears can be assembled up to 2 hours ahead. Store covered in the refrigerator until ready to cook.
- Pears can also be served uncooked, if desired.

The kids and I went on a sampling spree one time in Sam's Club. One gentleman was offering up these little bites of heaven. All three kids got up the nerve to try them. And all three kids wanted to go back for seconds! First time we had ever had prosciutto and we loved it. The gentleman was so impressed that all three of my kids enjoyed it, that he gave me the recipe so that I could make my own! Whether it is a fancy holiday party or a Superbowl party, these would go great!

- You want all the ingredients (other than the prosciutto and black pepper) to be around the same size.
- I buy the slices of havarti from the deli and cut them into four long slices. Then cut those strips in half widthwise. I then put two pieces into a roll.
- Cut the pear into quarters and core it. Then cut each quarter in four long thin slices. I end up with a few slices leftover but I consider those treats for the cook!
- At one end of a slice of prosciutto, place a cheese slice, a pear wedge and a pepper stick.
- Sprinkle with pepper.
- Roll up slices and secure with toothpick if necessary. I find that the meay sticks to itself usually well enough to not need toothpicks.
- After they are rolled up, you can cutthem in half if you would like a smaller bite.
- Refrigerate prior to serving and keep cool during serving.

- Lay the prosciutto slices side by side on a work surface. Place a pear wedge near the end of each one and roll up. Transfer the wrapped pear wedges to the baking sheet. - Preheat oven to 375 degrees F (190 degrees C). Place the garlic in a small square of aluminum foil. Drizzle 1/2 tablespoon of olive oil over the garlic. Wrap foil around garlic to seal.

- Heat the oven to 400 degrees. Slice the pear in half from stem to stern and then in quarters. Cut out the core from each quarter pear. Slice each quarter into two slices, so you have a total of 8 pear slices.
- Put a spoonful of gorgonzola in the middle of each pear slice and wrap the prosciutto strip around the middle securing the cheese onto the pear. Continue until you have 8 wrapped pear slices. Season with kosher salt and fresh ground pepper.
