8 slices crusty sourdough bread, cut on the diagonal from a 1-pound loaf
Extra-virgin olive oil
1 clove garlic
8 thin slices fresh mozzarella
8 thin slices prosciutto
8 fresh basil leaves

Steps:

  • Preheat the broiler.
  • Brush the bread on both sides generously with oil and place on a baking sheet. Broil until golden and crispy, 2 minutes per side.
  • Remove, let cool slightly, and rub the garlic all over one side of each slice. Place a slice of cheese on each piece of bread, then top each with a slice of prosciutto. Return to the oven until the cheese is melted and golden, 2 minutes.
  • Garnish with a basil leaf and serve.

1 cup chopped sweet onion
1/4 cup grated Romano cheese
1/4 cup minced fresh basil
2 ounces thinly sliced prosciutto, finely chopped
1 shallot, finely chopped
3 garlic cloves, minced
1/3 cup olive oil
1/3 cup balsamic vinegar
1 teaspoon minced fresh rosemary
1/4 teaspoon pepper
1/8 teaspoon hot pepper sauce, optional
1 French bread baguette (10-1/2 ounces), cut into 1/4-inch slices

Steps:

  • In a large bowl, combine the first seven ingredients. In another bowl, whisk the oil, vinegar, rosemary, pepper and pepper sauce if desired. Pour over tomato mixture; toss to coat., Place bread slices on an ungreased baking sheet. Broil 3-4 in. from the heat for 1-2 minutes or until golden brown. 6 slices rustic country-style or sourdough bread, thickly sliced
4 cloves garlic peeled
1/4 cup best available virgin olive oil
Salt and freshly ground black pepper
1/3 pound prosciutto

Steps:

  • Toast the bread in a toaster or oven until it is very brown.
  • Immediately after removing the bread from the toaster, rub a garlic clove over the entire surface of 1 side. Each slice should use up about 1/4 to 1/3 of a clove. (Be careful, when the garlic meets the toast's hot surface, it will create fumes that sting your eyes, just like an onion.)
  • Generously drizzle olive oil over the top of each slice. Sprinkle with salt and a generous amount of pepper. Top with 1 or 2 slices of prosciutto. Slice into 1-inch strips, or quarters, and serve immediately.

2 ripe pears, such as Bosc, about 3/4 pound total
1 teaspoon fresh lemon juice
extra-virgin olive oil
1 baguette, cut into 20 slices
4 thin slices prosciutto
1 cup ricotta cheese
1/3 cup crumbled Stilton cheese
3 tablespoons honey

Steps:

  • Peel, quarter, and core the pears. Toss them with the lemon juice in a medium bowl, then lightly brush all sides of each piece with oil.
  • Brush one side of each baguette slice with oil.
  • Grill the pears on medium heat, with the lid closed as much as possible, turning occasionally, until crisp-tender, about 8 to 10 minutes. Remove from grill and cut each quarter into about eight slices.
  • Grill the baguette slices and the prosciutto over direct medium heat with the lid open about 1 to 2 minutes, until the bread is lightly toasted on one side and the prosciutto is crisp. Remove from the grill and chop the prosciutto.
  • Combine the cheeses in a small bowl, spread about 1 tablespoon of the mixture on the grilled side of each baguette slice. Place about 3 slices of pear on top of the cheese and top with some chopped grilled prosciutto, then drizzle with a small amount of honey.

You need:
1/4 cup pine nuts
About 20 thin slices of good-quality prosciutto
1 small bunch arugula
1/4 pound gorgonzola
1/4 cup currants

Steps:

  • Spread the pine nuts on a baking sheet and bake at 350°F until they turn golden brown. (I do mine in the toaster oven.) You'll want to keep a close eye on these because they go from golden brown to burned very quickly, as I've learned on three or four occasions. Transfer them to a small bowl and let them cool.
  • Cut each slice of prosciutto in half, crosswise. Don't worry if they're not perfect. Top each half-slice with a small piece of arugula, a dab of gorgonzola, a few pine nuts, and few currants. Then roll them into little mini horns.
  • Arrange on a platter and serve.

250g mixed heritage tomatoes , halved
2 tbsp extra virgin olive oil , plus extra to serve
3 thyme sprigs
120g ricotta
40g grated parmesan
1 lemon , zested and sliced
3 large slices sourdough , halved and sliced
100g prosciutto

Steps:

  • Heat the oven to 140C/120C fan/gas 1. Put the tomatoes, cut-side up, on a large baking sheet lined with baking parchment. Sprinkle over 1 tsp sea salt, drizzle with 1 tbsp oil, and scatter over the thyme. Roast for 1½-2 hrs, or until the tomatoes are wrinkled and a touch charred but still juicy. Leave to cool.
  • Combine the ricotta, parmesan and lemon zest. Season. Heat a griddle pan over a high heat. Brush the bread with the remaining oil and griddle for 2-3 mins on each side, or until lightly toasted. Top with the ricotta mixture, tomatoes, prosciutto and a drizzle of olive oil.

1 pear, cored and diced
1/3 cup diced red onion
1 Tablespoon balsamic vinegar
1 Tablespoon chopped fresh thyme
1 French baguette, sliced and toasted
1 (4 ounce) package crumbled blue cheese
1/3 pound sliced prosciutto, chopped into small pieces

Steps:

  • Preheat oven to Broil. In a small bowl, mix pear, onion, 1 Tablespoon olive oil, balsamic vinegar, and thyme. Set aside to marinate for 5 minutes. While Pears are marinating, lay baguettes slices on a cookie sheet. Using a pastry brush, brush the tops of each with olive oil (about 3 Tablespoons total) Heat bruschetta slices in oven for 3 - 5 minutes. WATCH CAREFULLY as your baguette may burn. You want a slightly golden top. DO NOT OVER COOK. (Your oven will cook different than mine so watch close, cooking times are estimates.) Remove from oven. Sprinkle each with crumbled blue cheese and allow blue cheese to slowly warm and melt. While Baguette slices are still warm but not burning hot, Spread blue cheese onto each slice. Spoon pear mixture onto the blue cheese. Top with sliced prosciutto. Serve Immediately.

  • Lay the bread slices on a baking sheet and place it as close to the heat source as possible. Broil the bread until golden brown on one side, about 1 to 2 minutes. Turn the slices over and broil for another 30 seconds to 1 minute, until browned.
