Delicious, old-school, comfort food, this tamale pie recipe is perfect for fall or winter nights.

1 ½ pounds lean ground beef
1 cup chopped onion
½ cup chopped green bell pepper
1 (14.5 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
1 cup frozen corn
1 (2.25 ounce) can sliced black olives, drained
1 tablespoon chili powder
1 teaspoon minced garlic
1 teaspoon ground cumin
1 teaspoon salt
¼ teaspoon red pepper flakes, or to taste
¼ teaspoon ground black pepper
1 cup shredded Cheddar cheese
1 ½ cups milk
2 tablespoons butter
1 tablespoon white sugar
½ teaspoon salt
½ cup cornmeal
1 cup shredded Cheddar cheese
2 eggs, lightly beaten
1 tablespoon sour cream, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef, onion, and bell pepper in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Stir tomatoes, tomato sauce, corn, olives, chili powder, garlic, cumin, salt, red pepper flakes, and black pepper into the skillet. Bring to a low boil, about 5 minutes. Reduce heat to medium-low and let simmer for 5 minutes. Stir in 1 cup Cheddar cheese and continue to simmer until melted, 3 to 5 minutes. Remove from heat and transfer mixture to the prepared baking dish.
  • Heat milk, butter, sugar, and salt for topping in a large saucepan over medium heat until butter has melted, 2 to 3 minutes. Reduce heat to low and stir in cornmeal a little at a time, stirring vigorously with each addition, until smooth and thickened. Remove from heat and stir in 1 cup Cheddar cheese. Drizzle in beaten eggs slowly, stirring vigorously until combined. Pour mixture over filling in the prepared dish, smoothing evenly over the surface.
  • Bake in the preheated oven until top is golden brown and filling is bubbly, 30 to 40 minutes. Allow pie to rest for 10 to 15 minutes before serving.

1 tablespoon corn oil
1 1/2 pounds ground beef (85 percent lean)
1 medium onion, finely chopped
1 clove garlic, minced
Kosher salt
2 tablespoons tomato paste
1 1/2 tablespoons chili powder
1/2 teaspoon ground cumin
1 1/2 cups green or red enchilada sauce
1 cup canned black beans, rinsed and drained
1 cup frozen corn kernels, thawed
1/4 cup chopped fresh cilantro
1 1/2 cups shredded Monterey Jack cheese
3 cups self-rising cornmeal
2 1/2 to 3 cups buttermilk
2 tablespoons corn oil
4 scallions, chopped

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the oil in a 10-inch cast-iron skillet over medium-high heat. Add the beef, onions, garlic and 1 teaspoon salt and cook, stirring and breaking up any clumps with a wooden spoon, until the meat is brown and the onions are softened, about 6 minutes. Add the tomato paste, chili powder and cumin and cook, stirring, about 1 minute. Stir in the enchilada sauce, beans, corn and cilantro and season with salt. Bring to a simmer. Remove from the heat and sprinkle with the cheese.
  • Add the cornmeal to a mixing bowl. Mix in the buttermilk and oil. You want the mixture to be thick but pourable. Stir in the scallions. Pour on top of the meat mixture in the skillet and spread in an even layer. Bake until the meat is bubbling and the cornbread is golden brown, 20 to 25 minutes.

4 cups masa
4 cups chicken broth
3/4 cup shortening
4 tablespoons (1/4 cup) salted butter
1 tablespoon baking powder
1 teaspoon kosher salt
1 tablespoon olive oil
2 pounds lean ground beef
1 onion, chopped
1 red bell pepper, seeded and chopped
1 jalapeno, sliced
1 poblano pepper, seeded and chopped
1 tablespoon chili powder
2 teaspoons ground cumin
Pinch kosher salt
Pinch freshly ground black pepper
4 cloves garlic, chopped
One 15-ounce can chopped tomatoes
1 cup low-sodium beef broth
2 tablespoons tomato paste
One 15-ounce can red kidney beans, drained and rinsed
Butter, for greasing the skillet

Steps:

  • For the crust: Mix the masa with the broth in a large bowl and stir to combine. In a mixer, beat the shortening, butter, baking powder and salt. Add the masa mixture to the mixer bowl in 3 additions and beat until combined and soft. Cover and refrigerate while you make the filling.
  • For the filling: In a large skillet over medium-high heat, add the oil. Cook the beef, breaking up any lumps, until it is no longer pink, 8 to 10 minutes. Remove to a bowl using a slotted spoon. Remove all but 1 tablespoon of the grease from the skillet.
  • Add the onion, bell pepper, jalapeno and poblano to the skillet and season with the chili powder, cumin, salt and pepper. Cook until just beginning to brown. Add the garlic and cook for 1 minute. Add the tomatoes, broth and tomato paste and bring to a boil. Add the beans and return the meat to the skillet. Bring to a simmer and simmer for about 20 minutes.
  • Preheat the oven to 400 degrees F.
  • Grease a 10-inch cast-iron skillet with butter. Line the skillet with a little over half of the masa mixture and press. Add the filling, then spoon the rest of the masa mixture over the top. Bake until the top is golden brown, 25 to 30 minutes.

1 1/4 cups albers yellow cornmeal
1/2 teaspoon salt
1 1/2 cups Carnation Evaporated Milk
1 cup water
1 lb ground beef
1 clove garlic, finely chopped
1 cup chopped onion
1/4 cup chopped green bell pepper
1 cup cream-style corn
1/2 cup sliced black olives, drained
1 cup tomato sauce
1 tablespoon chili powder
1 teaspoon salt
1/4 teaspoon black pepper
1/3 cup shredded cheddar cheese

Steps:

  • For crust, combine the cornmeal, salt, evaporated milk and water in a small saucepan.
  • Cook over medium heat, stirring frequently for 5 to 7 minutes or until thickened.
  • Remove 1/2 cup, cover with plastic wrap.
  • Spread the remaining cornmeal mixture on bottom and sides of greased 8-inch square baking dish.
  • Cool for 2 to 3 minutes if necessary.
  • Bake in preheated 425-degree oven for 10 minutes.
  • Remove from heat.
  • For filling, brown beef, garlic, onion and bell pepper in large skillet; drain.
  • Add corn, olives, tomato sauce, chili powder, salt and pepper.
  • Mix well.
  • Spoon into cornmeal crust.
  • Drop rounded teaspoons of remaining cornmeal mixture on top of meat, sprinkle with cheese.
  • Return to oven and bake for 15 minutes.

⅓ cup cornmeal

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking pan.
  • Brown the ground beef in a large skillet over medium-high heat. Drain fat. Stir in the tomatoes, corn, tomato sauce, chili beans, ketchup, onion, and chili powder. Mix well.
  • Line the prepared pan with the biscuits, covering the bottom and the sides. Brush biscuits with vegetable oil; sprinkle evenly with cornmeal. Spoon the ground beef mixture into the biscuit-lined dish. Sprinkle with the shredded cheese.
  • Bake in the preheated oven until biscuits are golden and the cheese is melted, about 25 minutes.

Everybody loves chips and salsa! Here's an upgraded version that you don't have to feel guilty about having for dinner.

Number Of Ingredients 16

1/3 cup extra virgin olive oil
1/4-1/3 cup fresh lime juice from 1-2 lime
1 lime, zested
1 garlic clove, minced
2 tablespoons honey
2 tablespoons heavy cream (optional, but helps cut down on the acid)
1 -2 poblano pepper (roasted, peeled, seeded and cut into large strips)
1 -2 jalapeno pepper (roasted, peeled, seeded and chopped)
6 corn tortillas
2 flour tortillas (8 in)
1/4 cup vegetable oil
2 tablespoons cumin
1/2-1 teaspoon salt
1/8-1/2 teaspoon fresh cracked black pepper
2 1/2 lbs fresh tomatoes (heirloom works best here)
1 bunch cilantro, picked

Steps:

  • Preheat oven to 350 degrees.
  • Make Dressing: combine lime juice, olive oil, zest, garlic, cream, 1/2t salt and 1/4t pepper in a bowl or mason jar and whisk/shake to combine.
  • Roast your peppers until they are a nice even char on all sides. (You can do this on a grill, under the broiler or I like to roast them directly on gas stovetop.) Place your roasted peppers in a bowl and cover with plastic wrap to steam. .
  • Once the peppers have cooled, scrape the skin off, take the seeds out, remove the ribs (if you desire less heat) and cut into strips/dice. Place in a large bowl.
  • While waiting for peppers to cool. Cut both the corn and flour tortillas into half and then into thin strips.
  • Add oil, cumin, salt and pepper to a bowl and stir to combine. Add tortilla strips and toss to coat. .
  • Spread into an even layer on a baking sheet and bake in the oven for 10-15 minutes, until crispy.
  • Cut tomatoes into small wedges or large chunks and place in the bowl with the peppers. Salt generously. Add cilantro and 1/4 cup of the dressing and toss gently.
  • Place the tomato salad on plates and top with tortilla strips. Serve immediately. (If you let it set to long the salt will pull all the juice out of your tomatoes).
  • Optional additions: roasted corn, diced or fried avocado, grilled chicken/pressed tofu (marinated in the dressing), queso fresco.
