SMOKED PRIME RIB WITH DRY RUB
This smoked prime rib starts with an overnight dry salt brine then gets coated in a flavorful seasoning rub before going on the grill. Smoking it low and slow will guarantee the best flavor and a perfect, juicy roast.

Steps:
- Trim the excess fat from the roast. You should have no more than 1/4 inch of fat covering the meat.
- Apply the kosher salt liberally all over the Prime Rib and wrap it loosely with plastic wrap then place it in the fridge for 24 hours. (Or leave the plastic wrap off to get maximum exposure to the air.)
- Set the Prime Rib out at room temperature. Combine the ingredients for the dry rub and coat the meat with the mixture. Loosely cover the Prime Rib and let it sit at room temperature for 2 hours prior to smoking it.
- About 40 minutes before you are ready to cook the Prime Rib, preheat your smoker to 225°F.
- To help the roast cook more evenly, use kitchen twine to tie between each pair of ribs.
- Place the Prime Rib directly on the grill grate, fat cap up and close the lid. Smoke until the internal temperature reaches the desired doneness. 120°F for rare, 130° to 135 for medium-rare, 140 to 145° for medium.
- Remove the roast from the smoker, cover it loosely with foil and let it rest for at least 30 minutes before slicing into it.

PRIME RIB - IT'S EASIER THAN YOU THINK
When I first tried cooking prime rib, I was nervous; it cost a lot of money, and I didn't want to ruin it. Well it turns out prime rib is easy but it is essential that you have a good thermometer. You probably spent $30+ on the meat. Save your investment and spend another $25 on a good thermometer with a probe and an alarm if you don't have one already. By following the rule about the temperature, you can scale this recipe. Cut the bones off the bottom of the roast and serve separately or save for another time. Slice the roast and serve with creamy horseradish, if desired.

- Place roast, bone side down, in a roasting pan.
- Mix olive oil, steak seasoning, garlic, Italian seasoning, and mustard powder together in a small bowl; spread over the roast. Allow roast to come to room temperature, about 45 minutes.

- Preheat the oven to 500 degrees F (260 degrees C).
- Make slits all over the roast by pricking with a small knife. Insert slivers of sliced garlic. Season the roast with salt and pepper, then spread generously with mustard. Place on a rack in a roasting pan, and cover.
- Roast for 60 minutes in the preheated oven. Turn off oven. Leave oven closed, and do not peek for 90 minutes. The internal temperature of the meat should be at least 140 degrees F (60 degrees C) for medium-rare, or 155 degrees F (68 degrees C) for medium.
