Best Paleo Pancakes image

These paleo pancakes are light and fluffy and the perfect weekend breakfast.

1/2 cup almond flour
1/3 cup tapioca flour
1/4 cup coconut flour
1/2 tsp baking soda
1/4 tsp salt
4 large eggs
1/4 cup almond milk
1 tbsp honey (or maple syrup)
1 tsp white wine vinegar
1 tsp vanilla extract
ghee (butter or coconut oil to coat skillet)

Steps:

  • Whisk all of the dry ingredients together in a bowl.
  • In a separate bowl, whisk all of the wet ingredients. Then, add the wet ingredients to the dry and whisk until well combined.
  • Heat a skillet or griddle on medium-high heat and coat with ghee, butter or coconut oil.
  • Spoon the batter onto the skillet, keeping your pancakes approximately 3-4 inches in diameter. They're much easier to flip smaller. Let them cook for 2-3 minutes on one side, then flip and cook for an additional 1-2 minutes.
  • Serve immediately with maple syrup, bananas and other toppings.

1/4 cup coconut flour
1/4 cup almond flour
1/8 teaspoon baking soda
1 teaspoon pumpkin pie spice
1/4 teaspoon salt
1/2 cup applesauce
1 teaspoon vanilla
2 tablespoons nut butter
3 eggs
sliced banana
berries
walnuts
toasted coconut

Steps:

  • Mix all dry ingredients in a large bowl.
  • Add all wet ingredients and mix well.
  • Heat frying pan greased with coconut oil or fat of your choice over medium heat.
  • Spoon approx 1/4 cup batter per pancake into preheated pan.
  • (I add a few sliced bananas or a few blueberries to each pancake at this point.).
  • Cook over medium heat until browned on both sides.
  • Top with your choice of toppings.

  • In a medium mixing bowl add the eggs, vinegar, maple syrup, and olive oil and whisk the ingredients together until well blended. Add the almond flour, tapioca flour, 1/2 cup plus 1 tablespoon of cassava flour, sat and baking powder. Whisk together until smooth but slightly lumpy. Keep in mind not to over mix the batter which can deflate the pancakes. Let the paleo pancake mix set for five minutes to activate the baking powder.
  • Heat a griddle or frying pan on medium-low heat. Spray with cooking spray. Scoop ¼ cup of the batter onto a heated griddle or pan, about 3 small pancakes, making sure they do not touch so they cook evenly.
  • Heat each side on medium heat for about 2 minutes per side or until the sides start to bubble and set. If they start to burn turn the heat down even if it takes longer. It is well worth the wait than eating burnt pancakes!
