1 tablespoon red wine vinegar
1 tablespoon prepared yellow mustard
1 tablespoon spicy mustard
1 tablespoon coarse-grained mustard
1 tablespoon honey
1 tablespoon vegetable oil
4 skinless, boneless chicken breast halves
4 cups salted pretzels
½ cup mayonnaise
2 tablespoons prepared yellow mustard
3 tablespoons honey
½ teaspoon salt

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Line a baking sheet with foil and spray with cooking spray.
  • In a bowl, mix together the red wine vinegar, 1 tablespoon yellow mustard, the spicy mustard, coarse-grained mustard, 1 tablespoon of honey, and the vegetable oil.
  • Place the chicken breasts between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the chicken with the smooth side of a meat mallet to a thickness of about 1/4 inch. Coat the chicken well with the mustard mixture.
  • Place the pretzels into a resealable plastic zipper bag and roll the bag under a rolling pin to finely grind the pretzels. Place the coated chicken breasts, one at a time, into the bag, seal, and shake the bag to thoroughly coat each chicken breast with pretzel meal. Place the chicken breasts on the prepared baking sheet and spray each breast with cooking spray.
  • Bake the chicken in the preheated oven until the coating is golden brown and the meat is no longer pink in the center, about 25 minutes. Flip the chicken after about 12 minutes of cooking to brown both sides.
  • Mix together the mayonnaise, 2 tablespoons of yellow mustard, 3 tablespoons of honey, and salt in a bowl. Drizzle the honey-mustard sauce over the chicken to serve.

Salt and pepper
1/4 cup honey
1/2 cup Dijon mustard
1 5-ounce bag pretzels
any shape
1 tablespoon fresh thyme
chopped
Olive oil cooking spray
1 tablespoon olive oil or canola oil
1/4 cup grated onion
2 large cloves garlic
finely chopped or grated
3 tablespoons cider vinegar
3 tablespoons Worcestershire sauce
1/4 cup Acacia or clover honey
1/3 cup Dijon mustard
1 cup tomato sauce
Coarse black pepper
to taste
Hot sauce
to taste
2 tablespoons cider vinegar
Juice of 1/2 lemon
3 tablespoons grated onion
3 tablespoons honey
Acacia or light clover
3 tablespoons vegetable or canola oil
1 teaspoon celery seed
Salt and pepper
1 small to medium jicama root
peeled and cut into thin sticks
1 large Honeycrisp apple
peeled and cut into sticks
2 ribs celery and leafy tops
cut into matchsticks
1 carrot
cut into matchsticks

Steps:

  • Preheat oven to 375°F
  • Season the chicken tenders liberally with salt and pepper
  • In a shallow dish, whisk together the honey and Dijon mustard until smooth
  • Put pretzels into the bowl of a food processor and pulse to medium-sized crumbs
  • Place crumbs into a shallow dish and add chopped thyme
  • Coat chicken tenders first in the honey mustard and then with the crushed pretzels
  • Place the breaded chicken tenders on a sheet tray lined with a cooling rack
  • Spray the chicken tenders with cooking spray and place into the oven for 20 minutes or until crispy and brown
  • For the barbeque sauce, heat oil in a small pot over medium-high heat
  • Add onion and garlic, stir 1-2 minutes, then add vinegar, Worcestershire, honey, mustard, tomato sauce, and pepper
  • Simmer to thicken over low heat, about 15 minutes
  • Add hot sauce to taste
  • Serve chicken with barbeque sauce and Jicama and Apple Slaw alongside
  • For the Jicama and Apple Slaw: In a large serving bowl, whisk together vinegar, lemon juice, onion honey, oil and celery seed
  • Add jicama, apple, celery and carrot; toss to coat and chill

3 pounds chicken tenders or boneless skinless breast cut into 1 1/2-inch strips
2 cups buttermilk
2 tablespoons dried basil
2 tablespoons dried oregano
2 tablespoons granulated garlic
3/4 teaspoon salt
2 teaspoons pepper
3/4 teaspoon red pepper flakes
1 1/2 cup smoked almonds
12 large sourdough hard pretzels
Canola oil, for frying
Spicy Honey Dijon Sauce, recipe follows
large resealable plastic bag
1/2 cup Dijon mustard
1/4 cup honey
1 chipotle peppers in adobo sauce
2 teaspoons adobo sauce (optional)
1 teaspoon cider vinegar

Steps:

  • In a small bowl, combine basil, oregano, granulated garlic, salt, pepper and red pepper flakes. Place buttermilk and half the spice mix into a double-lined resealable plastic bag. Add chicken and massage bag until well coated. Refrigerate 6 to 12 hours. Reserve remaining spice mix.
  • Place almonds in plastic bag. Break up with rolling pin or mallet (flat side) until mixture looks part rough chopped part crumbs. Remove almonds and place into shallow bowl. Put pretzels in same bag and mash with mallet or rolling pin until it looks like a mixture of large breadcrumbs and powder. Add to almonds mix to combine.
  • In a large fry pan, pour canola oil until it measures about 1 1/2 -inches high in pan. Heat over high, until oil is hot, but not smoking, temperature, 350 degrees.
  • Remove tenders from buttermilk and dredge in almond-pretzel mixture, pressing mixture into the tenders. Gently add tenders, in batches, to the oil. Be sure not to over crowd the pan. Fry tenders until they are dark golden brown, being careful not to burn, about 5 minutes or until cooked through. Remove and drain on a cookie sheet lined with a wire rack. Serve immediately with Spicy Honey Dijon Sauce or keep warm in a 200 degree F oven.
  • In a small food processor, combine all ingredients. Refrigerate until ready to use.

Steps:

  • Preheat oven to 400 degrees and grease a baking sheet.
  • Slice chicken into 1 1/2 inch strips. Place pretzels in a medium bowl. Whisk together eggs and water in a second bowl. In a third bowl stir together flour, chili powder, garlic powder, salt, and pepper.
  • Toss chicken strips in the flour mixture to coat, then dredge in the egg mixture being sure to coat all sides. Lastly, roll chicken pieces in the crushed pretzels and place in a single layer on the greased baking sheet.

This recipe, a kid pleaser, is from John Mitzewich at the About.com site. Chicken tenders are marinated in a tasty concoction then coated with coarse pretzel pieces. They are baked, not fried. Adults will like this tasty finger food, too!

4 boneless skinless chicken breasts
2 tablespoons Dijon mustard, plus additional
1 tablespoon orange marmalade
2 tablespoons rice vinegar, plus additional
salt and pepper
1/2 cup buttermilk
2 -3 cups coarse pretzel crumbs
vegetable oil
2 tablespoons melted butter (or more)

Steps:

  • Slice the chicken breasts lengthwise into 4 or 5 strips.
  • In a large plastic bag, combine the 2 tablespoons Dijon mustard, orange marmalade, 2 tablespoons rice vinegar, salt and pepper, and buttermilk. Mix and add chicken strips. Allow to marinate about 20 minutes, no longer than 30 minutes because after that the chicken will start to "cook.".
  • Meanwhile, place pretzels in another large plastic bag and smash them into coarse crumbs (Mitzewich used pretzel sticks). You will need 2-3 cups. Place the crumbs in a shallow bowl.
  • Remove the chicken from marinade, letting the excess marinade drain off.
  • Add a few chicken strips to the crumbs and press the crumbs into the chicken.
  • Oil a baking sheet and place coated strips on sheet. Repeat coating procedure with remaining strips.
  • When all the strips are on the baking sheet, drizzle the melted butter over them. The more butter you use here, the browner and richer the finished strips will be.
  • Bake in a preheated 400 degree F. oven 20-30 minutes.
  • Thin some additional Dijon mustard with additional rice vinegar and drizzle this mixture over the cooked chicken.

6 chicken cutlets (about 1 1/2 lb.)
1 1/2 tsp. kosher salt, plus more to taste
1 1/2 tsp. black pepper
1 c. spicy brown mustard
1 c. mayonnaise
1/2 c. honey
1/2 c. all-purpose flour
5 c. pretzel twists, finely crushed (about 2 c. crushed)
4 tbsp. salted butter
1/4 c. olive oil
2 bunches broccoli, cut into florets

Steps:

  • Preheat the oven to 200 ̊. Set a wire rack on a baking sheet. Season the chicken cutlets on both sides with salt and pepper, using about 1 teaspoon of each total.
  • Stir together the mustard, mayonnaise and honey in a small bowl. Remove 1 cup of the mixture to a shallow bowl, reserving the rest for serving.
  • Place the flour in another shallow bowl. Spread the pretzels on a plate. Coat each piece of chicken in the flour, then quickly dunk in the honey-mustard mixture and then coat in the pretzels. Set on a large plate.
  • Heat 2 tablespoons each butter and olive oil in a large nonstick skillet over medium-low heat until the butter is melted and the oil is hot. Add 3 pieces of the crusted chicken and cook until golden brown and cooked through, 2 to 3 minutes per side. Remove the chicken to the rack and place in the oven.
  • Repeat with the remaining butter, oil and chicken. Add the chicken to the pan in the oven to keep warm.
  • Bring 1 inch of water to a simmer in a large saucepan fitted with a steamer basket. Add the broccoli, cover and cook until bright green and just tender, 8 to 10 minutes. Season with the remaining 1/2 teaspoon each salt and pepper. Serve the chicken and broccoli with the reserved honey-mustard sauce for dipping.

2 shakes Worcestershire sauce
Lots of freshly ground black pepper

Juice and zest of 1/2 lemon
10 ounces chopped kale or baby kale

Steps:

  • For the chicken: Preheat the oven to 425 degrees F. Set a wire rack in a rimmed baking sheet and spray the rack with nonstick spray. Set aside.
  • Combine the mayo, mustard, Parmesan, garlic powder and a few turns of pepper in a large bowl. Add the pretzels to a separate bowl or large shallow dish. Remove from the oven, let cool 5 minutes and then transfer to a bowl.
