1/2-1 lb shelled, deveined, raw shrimp (somewhere between 26/30 - 31/35 in size)
1 tbsp olive oil
2 tsp lemon zest
1 fresh garlic clove (chopped)
1/2 tsp kosher salt
1/8 tsp black pepper
1 tbsp olive oil
2 shallots (thinly sliced )
3 garlic cloves (chopped)
1 1/2 cups uncooked arborio rice ((risotto))
1/2 cup white wine (you do not want a sweet white wine. Chardonnay is a great pick for this recipe.)
3 1/2 cups chicken stock or broth
1/4 cup lemon juice
1 tsp kosher salt
1 cup fresh shredded parmesan cheese
1/2 cup half & half
1 bundle fresh asparagus (about 25-30 sprigs) (woody stem removed - remaining tender asparagus cut into 1 inch pieces.)

Steps:

  • Combine the shrimp, 1 tbsp olive oil, 2 tsp lemon zest, 1 chopped garlic clove, 1/2 tsp kosher salt - stir it all together so the lemon zest coats the shrimp. Set it aside for 30 minutes to an hour.
  • Turn the Instant Pot onto saute mode and add 1 tbsp olive oil. Once the pot reads "hot" on the display screen pour all the shrimp into the pot and saute for 3 minutes, flipping halfway through Remove the shrimp from the pot and set aside. Note: if you are using a full pound of shrimp you will want to saute them in two batches.
  • Add 2 sliced shallots and 2 garlic cloves (if you need more olive oil go ahead and add 1 tbsp). Soften/saute for 2 minutes. Add the 1 1/2 cups risotto and stir around the pot for an additional minute.
  • Pour the 1/2 cup white wine into the pot and deglaze the bottom by scraping up ALL the browned bits. NOTE: this step is very important to help prevent the dreaded "burn" notice.
  • Add the 3 1/2 cups chicken stock, 1/4 cup fresh lemon juice, and 1 tsp salt to the rice mixture.
  • Pop the lid on the pot and lock the pressure vent to "seal". Set the pot to cook on pressure mode for 7 minutes. Do a 10 minute natural release, then release any additional pressure with a quick release.
  • Move quickly for this step, you want to retain the heat in the pot as much as possible! Have your milk measured, parmesan grated, and asparagus cut.Add the 1/2 cup half & half and 1 cup shredded parmesan cheese, give the risotto a stir. Add the chopped asparagus and stir into the hot risotto. Lay the shrimp on top of the risotto. Close the lid (or place just place it on top) for 5-8 minutes, to keep the heat in and soften the asparagus and finish cooking the shrimp.
  • Taste the risotto for additional seasoning (salt, pepper, lemon juice, or lemon zest), and serve!

Steps:

  • Select saute setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add oil. When oil is hot, add 3 minced garlic cloves; cook 1 minute. Add shrimp; cook and stir until shrimp begin to turn pink, about 5 minutes. Add 1 tablespoon butter and Italian salad dressing; stir until butter melts. Add asparagus; cook until tender, 3-5 minutes. Remove and keep warm., Warm the remaining 3 tablespoons butter until melted. Add diced onion; cook until tender, 4-5 minutes. Add remaining 6 minced garlic cloves; cook 1 minute. Add rice; cook and stir for 2 minutes. Stir in 1/2 cup wine; cook and stir until absorbed. Add remaining 1/2 cup wine, broth and 1/4 cup cheese. Press cancel. , Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 8 minutes; quick-release pressure. Serve shrimp mixture over risotto. Season with salt and pepper. Sprinkle with remaining 1/4 cup cheese.

1 cup short grain Arborio rice
3 cups water, divided
1 cup clam juice
1 tablespoon olive oil
1/2 pound small shrimp, peeled and deveined

2 ounces fresh grated Parmesan cheese

Steps:

  • In a skillet over medium heat, saute the onion and garlic in butter for 5 minutes. Stir the rice into the skillet and stir until completely coated in the butter. Transfer the rice mixture to a 1-quart glass or metal dish that will fit inside your pressure cooker. Add 1 cup of water and the clam juice to the dish. Cover the dish tightly with aluminum foil. Place a trivet or rack in the bottom of the pressure cooker. Add the remaining water. Set the dish with the rice on the trivet. Secure the pressure cooker lid. Cook the rice for 10 minutes (high pressure). Use the quick release method when the time is up. Meanwhile, heat the olive oil in a skillet over medium-high heat. Add the shrimp and asparagus. Cook, stirring frequently, until the shrimp just starts to turn pink. Do not cook it completely. When the rice has finished, open the lid and carefully remove the dish (it will be very hot). Add the shrimp and asparagus to the rice. Stir to combine. Replace the foil cover and return the dish to the pressure cooker. Secure the pressure cooker lid and cook for 4 minutes. Steps:

This time, I also stirred in some pesto, which enriches the risotto deliciously, and also dresses it up with flecks of green. The risotto would also work with green beans or peas, or with no added vegetable at all.

7 cups well-seasoned chicken or vegetable stock
2 tablespoons extra-virgin olive oil
1/2 cup minced onion

3/4 pound asparagus, trimmed and cut in 1-inch lengths

Steps:

  • Put well-seasoned stock or broth into a saucepan and bring it to a simmer over low heat, with a ladle nearby or in the pot.
  • Heat olive oil over medium heat in a wide, heavy nonstick skillet or a wide, heavy saucepan. Add onion and a generous pinch of salt, and cook gently until it is just tender, about 3 minutes. Do not brown.
  • Stir in rice and garlic and stir until the grains separate and begin to crackle. Add wine and stir until it is no longer visible in the pan. Begin adding simmering stock, a couple of ladlefuls (about 1/2 cup) at a time. The stock should just cover rice and should be bubbling, not too slowly but not too quickly. Cook, stirring often, until it is just about absorbed. Add another ladleful or two of the stock and continue to cook in this fashion, adding more stock and stirring when rice is almost dry. You do not have to stir continually, but stir often. After 10 minutes, add asparagus and continue to stir and add stock for another 10 to 15 minutes, until rice is cooked through but still al dente.
  • Add another ladleful of stock to the rice. Stir in pesto and additional cheese and remove from heat. Taste and adjust seasoning. Mix should be creamy (add more stock if it isn't). Serve right away in wide soup bowls or on plates, spreading risotto in a thin layer rather than a mound.

It's a meal that will justify buying that pressurized pot.

1 tablespoon olive oil or butter
1/2 cup finely chopped onions
1 1/2 cups arborio rice
1/2 cup dry white wine or dry vermouth
3 to 3 1/2 cups chicken or vegetable broth
1 ounce dried porcini, broken into bits
1 cup frozen peas
1/2 cup grated Parmesan, plus more to pass at the table
Salt and freshly ground pepper to taste
2 tablespoons chopped parsley, for garnish

Steps:

  • Heat the oil over high heat in a 2 1/2-quart or larger stovetop pressure cooker, or in an electric pressure cooker using the sauté function. Add the onions, and cook for 1 minute, stirring frequently. Stir in the rice, taking care to coat it with the oil. Cook for 30 seconds, stirring constantly.
  • Stir in the wine. Cook over high heat until the rice has absorbed the wine, about 30 seconds. Stir in 3 cups of the broth and the porcini, taking care to scrape up any rice that might be sticking to the bottom of the cooker.
  • Lock the lid in place. Over high heat, bring to high pressure. Reduce the heat just enough to maintain high pressure, and cook for 4 minutes. Turn off the heat. Quick-release the pressure by setting the cooker under cold running water. Remove the lid, tilting it away from you to allow the steam to escape. If using an electric cooker, cook at high pressure for 4 minutes. Manually release the pressure.
  • Set the cooker over medium-high heat or turn on the sauté function, and stir vigorously. The risotto will look fairly soupy at this point. Boil while stirring every minute or so, until the mixture thickens and the rice is tender but still chewy, 1 to 4 minutes. Stir in the peas when the rice is almost done. (if the mixture becomes dry before the rice is done, stir in the extra 1/2 cup of broth. The finished risotto should be slightly runny; it will continue to thicken as it sits on the plate.)
  • Turn off the heat. Stir in the Parmesan, and salt and pepper to taste. Serve immediately, garnished with a little parsley. Pass extra Parmesan at the table.

Steps:

  • In a 6-quart pressure cooker, melt 1 tablespoon butter over medium. Add onion and garlic and saute until soft, about 4 minutes. Add rice and cook, stirring, 1 minute. Add 3 cups broth and season with salt. Secure lid. Bring to high pressure over medium-high heat. Reduce heat and cook until rice is tender, about 10 minutes (adjust heat to maintain pressure).
  • Remove from heat, vent pressure, and remove lid. Stir in remaining 1 cup broth and shrimp and cook over medium until shrimp are opaque, 3 to 5 minutes. Stir in Parmesan, herbs, and remaining tablespoon butter. Serve topped with additional herbs.

I've never tried this recipe. I found it with the new pressure cooker I got for Christmas. Who has hours to make it the old fashioned way for a week night dinner? Making risotto is one of the best applications around for a pressure cooker. But, before you begin, be sure to read all the instructions that came with your cooker and follow the safety precautions.

2 tablespoons olive oil
1 large sweet onion, coarsely chopped
1 cup arborio rice
3 -4 cloves garlic, finely chopped
2 3/4 cups vegetable stock (canned is fine)
1/4 cup fresh orange juice
2 -3 tablespoons fresh thyme leaves
1 lb thin fresh asparagus, cleaned 1/2 inch pieces
1/2 cup grated good quality parmesan cheese, plus extra for sprinkling at the table

Steps:

  • Wash the asparagus well in plain water.
  • Hold each stalk at the base and at the tip and bend gently.
  • It should break near the bottom.
  • Discard the bottom part of the vegetable.
  • It will be tough.
  • Over low heat saute the onion in the olive oil until translucent (10-15 minutes).
  • Add the rice and stir until it is coated and translucent around the edges.
  • Add the garlic and stir until fragrant (1 or 2 minutes).
  • Add the stock and orange juice and seal the cooker with its lid.
  • Raise the heat to medium and set the pressure valve for 10 pounds.
  • When the valve begins to rock, cook the risotto for seven more minutes before removing from the heat and allowing the pressure to dissipate.
  • When you can open the cooker without burning yourself, add the asparagus and thyme.
  • Stir quickly and replace the top.
  • Allow the risotto to sit for about five more minutes before transferring to a serving bowl and stirring in the cheese.
  • Pass more parmesan and a pepper mill with the risotto.
  • Taste before salting since the cheese and the broth can be very salty.
