Blueberry French toast casserole made with fresh blueberries, cinnamon, brown sugar, and sweetened cream cheese is the perfect easy breakfast treat!

1 loaf of sturdy bread (about 14 ounces)
8 eggs
2 1/2 tablespoons vanilla extract
4 teaspoons cinnamon
1 teaspoon nutmeg
4 teaspoons brown sugar
3 cups milk
1 cup fresh blueberries
Cream cheese icing (1 batch)
2 tablespoons butter
2 tablespoons brown sugar
2 tablespoons flour

Steps:

  • Tear or cut bread into bite sized pieces. Place half of it into a 9x13" casserole dish. Drop half of the cream cheese icing by spoonfuls over the bread, then sprinkle half of the blueberries over. Repeat with the remaining half.
  • In a large bowl whisk together eggs, vanilla, cinnamon, nutmeg, brown sugar and milk.
  • Pour batter over bread, being sure to moisten as much as the bread as possible.
  • In a small bowl with a fork or pastry cutter, mix ingredients for topping. Sprinkle over casserole.
  • Bake in 350 degree oven for about 45 minutes, until baked through and browned on top.

I made this for Christmas morning brunch, perfect to put in the oven and go open presents while it bakes. You can top with syrup or whipped cream or nothing at all. I found several different recipes similar to this one, but none had everything I wanted to do with it, so I thought I'd try to make my own. I think it is a very good start, but please, let me know what you think!

1 (8 ounce) package cream cheese, softened
1 cup confectioners' sugar
2 tablespoons milk
1 tablespoon vanilla extract, divided
2 cups blueberries, divided
2 loaves French bread, cubed
2 cups milk
8 eggs
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg

Steps:

  • Mix cream cheese, confectioners' sugar, 2 tablespoon milk, and 1 teaspoon vanilla extract in a bowl until smooth and creamy; fold in 1 cup blueberries.
  • Cover the bottom of a 10x14-inch baking dish with 1 layer bread cubes. Spread cream cheese mixture over bread layer; top with remaining bread cubes.
  • Whisk 2 cups milk, eggs, 2 teaspoons vanilla extract, cinnamon, and nutmeg together in a large bowl; pour over bread mixture. Sprinkle 1 cup blueberries over bread-egg mixture. Cover dish tightly with aluminum foil and refrigerate, 8 hours to overnight. Remove from refrigerator 30 to 60 minutes before baking.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Bake in the preheated oven for 45 minutes. Remove foil and continue baking until center is set, about 30 minutes.

1 pound loaf rustic bread, cut into 1-inch cubes (about 10 cups of cubes)
1 1/2 (or 2) cups blueberries, frozen or fresh
5 large eggs
2 cups milk (whole or 2%)
1 cup heavy cream
1/2 teaspoon vanilla extract
8 tablespoons sugar, divided
1 tablespoon lemon zest
1/8 teaspoon kosher salt
2 tablespoons unsalted butter, diced

Steps:

  • Soak at least 30 minutes, or overnight: If soaking overnight, cover the pan with plastic wrap and refrigerate overnight.
  • Preheat the oven to 350°F: Turn on the oven about 15 minutes before you plan to bake the casserole. If you refrigerated the casserole overnight, let it sit out while the oven preheats.
  • Let cool slightly before serving: Let the casserole cool for about 10 minutes before cutting. Serve with a dusting of powdered sugar over the top or a drizzle of maple syrup. Leftovers will keep, refrigerated, for about 1 week and can be reheated in the microwave.

This gem comes from the Turkey Run Inn at the Turkey Run State Park in Indiana. Perfect make ahead dish for a special holiday breakfast or brunch. Prep time does not include overnight chill time.

12 slices dry white bread, cut into 1/2 inch cubes (about 8 cups, see NOTE)
2 (8 ounce) packages cream cheese, cut into 3/4 inch cubes
1 cup fresh blueberries or 1 cup frozen blueberries
12 eggs
2 cups milk
1/2 cup maple syrup or 1/2 cup maple syrup
maple syrup or maple syrup

Steps:

  • Place half of the bread cubes over the bottom of a well-buttered 13x9x2-inch baking dish.
  • Sprinkle cream cheese and blueberries over bread cubes.
  • Arrange remaining bread cubes over blueberries.
  • In a large mixing bowl, beat eggs with a rotary beater, beat in milk and the 1/2 cup syrup.
  • Carefully pour egg mixture over the bread mixture.
  • Cover and chill in the refrigerator for 2 to 24 hours.
  • Bake, covered, in a 375 oven for 25 minutes.
  • Uncover and bake about 25 minutes more or till a knife inserted near the center comes out clean, and topping is puffed and golden brown.
  • Let stand for 10 minutes before serving.
  • Serve warm with blueberry-flavored or maple syrup.
  • NOTE: To dry bread slices, arrange bread in a single layer on a wire rack, cover loosely and let stand overnight.
  • Or cut bread into 1/2-inch cubes, spread in a large baking pan.
  • Bake, uncovered in a 300 oven for 10 to 15 minutes or till dry, stirring twice, cool.

This recipe came from my son's mother-in-law, Trudy Rawls. My husband is a big time blueberry lover, so he made sure we got this recipe. You could use any other flavor pie filling. But around my house, it has got to be blueberry.

CRUST:
1 c flour
1 stick butter, melted
1 c pecans, finely chopped
FILLING AND TOPPING:
1 -8 oz. pkg cream cheese, room temperature
3/4 box confectioners' sugar
1- 12 oz tub of cool whip, thawed
1 can(s) blueberry pie filling

Steps:

  • 1. Preheat oven to 350 degrees. Mix the crust ingredients together and press into a greased 9 x 13 inch pan. Bake at 350 degrees until crisp, about 10-12 minutes.
  • 2. Mix together cream cheese, confectioner's sugar, and Cool Whip. Spread over the prepared crust
  • 3. Gently and evenly top with the blueberry pie filling. Refrigerate until set and ready to serve.

Unsalted butter, room temperature, for baking dish
6 large eggs
3 cups whole milk
1/3 cup sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon coarse salt
10 1/2-inch-thick slices brioche (from one 10-ounce loaf)
1 cup blueberries
Confectioners' sugar, for serving

Steps:

  • Butter a shallow 2-quart baking dish. In a large bowl, whisk together eggs milk, sugar, cinnamon, and salt. Dip brioche in egg mixture, then arrange in dish, overlapping slightly. Pour remaining egg mixture over brioche, cover with plastic wrap, and let stand 30 minutes or refrigerate up to overnight.
  • Preheat oven to 325 degrees. Sprinkle blueberries in between and on top of the bread slices. Bake until puffed and custard is just set, 55 to 65 minutes (tent with foil if browning too quickly). Let cool 15 minutes. Dust with confectioners' sugar just before serving.

8 ounces cream cheese, cubed
1 1/2 cups fresh blueberries (I used 2 cups) or 1 1/2 cups frozen blueberries (I used 2 cups)

2 cups milk
1 teaspoon vanilla
1/3 cup maple syrup
powdered sugar

Steps:

  • Remember you need to refrigerate for at least 2 hours or overnight.
  • Place half the bread cubes in a greased 9x13-inch pan. Layer cream cheese cubes evenly over bread. Sprinkle blueberries over top. Cover with the remaining bread cubes.
  • In a bowl, whisk eggs, milk, vanilla and syrup. Drizzle mixture evenly over bread. Cover and refrigerate 2 hours or overnight.
  • Preheat oven to 350 degrees. Cover and bake 30 minutes. Uncover and bake 25-30 minutes more, or until center is firm and top is golden brown. Lightly dust casserole with powered sugar.

12 slices day-old white bread, crusts removed
2 (8 ounce) packages cream cheese
1 cup blueberries (I use more)
12 eggs
2 cups milk
1/2 cup maple syrup or 1/2 cup honey
2 teaspoons cinnamon
1 cup sugar
2 tablespoons cornstarch
1 cup water
1 cup blueberries
1 tablespoon butter or 1 tablespoon margarine

Steps:

  • Cut bread into 1-inch cubes; place half in greased (I use pam) 9x13 inch baking dish.
  • Cut cream cheese into 1-inch cubes; place over bread.
  • Top with blueberries and remaining bread.
  • In a large bowl, beat eggs, milk, and syrup- mix well.
  • Pour over bread mixture, sprinkle with cinnamon.
  • Cover and chill 8 hours (I've done it for 24 before) or overnight.
  • Remove from fridge 30 minutes before baking.
  • Cover and bake at 350°F for 30 minutes.
  • In a saucepan, combine sugar, cornstarch, add water.
  • Bring to boil over medium neat; boil for 3 minutes stirring constantly.
  • Stir in blueberries; reduce heat.
  • Simmer for 8-10 minutes or until berries have burst.
  • Stir in butter until melted.
  • Uncover and bake for 30 more minutes or until golden brown and the center is set.
