THE ULTIMATE CUBAN SANDWICH

The Ultimate Cuban Sandwich image

Provided by Tyler Florence

Categories     main-dish

Time 1h24m

Yield 4 to 6 servings

Number Of Ingredients 19

1 pound boneless pork shoulder
Kosher salt and freshly ground black pepper
1 tablespoon ground cumin
1 tablespoon dried oregano
2 tablespoons extra-virgin olive oil
4 cloves garlic, peeled and gently smashed with the side of your knife
1/4 teaspoon dried red chili flakes
1 medium onion, sliced
1 cup fresh orange juice
1 lime, juiced
1 cup low-sodium chicken broth
2 bay leaves
1 long Cuban bread roll
3 tablespoons Dijon mustard
8 thin slices Swiss cheese
1 cup bread and butter pickles
8 thin slices deli ham
Olive oil
You can do this in a regular Dutch oven, but for convenience and time use a pressure cooker as follows:

Steps:

  • Begin by braising the pork shoulder. Tie the shoulder in 4 places with kitchen twine so it will hold its shape while being cooked or ask your butcher to do this for you. Season the pork with salt, pepper, cumin and oregano. Set the base of a pressure cooker over low-medium heat and add a 2 count of olive oil.
  • Add garlic and chili flakes and as the oil heats up it will become fragrant and infuse the oil. Add the pork. Add onions around the pork and brown slightly before adding orange juice, lime juice, stock and bay leaves.
  • Secure the lid of the pressure cooker and cook for 20 to 25 minutes depending on the size of your pressure cooker. The pork should be tender when done. When done allow to cool in juices before removing twine and slicing.
  • To prepare Cuban sandwiches, split bread in half then layer the sandwich with mustard, cheese, pickles, ham, pork then cheese again (the cheese glues everything together). Season with salt and pepper in between the ham and pork layers. (Optional: drizzle a little of the pork braising liquid over the meat as well).
  • To cook, heat a large cast iron skillet or grill pan over medium heat and lightly coat with olive oil. Place the sandwiches on the skillet and top with another heavy skillet and a couple of heavy weights (bricks, or cans of tomatoes work well). Press down firmly and cook for 5 to 7 minutes per side until the sandwich has compressed to about a third of its original size and the bread is super-crispy. Serve with beans, rice and plantain chips.

CUBAN SANDWICHES (CUBANOS)

Cuban Sandwiches (Cubanos) image

A classic homemade Cuban sandwich recipe (Cubano) with mojo-marinated pork, swiss, pickles, and lots of mustard. And also lots of butter, but let's try to focus on the calorie-free mustard.

Provided by Karen

Categories     Main Course

Time 28m

Number Of Ingredients 7

6 ounces thinly sliced boiled ham
Softened butter (for brushing)
6 six-inch soft baguettes or hero rolls (split lengthwise)
Yellow mustard (for brushing)
3/4 pound thinly sliced Cuban Mojo-Marinated Pork (or store-bought roast pork)
8 ounces thinly sliced Swiss cheese
3 half-sour dill pickles (thinly sliced (I used regular ol' dill chips))

Steps:

  • Heat a skillet over medium, and add the sliced boiled ham. Cook for about 1 minute on each side, or until brown spots start to appear. Remove to a plate.
  • Brush or spread softened butter over the cut side of each roll. Add to the skillet and brown the cut side of the bread until it is golden and starting to toast.
  • When the bread is toasted, spread with mustard. Use as much as you like.
  • Layer the pork, browned ham, Swiss, and sliced pickles. Top with the bread. Brush the top and bottom of the sandwich with butter.
  • Grill the sandwiches in the same skillet, using another heavy skillet to press down the sandwich. Add cans or something else heavy if it's not being pressed well. If you have a George Foreman or a panini press, use that. Cook for about 3 minutes, then flip the sandwich, squish it again, and cook for another 2-3 minutes or so. Keep an eye on it. You want to outside to be crisp and golden and the cheese melted.
  • Slice in half and devour immediately!

CUBAN PORK SANDWICH (CUBANOS) FROM CHEF MOVIE

Cuban Pork Sandwich (Cubanos) from Chef Movie image

This is the cubanos sandwich recipe from the 2014 movie Chef. The food in the recipe was created by real life rock star chef Roy Choi. This is the actual recipe from the movie! It was published on thestar.com. This is supposed to be made with a panini / sandwich press but I do not have one so I've provided instructions for how to make this in a skillet. AND these are great for freezing! Refer Note 1 for instructions.

Categories     Lunch     Sandwich

Time 25m

Number Of Ingredients 7

2 thin slices baked leg ham
4 large (, thin slices Mojo Marinated Pork)
2 pieces of white baguettes (, 6 inch/15 cm in length, cut in half)
Melted butter (, for brushing)
American mustard
2 thin slices Swiss cheese
2 or 3 dill pickles (, thinly sliced)

Steps:

  • Heat skillet over medium heat. Add ham and pork slices, and cook each side until slightly browned then remove to a plate.
  • Butter cut sides of baguettes then place in the skillet, cut side down, for 2 minutes until lightly browned. Remove onto work surface.
  • Layer the bottom of the baguettes with pork, ham, then cheese and pickles. Cut, break or fold the ham, pork and cheese so they fit. Spread the cut side of the bun tops with mustard then place on the sandwich.
  • Butter the bottom AND top of the outside of the baguettes.
  • Heat skillet over medium high heat. Place the baguettes in the skillet, top with a sheet of baking paper then weigh it down with a heavy skillet or pot (use cans if necessary for extra weight so the sandwich compressed). THE BEST CUBAN SANDWICH

The Best Cuban Sandwich image

First, comes the sweet buttery bread and then the Best Cuban Sandwich! It's loaded with Cuban pork roast, cheese, ham, and pickles.

Provided by Hostess At Heart

Categories     Main Course     Sandwich

Time 5h20m

Number Of Ingredients 16

4 Cuban Medianoche Bread rolls
3 tbsp butter
1 lb Cuban Roast Pork
8 slices sliced ham ((sweet cured or smoked, Serrano, or bolo ham - I used honey ham)
8 slices Swiss Cheese
Dill pickle slices
Mustard (optional I used a Dijon but a spicy brown would be great or just yellow too.)
*Sriracha (Optional)
4 pound Pork shoulder roast ((also known as a pork butt))
1 garlic clove
1 tsp salt
1 tsp black peppercorns
1 cup sour orange juice (I used 2/3 cup 100% orange juice (not from concentrate, 1 lime juiced and 1 lemon juiced))
1 cup minced onion
2 tsp dried oregano
1/2 cup olive oil (Spanish if you have it. I used Italian)

Steps:

  • Mash the garlic, salt and peppercorns into a paste, using a mortar and pestle or a food processor. Stir in sour orange juice, onion and oregano. Let mixture sit for 30 minutes.
  • Heat olive oil in a 2 quart saucepan until hot but not frying hot. You'll see some movement in the oil. Remove the oil from the heat and quickly AND CAREFULLY whisk the garlic-orange juice mixture until well blended. Let cool before using as a marinade.
  • Pierce the pork roast several times all over with a fork or sharp knife. Place it in a roasting pan and pour garlic mixture (save a little for basting while roasting) over pork. Cover and let sit in the refrigerator for two or three hours.
  • Preheat the oven to 375°F.
  • Remove lid from the pork and roast for 20 minutes. Reduce temperature to 225°F and roast until the meat is soft and you can pull it apart easily with a fork, about 2 hours and 20 minutes. Baste occasionally while roasting. I roasted mine to an internal temperature of 175°F. Remove from the oven and let rest 10 minutes before slicing.
  • Butter the inside of the top and bottom of the bread and spread the mustard. Put the pickles on the bread, followed by the roasted pork, ham, and cheese. Be generous!
  • Butter a hot griddle or pan. Place the sandwich on the pan and using a heavy skillet, bacon press or foil wrapped brick, or panini press, flatten the sandwich for approximately 3 minutes and then flip to the other side.
  • You don't want you pan so hot that your bread burns but it needs to be hot enough to melt your cheese. Cook until the bread is golden brown.
  • Slice the sandwich diagonally and serve immediately.

CUBAN SANDWICH

Cuban Sandwich image

It is generally believed that the Cuban cigar workers who migrated to the Tampa, FL area/Ybor City back in the early 1900's brought the Cuban sandwich to the US. Originally called the "mixto" or mixed sandwich, the Cuban, as it is known today, became a workingman's lunch for those employed in the cigar industry. Note--if you can't get sour oranges in your area, try equal parts of orange and grapefruit juice or 2 parts orange juice to 1 part lemon juice and 1 part lime juice.

Categories     Lunch/Snacks

Time 1h34m

Yield 4 serving(s)

Number Of Ingredients 15

3 garlic cloves
1 teaspoon salt
1 tablespoon dried oregano
1 cup minced onion
1 cup sour orange juice
1/2 cup Spanish olive oil
1 (2 lb) boneless center cut pork loin roast
Cuban bread
butter, softened
sliced dill pickle
1 lb thinly sliced cuban cooked pork
1 lb thinly sliced good-quality ham
1/2 lb thinly sliced mild swiss cheese
yellow mustard (optional)
mayonnaise (optional)

Steps:

  • To make the Cuban Roast Pork: Mash the garlic and salt together using a mortar/pestle.
  • Place the mash mixture in a small bowl; add in oregano, onion, and sour orange juice; mix thoroughly.
  • Heat oil in a saucepan over medium heat; add in the mash mixture and whisk to blend.
  • Remove from heat and set marinade aside.
  • Pierce the pork roast with a sharp knife or fork.
  • Set aside a small amount of the marinade for use during the roasting period.
  • Pour remaining marinade over the pork, cover, and refrigerate 2-3 hours.
  • Preheat oven to 325°; remove pork from marinade and place on a rack in a roasting pan.
  • Sprinkle reserved marinade over pork.
  • Roast until completely cooked and a meat thermometer registers 160° (about 20 minutes per lb).
  • Baste occasionally with the pan juices.
  • Remove pork from oven and let rest for at least 20 minutes before thinly slicing the meat.
  • Bring remaining pan juices to a boil and simmer until juice is reduced by half; use this juice to sprinkle onto the meat in the sandwiches.
  • To make the sandwiches: cut the bread into 4 sections, each about 8 inches long; slice these sections in half horizontally; spread butter on the inside of both halves.
  • Generously layer sandwiches with filling ingredients in the following order: pickles, roasted pork, ham, and cheese.
  • Spread with the optional mustard or mayonnaise if desired.
  • Preheat a pancake griddle or large skillet.
  • Lightly coat hot griddle or skillet with cooking spray; add in the first sandwich (make sure that your griddle or skillet is not too hot or the crust will burn before the cheese melts).
  • Place a heavy iron skillet on top of the sandwich to flatten it (you want to smash the sandwich, compressing the bread to about a third of its original size).
  • Grill the sandwich for 2-3 minutes on each side, until the cheese is melted and the bread is golden.
  • Repeat the process for each sandwich.
  • Slice each sandwich in half diagonally and serve.
  • Note--Additions like Genoa salami, mayonnaise, lettuce, tomato, and onion have become popular in the past forty years but are considered heresy by purists; in the old days, the sandwich was brushed on the outside with a small amount of pork drippings.

1/8 teaspoon ground cloves
3 garlic cloves, finely chopped

  • Place another baking pan on top of the foil and weight it down with a heavy oven-proof skillet. Bake the sandwiches until the cheese has melted, about 10 minutes. Transfer to a serving platter and serve immediately.

THE SANDWICH CUBANO

The Sandwich Cubano image

Provided by Food Network

Yield 1 sandwich

Number Of Ingredients 7

1 loaf (12-inch) Cuban bread
2 tablespoons mayonnaise, or to taste
2 slices kosher dill pickle, very thinly sliced lengthwise
3 to 4 slices Swiss cheese
4 slices roast pork
4 slices Virginia baked ham
Melted butter

Steps:

  • In Cuba it was just called el sandwich it was here in USA that we gave it a country!
  • The plancha has to be set to 350 F
  • Slice the bread in half lengthwise, spread the mayo on the bottom bread then place the roast pork then the baked sweet ham then the pickle then the cheese. this way the cheese will melt down and blend with the hams.
  • Next put the sandwich on la plancha and spread a little melted butter on top of the bread and press down the top part of the plancha. in about 3 minutes raise the top part of the plancha spin your sandwich to the other side and repeat the butter process again
  • Your bread should be toasted and the cheese melted. this should be done in about 10-to 15 minutes depending on the plancha
  • Any good ham dish starts with the night before. marinating gives all foods that extra punch of flavour. We accomplish this with sour oranges limes alot of minced garlic, ground cumin dried oregano. This mixture gets spread all over the fresh ham and massage into the meat .Put it the fridge covered with plastic wrap. the next day when u are ready Preheat the oven to 350f place the pork in a roasting pan cover fresh ham in salt skin up, this will keep the ham from drying out, cook for about 4 to 5 hours or until your ham reaches an internal temp of 180f. Remember to take off the salt that by now has become hard. Skin should be toasted and crispy.
  • Allow the meat to rest and carve when you can't wait any longer!

  • Sanguich De Miami. Now this is the place to go for gourmet Cuban sandwiches (down to the homemade pickles). This shipping-container-turned-ventanita churns out classic Calle Ocho fare—like a roast-pork pan con lechón and a batido de trigo (cereal milkshake)—plus a few dishes with a modern twist, like Cuban nachos topped with pickled mojo onions and garlic cilantro aioli.
  • Enriquetas Sandwich Shop. On the edge of Wynwood, Miami meets Cuba at one of the most popular lunch spots in the neighborhood. Order a pressed Cuban with an ideal meat-to-cheese-to-condiment ratio, and if you really want a treat, stuff a few croquetas right into the sandwich.
  • Versailles. This iconic restaurant speaks for itself. Plus, let’s not forget it’s responsible for some of the best C ubanos (and cafés con leche) in town.
  • Islas Canarias. Mainly served during breakfast, the Cubans at this longtime Miami institution clock in at less than $10. But it isn’t just the price that makes this meal a must-try: The bread is baked in-house daily, making it ultra fresh (even when freshly pressed).
  • El Palacio De Los Jugos. We dream about the melt-in-your-mouth goodness of this sammy, which offers an extra-generous amount of meat and pairs nicely with mango juice.
  • Three Palms Cuban Café. Picture the most gooey yet crispy grilled cheese sandwich…which also happens to be loaded with pork. Now layer on as many potato sticks as humanly possible.
  • La Carreta. La Carreta’s signature roast pork sandwich is best enjoyed with homemade crispy plantain chips and a sweet mamey papaya shake. (Pro tip: For 75 cents more, you can order an extra-large sando.)
  • Las Olas Café. Cash only. No frills. This South Beach staple dishes out the best Cubanos for the least amount of cash. Grab one from the takeout window and head back to the beach.
  • Estefan Kitchen. On your way to Prada or Tom Ford in the Design District, stop by Estefan Kitchen for a classic Cuban. It’s served with all the traditional fixings: ham, pork, Swiss and mustard.

  • Place the pork shoulder in a large heavy duty zip top bag or bowl. Pierce the meat with a sharp knife in several places. In a bowl, combine the salt, pepper, onion, oregano, garlic, orange juice, lemon juice, bay leaves, and olive oil. Pour the mixture over the pork and massage it into the meat, letting the liquid into the holes you'd created with the knife. Let the meat marinate for at least 4 hours or overnight.
  • Preheat the oven to 375 degrees F, and place the roast along with all of the marinade into a roasting pan. Roast for 30 minutes and turn down the heat to 325 degrees F. Continue roasting for another hour or so, basting the roast every 15 minutes. Add about a quarter cup of water if the liquid in the pan dries up.
  • When the pork is done, set aside to rest for 30 minutes and gather the rest of your sandwich ingredients.
  • When you're ready to assemble, slice the rolls in half. Spread mustard on both sides of each roll. Add some of your sliced roast pork and drizzle with some of the drippings from the roasting pan. Add a layer each of ham and pepperoni, if using. Add a slice of cheese, and a layer of pickles. Top with the other slice of bread.
