3 pounds boneless country-style pork ribs
6 green onions, cut into 1-inch pieces
1 can (8 ounces) sliced water chestnuts, drained
3/4 cup hoisin sauce
1/2 cup water
3 tablespoons soy sauce
2 tablespoons sherry or chicken stock
5 garlic cloves, minced
1 tablespoon minced fresh gingerroot
1 tablespoon light corn syrup
1 tablespoon orange marmalade
1 teaspoon pumpkin pie spice
1/2 teaspoon crushed red pepper flakes
1 to 2 tablespoons cornstarch
2 tablespoons water
Hot cooked rice, optional
Thinly sliced green onions, optional

Steps:

  • Place pork, green onions and water chestnuts in a 6-qt electric pressure cooker. Mix hoisin sauce, water, soy sauce, sherry, garlic, gingerroot, corn syrup, marmalade, pie spice and pepper flakes in a bowl. Pour over pork. Lock lid and close pressure-release valve. Adjust to pressure-cook on high for 25 minutes. Allow pressure to naturally release for 10 minutes and then quick-release any remaining pressure. , Remove pork to a serving platter; keep warm. Skim fat from cooking juices. Select saute setting and adjust for medium heat. Bring to a boil. In a small bowl, mix cornstarch and water until smooth. Gradually stir cornstarch mixture into the pressure cooker. Bring to a boil; cook and stir until thickened, about 2 minutes. , Serve ribs with sauce and, if desired, rice and additional green onions.

A delicious version of Chinese ribs. Serve with fried rice and/or noodles.

3 tablespoons paprika
1 tablespoon garlic powder
½ teaspoon ground black pepper
½ teaspoon salt
6 ½ pounds pork ribs
2 tablespoons vegetable oil
3 cups water
¾ cup ketchup
¼ cup brown sugar
¼ cup Chinese vinegar
1 teaspoon Worcestershire sauce

Steps:

  • Mix paprika, garlic powder, black pepper, and salt in a resealable plastic bag. Place ribs in bag, seal the bag, and shake thoroughly until ribs are completely coated. Remove ribs from bag and discard dry rub.
  • Heat oil in a wok over medium-high heat. Cook ribs in hot oil until browned all over, 3 to 4 minutes per side.
  • Stir water, ketchup, brown sugar, vinegar, and Worcestershire sauce together in a pressure cooker. Add browned ribs to pressure cooker. Lock the lid onto the pressure cooker, bring the cooker up to pressure, and reduce heat to medium.
  • Cook ribs over medium heat for 15 minutes. Remove from heat and release pressure according to manufacturer's directions.

  • Heat the oil in the pressure cooker. Fry the ribs in 2 batches until nicely browned – each batch will take about 5 minutes, transfer to a plate as they're ready.
  • Add the garlic, cinnamon, ginger, star anise and Szechuan pepper to the pressure cooker and fry for a moment. Pierce the chilli a few times with the point of a knife and add that, too, with the soy sauce, vinegar, apple juice and sugar; season lightly with salt and pepper. Add the browned ribs, stir and close the lid. Bring up to high pressure and cook for 30 minutes for small ribs (14cm or less) or 40 minutes for larger ribs. Turn off the heat and allow the pressure to drop naturally (see tips 3 and 4, below).
  • Remove the ribs and the chilli from the pressure cooker and return it to the heat. Simmer the liquid, uncovered, for 6-8 minutes until it has reduced to a fairly light syrup. Return the ribs to the cooker and, if you are serving immediately, heat through again.
  • To serve, trim the spring onions, cut in half lengthways and finely shred lengthways. Sprinkle over the ribs.

  • On the bone side of the ribs, work a butter knife between the membrane and the bone, then grab with a paper towel and pull the membrane off of the ribs. Pull gently but firmly; if the membrane tears while you’re pulling, work the knife under the remaining pieces and pull them off as well. Trim the flap of meat from the bone side – either discard it, or season it and add it to the pot with the ribs. (It makes a nice cook’s snack.)
  • Cut the rack of ribs between every bone. (To try to keep them about the same size, I always run my knife down the same side of the rib.) Stir the salt and five spice powder together, then sprinkle over the ribs. Add the 1/2 cup of soy sauce and 1/2 cup of water into the pressure cooker pot (or use the minimum liquid amount for your pressure cooker). Add your pressure cooker rack, then stack the ribs in the pressure cooker pot, on top of the rack.
  • Lock the lid and pressure cook on high pressure for 30 minutes in an electric PC, or 24 minutes in a stovetop PC, then let the pressure come down naturally, about 15 more minutes.
  • In a small bowl, whisk the hoisin sauce, honey, and 1/4 cup of pot liquid. Gently lift the ribs out of the pressure cooker, put them in a large bowl, and pour the glaze over them.
