Instant pot chicken fajitas are so easy to make and require very simple ingredients. Cooked in under 20 minutes in the Instant Pot.

2 large chicken breasts (sliced thinly)
1 large onion (sliced)
1 red bell pepper (sliced)
1 yellow bell pepper (sliced)
1 green bell pepper (sliced)
1 tablespoon vegetable oil (optional - for taste)
3 tablespoons fajita seasoning
¼ cup (60 ml) water

Steps:

  • Place all of the ingredients in the Instant Pot, mix everything so that the chicken and the peppers are well coated in the spices.
  • Seal the lid, and make sure that the valve is in sealing position. Choose manual or pressure cooker on high for 4 minutes. Once the cooking is finished, do a quick release and serve on warmed tortilla bread (Use gluten-free tortillas if following GF diet) with pico de galo (or simple tomato onion salad), avocado, cilantro leaves, and lime or lemon juice.

Instant Pot Chicken Fajitas is a great dump and start recipe that you can make ahead to save time on busy nights.

Number Of Ingredients 7

2 lbs (907g) chicken breast
1 cup (240g) chicken broth
1.5 tbsp fajita seasoning
3 bell peppers ((1 red, 1 yellow & 1 green), sliced in thicker slices)
1 large onion (sliced)
1 tbsp hot sauce (optional)
8 small corn or flour tortillas

Steps:

  • Add the chicken breasts and 1 cup of chicken broth to the Instant Pot and sprinkle with fajita seasoning and garlic.
  • Add the sliced bell peppers and onions on top of the Chicken, try to distribute them in an even layer.
  • Place the lid on, lock and turn the valve to sealed position.
  • Set to Manual / High Pressure for 7 mins.
  • When cook time is complete, allow for 5 mins natural pressure release. Then perform a quick pressure release to allow any remaining steam to escape.
  • Open the lid and take out the bell peppers and onions. Place in a shallow dish.
  • Remove the chicken, place it on a cutting board and slice.
  • Squeeze some lime onto your Pressure Cooker Chicken Fajitas and garnish with parsley.
  • Serve with tortillas and your choice of toppings. Enjoy!

Number Of Ingredients 13

1-1/2 pounds beef top sirloin steak, cut into thin strips
1-1/2 teaspoons ground cumin
1/2 teaspoon seasoned salt
1/2 teaspoon chili powder
1/4 to 1/2 teaspoon crushed red pepper flakes
2 tablespoons canola oil
2 tablespoons lemon juice
1 garlic clove, minced
1/2 cup water
1 large sweet red pepper, thinly sliced
1 large onion, thinly sliced
8 flour tortillas (8 inches), warmed
Optional toppings: Sliced avocado and jalapeno peppers, shredded cheddar cheese and chopped tomatoes

Steps:

  • In a bowl, toss steak with cumin, salt, chili powder and red pepper flakes. Select saute setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add oil. When oil is hot, brown meat in batches and remove. Add water, lemon juice and garlic to cooker; stir to loosen any browned bits. Press cancel. Return beef to cooker. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 20 minutes., Allow pressure to naturally release for 10 minutes, then quick-release any remaining pressure. Remove steak with a slotted spoon; keep warm., Add red pepper and onion to cooker. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 5 minutes. Quick-release pressure. Serve vegetables and steak with tortillas and desired toppings.
