CRANBERRY WHIP
Tart at first bite, but then you can't get enough! Wonderfully festive. Great way to use fresh cranberries. Sort of like a waldorf salad but better!

Steps:
- In a large bowl, mix cranberries, miniature marshmallows, and sugar. Cover, and chill in the refrigerator 8 hours, or overnight.
- Mix apples and walnuts into the cranberry mixture. Fold in whipped heavy cream just before serving. Serve cold.

CRANBERRY FLUFF
Move over ambrosia salad: This sweet and tangy Thanksgiving side dish -- a Midwestern classic -- is as delicious as it is festive looking. It can also be whipped up in a matter of minutes, a boon for any holiday host.

- Pulse the cranberries and sugar in a food processor until the cranberries are finely minced, about 8 times. Transfer to a large bowl and stir in the marshmallows. Cover the bowl with plastic wrap and refrigerate until well chilled, at least 4 hours and up to 12.
- When ready to serve, stir in the grapes, walnuts and apple, then fold in the whipped cream until completely combined.
CRANBERRY-ORANGE FLUFF

- In large microwavable bowl, mix cranberry sauce, cream cheese and sugar; microwave uncovered on High 1 to 2 minutes, until easily stirred together. Stir in mandarin oranges. Refrigerate at least 2 hours but no longer than 12 hours.
- Gently fold in whipped topping and marshmallows. Top with pecans.
- Serve immediately, or cover and refrigerate until ready to serve, up to 2 hours.

CRANBERRY WHIPPED CREAM
I came up with this recipe when I decided to do something a little different with cranberries. I used it to top a tart filled with chocolate truffle filling and it worked out great.

Steps:
- Combine water and sugar in a saucepan and place over high heat. When mixture comes to a boil, add cranberries and return to boil. Simmer for ten minutes. Strain mixture, squeezing to preserve as much liquid as possible. Discard the berry pulp. Allow cranberry sauce to cool, covered, at room temperature.
- Combine cream and sugar in large bowl. Beat with hand mixer until it forms stiff peaks.
- In a large bowl, stir 1/4 of the whipped cream into the cranberry sauce. Once combined, fold the remaining cream into the mixture, half at a time.
- Store, covered, in the refrigerator.

- Heat cranberries in 1 1/2 cups water to boiling; reduce heat. Simmer uncovered until berries pop, about 8 minutes.
- Press cranberries through sieve to remove skins. return juice to saucepan. Add sugar, 1 cup water and the salt; heat to boiling.
- Add farina gradually, stirring constantly. Cook, stirring occasionally, until thickened, 3 to 5 minutes.

WHIPPED CRANBERRY DRESSING

- Combine 1 can whole-berry cranberry sauce and the grated zest of half an orange in a skillet and warm over low heat, stirring, just until the cranberry sauce loosens. Sweeten 2 cups freshly whipped cream with a touch of confectioners' sugar; fold into the cranberries until ribbons of color form, but stop before the two mix completely.
CRANBERRY COOL WHIP SALAD
Steps:
- Chop cranberries in food processer until finely chopped. Move chopped cranberries into a bowl to mix with other ingredients.
- Add 1 cup sugar and mix well - allow sugar to mix with cranberry juices. Add drained pineapple - continue to mix. Mix in small marshmallows.
- Refrigerate a minimum of 1 hour. Just before serving, mix in Cool Whip and finely chopped pecans.
