In Greek cuisine, saganaki is any one of a variety of dishes prepared in a small frying pan, the best-known being an appetizer of fried cheese. We're raising the bar for this recipe by adding prawns and lots of fresh feta! Serve with crusty bread.

1 tablespoon olive oil
1 red onion, halved and thinly sliced
3 cloves garlic, thinly sliced
2 tablespoons tomato paste
½ cup white wine
1 (13.5 ounce) jar tomato and olive pasta sauce (such as Papayiannides® Tomato & Olive & Ouzo Sauce)
1 ½ pounds prawns, peeled and deveined, tail on
½ cup crumbled Greek feta cheese
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat olive oil in a large skillet over medium heat; cook and stir onion until soft, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minute. Stir tomato paste into onion mixture; cook and stir for 1 minute.
  • Pour wine into tomato mixture; simmer until liquid is reduced by about half, about 5 minutes. Stir tomato sauce into wine mixture and simmer until mixture is thick, about 10 minutes.
  • Spread tomato mixture into the base of a 6-cup baking dish; top with prawns and sprinkle evenly with feta cheese.
  • Bake in the preheated oven until prawns are bright pink on the outside and the meat is no longer transparent in the center, about 10 minutes; top with parsley.

No need to visit Greece for your saganaki fix. Make it at home. My prawn saganaki recipe uses fresh prawns, tomatoes and Greek feta. Don't forget the ouzo!

250 g prawns (fresh, cleaned deveined and tails left intact)
1/4 cup olive oil
1 red onion (finely diced)
2 cloves garlic (finely minced)
1 long red chilli (finely chopped)
1 pepper (bullhorn variety, finely sliced)
3 tbsp ouzo
200 g tomatoes (or 2 large tomatoes pureed in a blender)
1/4 cup flat-leaf parsley (finely chopped)
100 g feta cheese
salt and pepper for seasoning

Steps:

  • Heat the olive oil on medium heat in a large deep frying pan. Once heated through add the onion, garlic and chillis. Allow the mixture to soften and become translucent after a few mins.
  • Add the prawns and saute gently for a few mins.
  • Add the ouzo, tomatoes, parsley, salt and pepper and allow the mixture to come to a boil. Once it reaches boiling point, turn the temperature down to a medium-low simmer. Cook for 10 mins.
  • Transfer the prawn saganaki mixture to oven-safe ceramic bowls and crumble the feta on top. Place under a hot grill (broiler) until the feta melts and oozes into the sauce.

1 tablespoon olive oil
1/2 cup red onion, finely chopped
3 large garlic cloves, pressed
1/8 teaspoon red pepper flakes (to taste)
1 large roma tomato, washed, seeded and finely chopped
2 tablespoons tomato paste
2 ounces black olives, chopped
1/4 cup dry white wine
1 (14 ounce) can pasta sauce
1/2 teaspoon dried basil
3 tablespoons ouzo liquor
1/2 teaspoon black pepper, to taste
1 pinch sea salt
1 teaspoon granulated sugar
14 large prawns, deveined and peeled
1/2 cup feta cheese, crumbled
2 tablespoons parsley, chopped

Steps:

  • Preheat oven to 400Fº. In a large saucepan over medium, heat oil. Add onion and sauté for 3 minutes. Add garlic and red pepper flakes; sauté for 1 minute. Add Roma tomato, tomato paste and black olives; cook, stirring for 1 minute. Add wine and simmer until reduced by half.
  • Add pasta tomato sauce, basil, ouzo, black pepper and sea salt; reduce heat to low and simmer for 10 minutes or until thick. About 2 minutes before the end of cooking, stir in sugar.
  • In a 8 x 8-inch or 2-quart baking dish, spread tomato mixture. Place prawn and using a spatula, lightly push them down half way of the prawn. Top with feta cheese and transfer to the preheated oven; bake for 10-12 minutes or until cooked through. Sprinkle parsley and serve with fresh crusty bread.
