Low Country Shrimp Frittata image

Seafood seasoning is the secret ingredient in this frittata made with green peppers, celery, onion and shrimp.

Provided by Food Network Kitchen

Time 30m

Yield 4-6

Number Of Ingredients 10

2 tablespoons extra-virgin olive oil
1/2 cup celery, chopped
1/2 cup onion, chopped
1/2 cup green peppers, chopped
1/4 cup milk
10 large eggs
Kosher salt and freshly ground black pepper
1 cup chopped cooked shrimp
2 tablespoons chopped fresh flat-leaf parsley
1/2 teaspoon seafood seasoning, such as Old Bay

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat 1 tablespoon oil in a medium ovenproof nonstick skillet over medium-high heat. Add the celery, onion and green peppers and cook, stirring, until tender, about 5 minutes. Remove from the heat and transfer the vegetables to a plate and set aside. Wipe out the skillet.
  • Whisk the milk, eggs, 3/4 teaspoon salt and a few grinds of pepper in a large bowl. Add the cooked vegetables, shrimp, parsley and seafood seasoning and stir to combine.
  • Heat 1 tablespoon oil in the skillet over medium-high heat. Add the egg mixture and cook until the edges start to set, about 2 minutes. Transfer to the oven and bake until the center is set, 15 to 20 minutes. Let stand for 5 minutes before sliding carefully onto a serving plate and cutting into wedges.

POTATO AND LEEK FRITTATA

Potato and Leek Frittata image

I love frittatas cause they can be made several hours in advance and served later in the day, at room temperature - when I think they taste best.

Provided by evelynathens

Categories     One Dish Meal

Time 45m

Yield 6 serving(s)

Number Of Ingredients 9

1 1/2 lbs potatoes
3 cups thinly sliced white and pale green part leeks, washed well and drained
2 tablespoons butter
12 large eggs
1/2 cup parmesan cheese, grated
1/2 cup gruyere cheese, coarsely grated (or you can use 1 full cup of either cheese)
2 tablespoons snipped fresh chives
2 tablespoons minced fresh parsley
2 tablespoons olive oil

Steps:

  • Steam potatoes, covered, for 20-25 minutes, or until tender.
  • Let cool until they can be handled.
  • Peel and cut crosswise into thin slices.
  • In a 12 inch non-stick skillet, cook the leek in the butter over moderately-low heat, stirring, for 12-15 minutes, or until very soft.
  • Season to taste.
  • In a large bowl, whisk together eggs, ½ cup parmesan, ½ cup gruyere, chives, parsley and season to taste.
  • Whisk until combined well.
  • Stir in leek and potatoes.
  • In the cleaned skillet, heat the oil over moderate heat until hot but not smoking.
  • Pour in egg mixture, distributing potatoes evenly, and cook, without stirring, for 10-12 minutes, or until edge is set but center is slightly soft.
  • Put a plate, larger than the skillet, over the skillet and 'flip' frittata onto it. Gently slilde frittata back into skillet, now browned-side-up and continue cooking until other side has set, about 4 minutes longer.

MUSHROOM LEEK FRITTATA

Mushroom Leek Frittata image

From Moosewood. I would call this more of a casserole than a frittata, but I will honor the wishes of the original recipe writer. :) This is a nice addition to a brunch menu.

Provided by Aunt Cookie

Categories     One Dish Meal

Time 1h5m

Yield 6 serving(s)

Number Of Ingredients 12

1 1/2 cups bread cubes (whole wheat is nice)
3 tablespoons butter
3 tablespoons olive oil
2 medium garlic cloves, minced
1 cup leek, carefully cleaned and chopped
3 cups mushrooms, sliced
1 tablespoon fresh dill or 1 teaspoon dried dill
salt and pepper
4 ounces cream cheese, in 1/2-inch cubes
1 1/4 cups sharp cheddar cheese, grated
4 eggs
1 1/4 cups milk

Steps:

  • Arrange the bread cubes in a single layer on a baking sheet and toast in a 375 F oven until crispy.
  • Saute the garlic in 2 tb. butter and 2 tb. olive oil until the garlic is golden.
  • Toss the bread cubes with the garlic butter.
  • Saute the leeks in the rest of the butter and olive oil for a couple of minutes.
  • Add the mushrooms and seasonings, and continue to cook. Stir occasionally, but keep a lid on it to retain the juices from the mushrooms.
  • Butter a 9 x 9 inch pan. Place the bread cubes in the pan, arrange the cream cheese on top, cover the cream cheese with the vegetables, and top with the cheddar cheese.
  • Beat together the eggs and milk with some salt and pepper and pour it over the other ingredients in the pan.
  • Bake in the 375 F oven until puffy and golden, about 30 minutes.
  • Serve immediately.
