SWEET POTATO SEAFOOD CHOWDER
This is a lighter chowder that's loaded with veggies. It still has the rich and creamy textures, but is healthier given the lack of heavy cream and the use of sweet potatoes.

Steps:
- Melt butter in large pot over medium heat. Add onion, peppers, garlic, herbes de Provence, and cayenne pepper. Saute until onion is soft and translucent, about 5 minutes. Add sweet potato and corn; saute for 2 minutes more.
- Pour in chicken broth and milk, bring to a boil over high heat, then reduce to low. Cover and simmer for 15 minutes.
- Partially blend chowder using an immersion blender. Add scallops and tilapia and continue cooking on low until seafood has cooked through, 7 to 10 minutes. Taste and adjust seasoning.

- Heat olive oil in a large pot over medium heat. Cook and stir onion and garlic in the hot oil until onion is tender, about 10 minutes. Add vegetable stock, corn, sweet potatoes, diced tomatoes with green chile peppers, salsa, chili powder, cumin, salt, and pepper to onion mixture; bring to a boil for 5 minutes.
- Stir shrimp into stock mixture and return to a boil; reduce heat to medium and simmer until shrimp are cooked through, about 10 minutes more. Stir green onion into soup; season with salt and pepper.

- In a large saucepan, mix together the sweet potatoes, onion, garlic, ginger, chilli pepper, spices, coconut cream and water.
- Bring to the boil and simmer until the potato is almost tender.
- Add the prawns, chicory and chinese leaves. Simmer for 4 - 5 minutes, until the ingredients are warmed through, but the leaves are still crisp.
- Add the sugar and lime juice, and season to taste.

- For the soup, place sweet potatoes, a cup of the coconut milk and the broth in a stock pot. Bring to a low boil and simmer 15 minutes until the sweet potatoes are soft.
- Place potatoes and liquid in a food processor and blend until smooth, adding lime juice and the remaining coconut milk as needed.
- For the shrimp, mix together the ingredients in a plastic bag. Marinade the cleaned shrimp for one hour in the fridge. Broil or grill shrimp for five minutes until done.
- For the bananas, place banana slices in a single layer in a shallow baking pan. Broil 2-3 minutes. Turn bananas over and broil another minute or two until they are a bit soft and lightly browned.
- Ladle soup into bowls and top with shrimp. Serve condiments in small bowls on the side.

- Heat oven to 200C/180C fan/gas 6. Put the sweet potato on a baking tray, rub all over with a little of the oil and season with salt. Bake for 45 mins until really soft.
- Meanwhile, heat the remaining oil in a frying pan. Add the garlic and pepper and cook for 2 mins, making sure the garlic doesn't burn. Add the chilli flakes, half the paprika, the vinegar, ketchup, 1 tbsp water and prawns to the pan, then bubble for 2 mins until the prawns are cooked through. Stir through the parsley, saving a little to sprinkle over at the end.
- Mix the remaining paprika into the mayonnaise. Once the potato is cooked, split it down the centre, pile in the prawn mixture and dollop the paprika mayo on top. Scatter over the remaining parsley and serve.

- Heat oil in a large pan, add garlic, lemongrass and ginger and fry for 1 minute.
- Add chilli, shredded lime leaves, coconut cream and stock. Bring to a gentle simmer.

- Heat oil in a soup kettle or Dutch oven over medium heat. Cook onions, stirring occasionally, for 5 minutes or until translucent. Add sweet potatoes and broth to the pot and bring to a boil. Lower the heat and simmer, partially covered, for 15 minutes, until potatoes are cooked through. Puree the soup, using an immersion blender or by transferring the soup to a food processor. Return the soup to the pot with the heat off. Add coconut milk, lime juice, salt and cayenne. Stir to combine. Season with salt and pepper, to taste. Set aside while you sauté the shrimp.
- Put shrimp in a bowl. Sprinkle spice mix over shrimp and toss to coat. Heat 2 teaspoons oil in large skillet until hot but not smoking. Cook shrimp for about 2 1/2 minutes per side over medium-high heat, or until there’s a nice brown spice crust on the outside and the shrimp is just cooked through. Tent with foil to keep warm while you heat the soup.
- Heat the soup gently until it’s hot. Ladle into shallow bowls. Place 3-4 shrimp in each bowl. Add a small pile of shredded spinach to the center of each bowl. Serve hot.
