We seriously cannot stop eating these! You can eat them as brats or chop them up, fry them with some olive oil, and toss them in practically any dish. Both of my picky husband and VERY picky son will eat these up, which is a major win! The original recipe makes 4 but I find them way too large that way so I divide mine into 8. I hope you enjoy them as much as we do and I'm sorry if this is already posted on this site, I couldn't find it anywhere. Original recipe is from Isa Chandra Moskowitz at the Post Punk Kitchen. *The 1/2 beans are not included in the nutrition facts as it depends on what kind of white beans you decide to use.

1/2 cup cooked white beans, rinsed and drained (great northern or navy)
1 cup vegetable broth
1 tablespoon olive oil
2 tablespoons soy sauce
1 1/4 cups vital wheat gluten
1/4 cup nutritional yeast
1 teaspoon granulated garlic
1 1/2 teaspoons fennel seeds, crushed
1/2 teaspoon red pepper flakes
1 teaspoon sweet paprika
1 teaspoon dried oregano
1/2 teaspoon dried thyme
3 dashes fresh black pepper

Steps:

  • Get your tinfoil squares ready.
  • In a large bowl, mash the beans until no whole ones are left.
  • Throw all the other ingredients together in the order listed and mix with a fork (I find it easier to use my hands).
  • Get your steaming apparatus ready.
  • Divide dough into 8 even parts and form into little logs (about the size of a large hot dog.).
  • Tightly wrap the dough in tin foil, like a tootsie roll, twisting the ends. (I didn't wrap mine tight enough last time and they came out strangely shaped but they still cooked through and tasted great.).
  • Place wrapped sausages in steamer (I use one of those cheap steamer baskets you can buy at the grocery store) and steam for 40 minutes.
  • Unwrap and enjoy or refrigerate for later (they also freeze well).

This is modified from http://hellyeahitsvegan.com/?p=755, which has some lovely step-by-step photos. My meat-eating husband said, "In some ways I like these better than real sausage." They definitely wouldn't fool anybody, but they will satisfy any craving you may have for breakfast sausage without harming pigs or raising your cholesterol, and they taste MUCH, MUCH better than any vegetarian sausages you can buy in the freezer of your health food store. Enjoy with hash browns, fruit and Recipe #364735 for a vegan breakfast feast! You might want to double the recipe, though.

1/2 cup textured vegetable protein
1/2 cup boiling water
1/4 cup whole wheat flour (or gluten-free flour)
1/4 cup flax seed meal
1/4 cup oat bran or 1/4 cup wheat bran
2 tablespoons nutritional yeast
1 teaspoon garlic powder
1/2 teaspoon crushed sage
1/2 teaspoon ground fennel
1/4 teaspoon black pepper
1/8 teaspoon cayenne
1/4 cup water
1/2 teaspoon liquid smoke (optional)
3 tablespoons Braggs liquid aminos or 3 tablespoons soy sauce
1 teaspoon maple syrup
1/4 teaspoon blackstrap molasses
oil (for frying)

Steps:

  • Stir together tvp and boiling water and set aside to soak for 5 minutes.
  • Meanwhile, mix flour, flax, bran, and dry spices; stir to incorporate. Stir in tvp. In a measuring cup, measure out water; add liquid smoke directly to the cup and stir, if using (this way the smoke will be evenly distributed). Stir in other liquid ingredients, then add wet to dry; mix well. With your hands, form mixture into 2" balls and flatten slightly into patties.
  • Fry in oil in an uncovered frying pan on medium heat, about 2 minutes per side (or until browned).
  • Freeze leftovers (if you have any) and microwave 1-2 minutes to enjoy on busy weekday mornings.

Easy Italian Sausage and Peppers image

My Mom made these often when I was growing up and I have always loved them! I think this is the most authentic and traditional way to make these.Traditional Sausage and Peppers do NOT have tomato sauce! We always ate them on Italian sub rolls with mustard but you could eat these alone with good crusty bread on the side. This serves 8 and can easily be scaled down or increased depending on how many you want to feed.

8 hot Italian sausages (if you prefer) or 8 italian sweet sausage (if you prefer)
2 tablespoons olive oil
1 large onion, halved and sliced
2 large red peppers, seeded and sliced
1 green pepper, seeded and sliced
2 garlic cloves, minced
salt and pepper, to taste
1 pinch crushed red pepper flakes (optional)
1 teaspoon dried oregano
8 Italian rolls
mustard (optional)

Steps:

  • Heat the oil in a large pan, over medium heat.
  • Add the sausages and cook, turning frequently.
  • You want them browned all over and this takes about 10 minutes.
  • Add the onions and stir up the browned bits on the bottom of the pan.
  • Then after another 2 minutes, add the peppers, garlic, salt, pepper, and dried oregano.
  • After lowering the heat cook for another 5-10 minutes until the vegetables are tender and the sausages are cooked through.

I've always made this with sweet Italian sausage, but have recently started doing it with Polish kielbasa as well. The directions are for Italian sausage and works just fine for either hot or sweet sausage; the Polish sausage doesn't require parboiling unless you just want to do so to reduce fat.

4 -6 italian sweet sausage or 4 -6 hot Italian sausages
1 1/4 cups dry white wine or 1 1/4 cups water, divided
2 -4 teaspoons extra virgin olive oil, divided
2 large onions, thinly sliced,lengthwise
2 -3 cloves garlic, minced
3 -4 large red bell peppers or 3 -4 large green bell peppers, seeded and thinly sliced
salt & freshly ground black pepper
4 -6 large crusty French rolls, split and warmed in oven
4 -12 slices provolone cheese, 1 to 2 slices per sandwich (desirable) (optional)
1 -2 cup fairly spicy marinara sauce (if not spicy, simmer with garlic and red pepper flakes or cayenne pepper to taste)

Steps:

  • Poke the sausages all over with a fork, and place in a large lidded skillet with 1-2 Tsp extra virgin olive oil and 1 cup white wine or water, turn on heat to medium, and partially cover.
  • When pan begins to boil, turn sausages, and continue to simmer, turning several more times.
  • When liquid has evaporated, uncover, and continue cooking until sausages have browned to your taste.
  • Remove sausages from pan, and set on paper towels to drain.
  • Drain all grease from skillet, but do not wash or rinse it.
  • Add 1-2 Tsp more extra virgin olive oil to pan, and place on medium heat.
  • Add onions, and garlic, and season to taste with salt and pepper.
  • Moisture from the onions should be enough to deglaze the pan, but you can add 1/4 cup white wine or water, if desired, to help with the job.
  • Stir the onions, scraping the bottom to pick up and dissolve browned bits from the sausage.
  • Continue cooking and tossing until onions are almost translucent.
  • Add peppers, and toss to combine with onions.
  • Turn up heat to medium-high, and continue to toss and cook until peppers are crisp-tender or to your taste.
  • Bury the sausage in the vegetables to reheat if necessary.
  • I usually serve on crusty French rolls or Bolillos, crusty Mexican rolls that have been heated in the oven.
  • Either one is better than your typical hoagie roll.
  • I split the warmed roll, brush on a little marinara sauce, split the sausages lengthwise, and pile on the onions and peppers.
  • If desired, line the roll with a slice of provolone and/or place one on top of the sausage and veggies.
