POTLUCK TACO SALAD
I found this recipe in an old school cookbook, and I've taken it to many potlucks since then. The layers look so pretty in a glass bowl. -Sandy Fynaardt, New Sharon, Iowa

Steps:
- In a large skillet, cook and crumble beef over medium heat until no longer pink, 6-8 minutes; drain. Stir in 3 tablespoons taco seasoning., In a large bowl, layer beef mixture, lettuce, beans, onion, tomatoes, cheese and crushed chips. In a small bowl, mix salad dressing, taco sauce and remaining taco seasoning; serve with salad.

- In a Dutch oven over medium heat, cook beef with 1 envelope plus 2 tablespoons taco seasoning until no longer pink; drain. , In a very large serving bowl, combine the lettuce, chips, tomatoes, beans, olives, cheese, onion, chilies and beef mixture., In a small bowl, combine the salad dressing, salsa, sugar and remaining taco seasoning; pour over salad and toss to coat.

- In 10-inch skillet, cook beef and taco seasoning mix as directed on seasoning mix package.
- In large bowl, gently mix lettuce, tomatoes, olives, onions and cheese. Add beef mixture; stir gently to mix.

HOT TACO SALAD
Salsa adds lots of flavor to this warm salad. From "Recipes for Busy Cooks" by the Rice a Roni folks.

- In a large skillet, brown ground beef and onion; drain.
- Remove from skillet; set aside.
- In the same skillet, prepare Rice a Roni Mix as package directs.
- Stir in meat mixture, salsa and chili powder; continue cooking over low heat 3 to 4 minutes or until heated through.
- Arrange lettuce on serving platter.
- Top with rice mixture, tomato and cheese.
- Top with Tortilla chips, if desired.
- Add a dollop of sour cream, if desired.
- Makes 5 servings.

- Brown ground beef in a skillet over medium to medium-high heat. Once beef is browned, remove any excess fat from the pan. Add taco seasoning and mix well. If necessary, add about 1/3 cup of water and let mixture simmer over medium-low heat until water is dissolved. Remove pan from heat and cool. The taco meat can be prepared a day in advance and refrigerated until ready to serve.
- Add all remaining salad ingredients to a large bowl. Add the cooled ground beef. Toss to combine all ingredients. Mix together equal parts Western Dressing and Taco Sauce for the dressing. To avoid soggy chips, be sure to wait until you are ready to eat to toss the ingredients together. I usually put my dressing in a small tupperware to the event and then dress when we are ready to eat. Pour dressing over the top and toss to coat. Enjoy1
