1/4 cup chopped celery
1 onion, chopped
4 tablespoons butter, divided
3 slices bread, cubed
4 to 5 large potatoes, peeled, cooked and mashed
1/4 cup chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup hot whole milk
1 large egg, beaten
Additional parsley

Steps:

  • In a medium skillet, saute celery and onion in 2 tablespoons of butter until tender. Add bread cubes and stir until lightly browned. Stir in potatoes, parsley, salt, pepper, milk and egg; mix well., Spoon into a greased 1-1/2-qt. baking dish. Dot with remaining butter. Bake at 350°, uncovered, for 30-40 minutes or until lightly browned. Garnish with additional parsley.

32 ounces frozen potatoes with onions and bell peppers
1/2 cup onion, diced
1 cup melted butter, divided
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon garlic powder
10 1/2 ounces condensed cream of chicken soup
16 ounces sour cream
4 ounces diced pimentos, drained
2 cups Velveeta cheese, grated
2 cups cornflakes cereal, crushed

Steps:

  • Preheat oven to 350°F.
  • Thaw potatoes in a colander to drain any liquid. Once thawed, put into a large mixing bowl.
  • Add diced onions, 1/2 cup butter, can of soup, sour cream, pimientos, seasonings, and grated cheese blending thoroughly.
  • Grease a 9 x 13 inch pan and spread potato mixture into pan.
  • In a small bowl, mix crushed Cornflakes and the other 1/2 cup butter together until well blended. Sprinkle evenly over potato mixture.
  • Bake for 45 minutes to 1 hour until an instant read thermometer registers at least 145°F in the center of the casserole.
  • Optional: To make this more of a main dish, add 2 cups diced ham, chicken, or other protein.

Every family has their own verson of this recipe. This is the one my family uses which I got from my Mother Joyce Walburn and she got from my father's Aunt Elma Edwards(Emo) from St. Louis Mo. Just about every family gathering, holiday you can count on this dish being on the table.

Number Of Ingredients 9

2 lb hash brown potatoes, frozen
1/2 c butter, melted
1 tsp salt
1/4 tsp pepper
1/2 c onion, chopped
1 can(s) (10 3/4oz) cream of chicken soup
1 pt sour cream
2 c sharp cheddar cheese, grated
2 c corn flakes crushed with 1/4 cup melted butter

Steps:

  • 1. Defrost potatoes. Combine in large mixing bowl with 1/2 cup butter, salt and pepper. Add onion, soup, sour cream, and cheese. Blend thoroughly. Pour into buttered casserole. Cover with crumbs. Bake at 350 degrees for 45 minutes.
  • 2. NOTE: This can be prepared the day before, or if you want to serve only half the recipe, use 2 smaller dishes and freeze one. When frozen, remove from freezer 20 minutes before baking Add crumbs just before baking.

A dear friend brought this dish to a gathering one day, and we were all begging for the recipe! This has become my "go to" recipe when I need a crowd pleaser. It is always the first to go!

5 large potatoes, peeled, diced and boiled
1 small onion, diced
2 slices fresh bread, broken into pieces, and crumbled with fingers
1/2 lb Velveeta cheese, diced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup butter or 1 cup margarine
3/4 cup milk
1 cup corn flakes, crushed

Steps:

  • Combine first 6 ingredients in an ungreased 9x13 inch casserole dish.
  • Heat butter and milk together and pour over mixture in pan.
  • Sprinkle top with cornflakes crumbs.
  • Bake uncovered at 375 for 40-45 mins, or until lightly browned and bubbly.
  • ENJOY!

  • Preheat oven to 350°. In a large saucepan, saute onion and celery in butter until tender. Remove from the heat. Stir in the bread, potatoes and parsley. Spoon into a greased 1-qt. casserole. , Bake, uncovered, until top is lightly browned, 45 minutes.

2 cups shredded Cheddar cheese
1 (10.75 ounce) can cream of potato soup
1 (8 ounce) container sour cream
½ (8 ounce) package cream cheese, softened, or more as needed
½ cup chopped green onions
2 cloves garlic, minced
½ teaspoon salt, or to taste
1 (16 ounce) package frozen hash brown potatoes
½ cup grated Parmesan cheese, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish.
  • Mix Cheddar cheese, potato soup, sour cream, cream cheese, green onions, garlic, and salt together in a large bowl. Fold potatoes into the mixture; pour prepared casserole dish. Top with Parmesan cheese.
