POTATO STUFFING CASSEROLE
I adapted this recipe from a Pennsylvania Dutch cookbook, and it's indicative of the fine German cooking found in this area. If you're looking for an alternative to mashed potatoes, try this dish. -Elsa Kerschner, Kunkletown, Pennsylvania

This is an old Pennsylvania Dutch recipe I've always served as a side dish. The simple addition of onion and celery gives the potatoes a special flavor, and the parsley adds color.

POTLUCK POTATO CASSEROLE
The crunchy topping on this side-dish casserole gives way to a cheesy interior, resulting in a comfort food winner. A bonus with this dish is that you can make the casserole ahead - assemble and refrigerate it until time to bake. Sprinkle the cornflakes over the casserole just before baking. GOOD TO KNOW: Instead of a salty green bean casserole, try this low-sodium crowd-pleaser for brunch or dinner.
