Steps:
- Preheat the oven to 375º Fahrenheit.
- In a stand mixer bowl, combine flour and salt. Using a pastry cutter, cut in the cold butter until the mixture becomes coarse crumbs. Snap the butter between your fingers if needed to combine the flour and butter. It's ok if there are little chunks of butter. That's what will make your pastry flaky.
- In a separate cup, beat the egg yolk, reserving the egg white until later. Stir the cold water into the yolk. Gradually add the egg mixture to the flour mixture until dough comes together to form a ball.
- On a floured pastry mat, roll out half of the dough large enough to cover the bottom and sides of an ungreased 9x13 inch pan. Place the dough in the pan.
- Sprinkle the crushed cornflakes over the bottom of the dough in the pan.
- Arrange apple slices over the top of the cornflakes. Sprinkle the sugar and cinnamon over the apples.
- Roll out the second half of the dough to cover the entire pan with a little dough hanging over the edge. Lay the dough over the filling and pinch the edges of the two crusts together.
- Whisk the reserved egg white until foamy and brush onto the top crust with a pastry brush.
- Bake the bars for 45 to 50 minutes or until golden brown on top.
- To make the almond glaze, whisk the powdered sugar, milk and almond extract until smooth. Drizzle the glaze over the warm apple pie bars.
- Serve with ice cream if desired.
- Store in an airtight container at room temperature.

APPLE PIE BARS
Steps:
- Preheat the oven to 375 degrees.
- For the crust, place the butter, granulated sugar, brown sugar, and vanilla in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 2 minutes, until light and creamy. Sift the flour and salt together and, with the mixer on low, slowly add to the butter-sugar mixture, beating until combined. Scatter two-thirds of the dough in clumps in a 9 x 13-inch baking pan and press it lightly with floured hands on the bottom and 1/2 inch up the sides. Refrigerate for 20 minutes. Bake for 18 to 20 minutes, until the crust is golden brown, and set aside to cool.
- Meanwhile, put the mixing bowl with the remaining dough back on the mixer, add the walnuts and cinnamon, and mix on low speed to combine. Set aside.
- Reduce the oven to 350 degrees.
- For the filling, combine the Granny Smith and Golden Delicious apples and lemon juice in a very large bowl. Add the granulated sugar, cinnamon, and nutmeg and mix well. Melt the butter in a large (10-inch-diameter) pot, add the apples, and simmer over medium to medium-low heat, stirring often, for 12 to 15 minutes, until the apples are tender and the liquid has mostly evaporated. Spread the apples evenly over the crust, leaving a 1/2-inch border.
- Pinch medium pieces of the remaining dough with your fingers and drop them evenly on top of the apples (they will not be covered). Bake for 25 to 30 minutes, until the topping is browned. Cool completely and cut into bars.

BEST APPLE BARS
VERY MOIST!! Popular apple bars with carmel frosting! The absolute best of all the apple recipes I have ever tried. Grating the apples helps let the apple juice ooze out and give flavor. Always a WINNER. So yummy you'll smack your lips!! A good item to have with your coffee at snack time!

Steps:
- Cream butter and sugar. Add beaten egg and mix well. Add vanilla.
- In a separate bowl combine flour, baking soda, salt, nutmeg and cinnamon. Add to creamed mixture. Add grated apples.
- Pour mixture into a greased 9 x 9 inch baking pan. Bake in a 350 degree oven for 30 minutes.
- For frosting: Bring brown sugar, butter and milk to a boil. Boil only 2 1/2 minutes. Remove from heat and add sifted powdered sugar while stirring. Cool slightly and spread on bars. Sprinkle chopped pecans on top.
- Cool completely and cut into bars. Store in air-tight container to retain moisture.
- Note: If you prefer sweeter, add 1/4 cup sugar to batter of bars, but remember the apple juice from the grated apples will provide some sweetness. We enjoy it as is because the carmel frosting is sweet. Also, we have had them with no frosting and just a sprinkling of powdered sugar on top. Enjoy!

POTLUCK APPLE PIE
In charge of dessert for a fund-raising dinner at our church, I experimented and came up with this scrumptious pie made in a jelly roll pan. It fed a group and got rave reviews. With flavorful apples and maple syrup, it gives a true taste of the Northeast. -Alma Lynne Gravel, Trappe, Pennsylvania

- Make the Dough: In a large bowl, combine all ingredients for dough except for the butter. Stir to combine well. Use clean hands or a pastry cutter to work in the cold pieces of butter, until dough comes together to form a ball (small bits of visible butter in the dough is good.) If is too dry, add 1-2 TB of ice cold water to dough so that it forms a ball.
- Divide dough into 1 smaller half and 1 larger half. Wrap up smaller half and place in fridge. Lightly flour a large working surface and roll out the larger half as evenly as you can, to fit the bottom and up the sides of a 9×13 pan. Press dough into bottom and sides of pan.
- Make the filling: combine the apple slices with sugar and cinnamon, tossing to incorporate. Evenly spread filling on top of bottom crust in pan. Roll out the smaller half of dough the same way as before, trying to roll it out as evenly and thinly as possible to fit the rectangular pan. Place top crust over the apple slices. Seal the bottom and top crust together by pinching the together edges all around. It’s ok if it’s not perfect; just try to seal it together as much as you can. Make 1″ long slits across top crust to allow steam to escape.
