CREAMY POTATO GRATIN WITH CARAMELISED ONIONS

2 tbsp olive oil
2 onions , thinly sliced
2 thyme sprigs, leaves picked, plus extra to serve
150ml double cream
175ml milk
1.25kg/2lb 12oz large potatoes , peeled and thinly sliced
butter , for greasing
100g crème fraîche
85g parmesan , grated

Steps:

  • Up to 2 days before serving, heat oven to 200C/180C fan/gas 6. Heat the oil in a large frying pan. Add the onions and thyme, cover, and cook over a gentle heat for 10-15 mins until softened and caramelised. Pour the cream and milk into a large bowl and season well. Add the potatoes and mix to combine.
  • Butter a 23 x 28cm ovenproof dish, then layer in half the potatoes. Spread the onion mixture on top, then layer on the remaining potatoes. Press down with your hands. Pour over the milk mixture, which should come just level with the potatoes. If not, add a little more milk until it does. Cover with foil, then bake for 11⁄2 hrs until tender. Remove from the oven and leave to cool. Cover and store in the fridge.
  • On the day, heat the oven to 220C/200C fan/gas 7. Uncover the gratin, spread the crème fraîche on top, then sprinkle over the Parmesan. Put in the oven and cook for 30 mins until the cheese is melted, the top crisp and golden brown, and the gratin piping hot. Serve garnished with extra thyme.

½ cup canola oil
½ cup olive oil
4 cloves garlic
1 envelope onion soup mix

1 tablespoon freshly ground black pepper

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Combine potatoes and onion in a roasting pan; cover with canola oil and olive oil. Add garlic, onion soup mix, rosemary, and black pepper and stir until potatoes and onion are evenly coated. Cover roasting pan with aluminum foil.

25g butter
4 onions , halved and finely sliced
few sprigs thyme
4 bay leaves
2 tbsp olive oil
600g cooked new potatoes , cooled and thickly sliced
large handful flat-leaf parsley leaves, chopped finely, but not pummelled

Steps:

  • Heat the butter in a shallow pan and cook the onions with the thyme and bay for 20 mins until very soft, then turn up the heat to medium and cook for 5 mins more until sticky and golden.
  • Add the olive oil to the pan, scatter in the potatoes and fry for about 10 mins until golden. They won't crisp because of the onions but you want them soft around the edges; add more oil to the pan if necessary. About 30 secs before serving toss through the parsley and season.

I remember my Grandmother making this marvelous dish over 65 years ago. We were the only vegetarians in our family and therefore Grandma cooked just to please me. A very easy, simple but tasty side dish. Young potatoes are especially good.

4 large russet potatoes or 4 large yukon gold potatoes
1 large onion, sliced thin
4 tablespoons butter (or more if required)
2 tablespoons extra virgin olive oil
1/2 teaspoon granulated garlic powder
1/2 teaspoon dried dill weed
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Peel and slice potatoes about 1/8 inch thick or thinner.
  • Slice onion thinly.
  • In a large frying pan on medium-high heat, melt butter, add olive oil.
  • Add sliced potatoes and onions, cover and fry for 10 minutes. Using a spatula, turn the potatoes and onions over so they do not break apart. If potatoes appear too dry, add some additional butter.
  • Sprinkle with granulated garlic powder, dried dill weed, salt and pepper and continue to fry with cover removed for another 5 minutes or until potatoes begin to turn slightly brown; turning occasionally.
  • Serve hot with your meal.
  • Note: You may use 2 or 3 large garlic cloves (chopped small), instead of granulated garlic powder. Add to the potatoes after the first 10 minutes of cooking time.

1 onion (thinly sliced)
28 ounces whole peeled canned tomatoes (796 mL can)
1 cup water
4-5 garlic cloves (minced)
2 teaspoons oregano (dried)
1½ teaspoons paprika
1½ teaspoons salt
⅛ teaspoon black pepper
4 tablespoons olive oil (extra virgin)
3 tablespoons Italian flat-leaf parsley (fresh and finely chopped)
pecorino romano cheese or parmesan cheese (to garnish, if desired)

Steps:

  • Peel and cut potatoes into wedges.
  • Place the potatoes in a large bowl of cold water while prepping the rest of the ingredients.
  • Thinly slice the onion. Set aside.
  • Mince the garlic. Set aside.
  • Preheat oven to 425° F (220° C).
  • Place oven grate on the lower center rack.
  • Empty the can of whole peeled canned tomatoes in a large bowl.
  • Add one cup of water to the can, swirl and empty contents in the bowl.
  • Hand crush the tomatoes.
  • Add the minced garlic, dried oregano, paprika and salt and pepper. Feel free to adjust seasonings. Combine together and set aside.
  • Drain the water from the potatoes.
  • Add the sliced onions and crushed tomatoes and combine.
  • Toss the sliced onions with the potato wedges in a large deep baking dish (10.5 x 14.75 inches).
  • Arrange the potatoes and vegetables in a single layer, in the baking dish.
  • Drizzle olive oil over the top.
  • Cover with aluminum foil and bake for about 45-60 minutes or until a knife can easily pierce through the potato. Gently move the potatoes to the baking pan.
  • Bake for another 15-20 minutes, without the foil or until most of the moisture has evaporated from the tomato sauce. Stir occasionally.
  • Transfer to a serving dish, garnish with fresh chopped parsley and serve.
  • OPTIONAL: Garnish with grated pecorino romano cheese or parmesan cheese.

Enough peanut oil to wet the entire bottom of your pan
2 tbs unsalted sweet cream butter
1 lb Idaho (Russet or Red potatoes (I like Reds - but that is just a personal preference))
Salted water
½ medium sized sweet onion (like Vidalia)
Salt and Pepper to taste
Garnish with paprika and fresh basil

Steps:

  • Place a heavy 9" cast iron skillet over medium heat (just a little more than medium on my electric stove).
  • Pour oil into the skillet and add the butter as well. Allow this to heat until the oil is shimmery on the surface - not smoking - if it starts to smoke, pull it off the heat and let it cool some until it is shimmery again.
  • Cut up the potatoes into pieces that are the same size - chips or cubes - your choice.
  • As you cut, place into 4 cups of water that has 2 Tbs of salt mixed in.
  • Cut up onion into bigger chunks than you cut the potato.
  • After 5 minutes, drain the potato VERY WELL and dry with paper towels
  • When the oil is ready (shimmery) put the potato and the onion into the oil. Do not crowd the potatoes. If there isn't enough room for them to lay side by side, then let some cook, remove them to drain on a paper towel and then cook the rest.
  • Cook for about 4 minutes on one side then flip and cook for another 2-4 minutes on the other side.
  • Drain on a paper towel. Salt and pepper as soon as you remove from the oil
  • Garnish and serve hot.

4 slices of uncooked bacon
1.5 pound bag of Blushing Bell Red Potatoes (we used The Little Potato Company bag)
salt & black pepper
chopped 1/2 small white onion
fresh green onions
2 cups water

Steps:

  • Slice raw red potatoes (leaving skin on) in half. Be sure to cut them right down the middle so you do not end up with one size significantly larger than the other side. This helps keep potatoes cooking even.
  • Dice half a white onion and cut 4 pieces of bacon into 1 inch strips (kitchen scissors work well for this).
  • Place halved red potatoes, cut side down, in a cast iron skillet .
  • Add 2 cups of cold water, diced white onion, cut bacon slices and a dash of salt and pepper to the same pan.
  • Heat skillet over medium-high heat until water is boiling. Lower heat to medium and place lid on pan.
  • Potatoes will continue to simmer and get tender, which takes about 15 minutes.
  • Remove lid and simmer potatoes and onions until water evaporates out of the pan. Depending on the size of the pan and potatoes, this may take about 10 minutes. If for some reason all the water doesn't evaporate but the potatoes are totally done, I have occasionally put the lid on the pan and using safety gloves, carefully draining excess water out of pan into the sink before placing back to stove top.
  • Turn skillet on medium-high (after water is gone) and let potatoes and bacon continue to brown in skillet. Please note that the potatoes will not fully brown but leave small crispy brown spots as they heat up. It is fine to scrap bottom of pan for extra char flavor and flip potatoes a few times.
  • Once potatoes and onions are ready, sprinkle on chopped green onion for some additional flavor and color.
  • Other herbs that go great with skillet potatoes are fresh thyme, dill weed, and fresh rosemary. Additionally minced garlic and garlic salt can be delicious additions.
  • Serve while hot!

  • Preheat oven to 400 degrees F.
  • Mix margarine (or butter) and onion soup mix together.
  • Using a sharp knife, make crosswise cuts in each potato about a 1/2 inch apart, (you want to make about 4 -5 cuts in each potato) stopping about 1/4 inch from the bottom of the potato. *Do NOT cut right through.

1 pound (450g) potatoes, Note 1 (3-4 potatoes)
3 tablespoon oil, Note 2
1/2 cup (52g) chopped green onions (4-5 green onions)
1/2 teaspoon salt or kosher salt ((or more to taste))
1/4 teaspoon black pepper ((or more to taste))

Steps:

  • PREPARE AND PRE-COOK POTATOES: Pierce each potato once or twice with a sharp knife. Cook in microwave on High for 6-8 minutes until tender and a knife can easily slide into potato. If potatoes are large, this might take an extra few minutes. Transfer to cutting board and cut potatoes into 1 inch (2.5cm) cubes.
  • PAN FRY POTATOES: Heat oil in large skillet to medium-high heat. Add diced potatoes and fry undisturbed for 4 minutes. Sprinkle with half of salt and pepper. Flip potatoes and fry on second side for another 4-5 minutes, stirring occasionally, or until golden brown with a crispy crust. Season with remaining salt and pepper. Timing is approximate and will depend on how well your pan conducts heat and how brown you like your potatoes.
  • ADD ONIONS TO FINISH: Add chopped green onions. Stir for 1 minute. Taste and adjust seasoning if needed. Serve immediately.

This French Layered Potato and Onion bake is a simple potato dish called Pommes Boulangère or Boulangere Potatoes. It is so easy to make and makes a great alternative to creamy scalloped potatoes or cheesy potatoes au gratin. The thin slices of potatoes and onions are cooked in broth with rosemary until they are soft and tender with a golden crust. A great side dish.

3 tbsp butter (- see note 1)
3 onions (- see note 2)
2.6 lb washed potatoes (about 6 potatoes) (- see note 3)
2 tbsp fresh rosemary, finely chopped (- see note 4)
2 tsp salt
1 tsp black pepper
2 cups vegetable broth/stock

Steps:

  • Preheat the oven to 350°F /180°C. (see note 5)
  • Use some of the butter (about 1 tbsp) to grease the bottom and sides of a 8 cup/2litre baking dish. Place this on a baking tray for easy.
  • Peel and finely slice the onions.
  • Use a mandolin, food processor or sharp knife to cut the potatoes into 1/8 inch (3-4mm) thick disks.
  • Arrange a layer of potatoes in your prepared baking dish, then top with onions, some of the chopped rosemary, salt, and pepper. Repeat the layers finishing with a top layer of potatoes and rosemary.
  • Add any remaining herbs and seasonings to your broth and then pour it carefully over the potatoes, ensuring that it just covers the top layer.
  • Dot the remaining 2 tbsp of butter over the top of the dish, cover the dish with foil and then transfer the baking dish and tray to the oven.
  • Cook for 60 minutes then remove the foil and cook for a further 15-20 minutes until the potatoes are tender and the top is golden and crisp. (see note 5&6)

3 Large Potatoes, Peeled And Cut Into 2 Inch Pieces
3 - 4 Tablespoons Olive Oil
2 Ounces Pancetta, Diced
3 Large Sweet Peppers, Cored, Seeded, And Cut Into Large Dice ( Or Equal Amounts Red & Green Friggitelli Peppers - See Notes Above)
1 Large Onion, Peeled & Diced
4 Garlic Cloves, Peeled & Sliced
Salt & Pepper To Taste
1/2 Teaspoon Red Hot Chili Flakes (Optional)
1/4 Cup Fresh Parsley Leaves, Coarsely Chopped

Steps:

  • Boil the potatoes in lightly salted water until just fork tender, about 8 to 10 minutes. (Do not overcook or mixture will become mushy)
  • Drain the potatoes and set aside.
  • In a large frying pan, heat 2 tablespoons of the oil over medium heat until lightly smoking, and then add the pancetta, peppers, and onions.
  • Cook until the peppers and onions begin to soften, stirring every once in a while, about 8 to 10 minutes.
  • Add the garlic, and continue to cook until the mixture begins to brown, about 3 to 4 minutes more.
  • Add the potatoes to the pan along with the rest of the oil, salt, pepper, and red pepper flakes and continue to cook, gently folding over the mixture as it cooks once or twice.
  • After about 6 to 7 minutes, once the potatoes begin to color, Add the parsley leaves and gently mix.
  • Serve warm.

  • Preheat the oven to 400 degrees F.
