TOMATOES ROASTED WITH PESTO

Steps:
- Preheat the oven to 425 degrees.
- Core the tomatoes and then slice them across (not through the stem) in 1/2 inch-thick slices. Arrange the slices in a single layer on a sheet pan. Drizzle the tomatoes with the olive oil and sprinkle with the oregano, 1 1/2 teaspoons salt, and the pepper.
- Bake the tomatoes for 10 minutes. Remove them from the oven, spread each slice with Pesto, and sprinkle with the Parmesan cheese. Return the tomatoes to the oven and continue baking for 7 to 10 minutes, until the Parmesan is melted and begins to brown. Using a flat metal spatula, put the tomatoes on a serving platter, sprinkle with extra salt, and serve hot, warm, or at room temperature.
- Place the walnuts, pine nuts, and garlic in the bowl of a food processor fitted with the steel blade. Process for 30 seconds. Add the basil, salt, and pepper. With the processor running, slowly pour the olive oil into the bowl through the feed tube and process until the pesto is pureed. Add the Parmesan and puree for a minute. Use immediately or store the pesto in the refrigerator or freezer with a thin film of olive oil on top.
PESTO AND SUN-DRIED TOMATO TORTE

- In food processor, place cream cheese, Parmesan cheese and garlic. Cover and process until blended. Divide into thirds (about 1 cup each).
- Line 5-cup mold or 8x4-inch loaf pan with plastic wrap. Spoon one-third of the cheese mixture in bottom of mold; smooth top with spatula. Spoon pesto evenly over cheese layer. Spoon one-third of the cheese mixture over pesto layer; smooth top with spatula. Spoon tomatoes evenly over second cheese layer. Spoon remaining cheese mixture over tomatoes. Strike filled mold on counter to pack down. Cover and refrigerate at least 24 hours.
- When ready to serve, turn mold upside down onto serving platter and remove plastic wrap. Serve torte with baguette slices.

- Place the first 6 ingredients in a food processor; cover and process until blended. In a greased 3-qt. baking dish or 13x9-in. baking pan, layer half of the potatoes, tomato mixture and cheese. Repeat layers. Pour broth over the top. , Cover and bake at 325° for 1-1/2 hours. Uncover; bake 15 minutes longer or until potatoes are tender. Let stand for 10 minutes before serving.

I saw this demonstrated on the Oprah show and I knew I had to try these out. Oprah was writhing with pleasure while she described these, and now I know why!

Steps:
- Position a rack in the center of the oven and preheat to 400ÿF.
- Lightly oil an 11 © x 8-inch (2-quart) baking dish.
- Bring a large pot of lightly salted water to a boil over high heat.
- Peel the potatoes and cut into 1/8-inch-thick rounds (a mandoline or food processor does the quickest work).
- Add to the boiling water and cook until barely tender, about 8 minutes.
- Drain and toss with the pesto to coat evenly.
- Season to taste with salt and pepper.
- Layer half of the potatoes in the dish, sprinkle with one third of the cheese, and sprinkle with basil.
- Continue until you have 3 layers, finishing with cheese.
- Pour in the hot broth.
- Cover tightly with aluminum foil.
- Bake for 30 minutes.
- Uncover and continue to bake until the cheese is bubbling and starting to brown, about 15 minutes.
- Serve hot, sprinkled with parsley.

- Tip: You can make the pesto the day before you want to eat these to save time if you like. Add the tomatoes to a bowl and pour boiling water over the top enough to fully submerge them. Soak for 30 minutes and then drain the soaking liquid into ANOTHER BOWL, not the sink!
- Add 1 cup of the soaking liquid to a Vitamix or a food processor. I used my Vitamix for this and found it a bit annoying to blend, which required lots of stopping and scraping since the tomatoes are so chewy, they do get stuck a lot. It works, but just takes several minutes. While I haven't tested with a food processor, I'm sure it would work much easier.
- Add the soaked tomatoes, nutritional yeast, garlic, sunflower seeds or pine nuts, red pepper flakes and 1/8 teaspoon salt and blend, starting on low and increasing speed, until smooth and thick like a pesto, stopping to scrape the sides multiple times until there are no longer chunks of tomato. Refer to photo in post. Once it is pretty smooth and thick, add the basil and process again on slow until it's well incorporated. I blended it over and over until it was nice and smooth, but thick, like in the photo. (It makes 1 1/4 cups pesto)
- While the tomatoes are soaking, add the potatoes to a large pot filled with water at least 2 inches above the potatoes. Bring to a boil and once boiling, cook 15-20 minutes until fork tender.

- Make the sun-dried tomato pesto. In a food processor or upright blender, combine the sun-dried tomatoes and all of the oil from the jar, nutritional yeast, basil, garlic, salt, and pepper. Run the motor until you have a fine paste. Scrape the pesto into a bowl and set aside.
- Make the sunflower caesar drizzle. In an upright blender, combine the sunflower seeds, olive oil, lemon juice, nutritional yeast, dijon mustard, tamari, garlic, salt, pepper, and the water. Run the blender’s motor on high until you have a smooth and fluid dressing, adding more water by the tablespoon, if necessary. Check the caesar drizzle for seasoning, adjust if necessary, and set aside.
- Make the potatoes. Place the potatoes in a medium saucepan and cover with cold water. Place the saucepan over medium-high heat. Bring the potatoes to a boil and then simmer until tender, about 15 minutes. Drain the potatoes and arrange them on the baking sheet.
