TARRAGON POTATO SALAD

2 pounds medium Yukon Gold potatoes (6 to 8 potatoes)
Kosher salt
1 cup good mayonnaise
2 tablespoons freshly squeezed lemon juice
2 tablespoons tarragon or white wine vinegar
1 teaspoon freshly ground black pepper
3 tablespoons chopped scallions, white and green parts
3 tablespoons minced red onion
2 tablespoons minced fresh tarragon leaves
2 tablespoons minced fresh dill

Steps:

  • Place the potatoes in a pot with enough water to cover them. Add 1 tablespoon of salt, bring to a boil, and simmer for 15 to 30 minutes, depending on the size of the potatoes, just until tender when pierced with a small knife or skewer. Drain in a colander. Put a kitchen towel over the colander and allow the potatoes to steam for 10 minutes. When cool enough to handle, peel the potatoes and slice 1/2 inch thick. Place the potatoes in a mixing bowl. Meanwhile, combine the mayonnaise, lemon juice, vinegar, 2 teaspoons salt, and the pepper. While the potatoes are still warm, pour the dressing over the potatoes and toss well. Add the scallions, red onion, tarragon, and dill and toss gently. Allow the salad to sit for at least 30 minutes for the flavors to develop. Sprinkle with salt and serve at room temperature.

2 teaspoons chicken bouillon granules
1/2 cup boiling water
2 tablespoons white vinegar
2 tablespoons olive oil
1 tablespoon minced fresh tarragon or 1 teaspoon dried tarragon
2 garlic cloves, minced
1/4 teaspoon pepper
2 pounds small red potatoes, quartered
1 small onion, chopped

Steps:

  • In a small bowl, dissolve bouillon in water. Stir in the vinegar, oil, tarragon, garlic and pepper. Place the potatoes in a greased 11x7-in. baking dish. Add tarragon mixture and stir to coat. Sprinkle with onion., Bake, uncovered, at 350° for 1-1/4 to 1-1/2 hours or until tender.

15 g butter (1/2 oz) or 15 g margarine (1/2 oz)
4 spring onions, chopped
150 ml sour cream (5 oz)
salt
pepper
4 sprigs fresh tarragon
700 g new potatoes (1 1/2 lb)

Steps:

  • Cook the potatoes and keep them warm once they are cooked.
  • Melt butter in a pan and saute the onions until they are soft but not brown. Sir in the sour cream, salt & pepper and two of the tarragon sprigs.
  • Heat it gently without boiling.
  • Add the warm potatoes to the sour cream mixture, coarting them gently in the sauce. Add the remaining two sprigs of tarragon and serve immediately.

2 tablespoons mayonnaise
2 tablespoons Dijon mustard
1 tablespoon white wine vinegar
1 tablespoon minced shallot
1 teaspoon minced fresh tarragon
1/2 a lemon, juice of
1 1/2 lbs red potatoes
1/2 lb fresh green beans, trimmed
salt and pepper

Steps:

  • Combine mayonnaise, Dijon, vinegar, shallots, tarragon and lemon juice in a large bowl for the dressing; set aside.
  • Boil potatoes in salted water for 10 minutes. Add green beans; cook until potatoes are tender when pierced, 3-4 minutes. Remove potatoes and beans; plunge the vegetables in ice water to cool. Drain, then quarter potatoes.
  • Toss potatoes and green beans with dressing to coat; season with salt and pepper. Serve salad chilled or at room temperature.

1/2 teaspoon tarragon

2 cups whipping cream
1 cup whole milk, do not use lowfat
2 tablespoons fresh tarragon, finely chopped
1/4 teaspoon ground nutmeg
2 tablespoons fresh parsley, minced

Steps:

  • Preheat oven to 375ºF.
  • Butter 8x8x2-inch glass baking dish.
  • Combine potatoes, cream, milk, tarragon and nutmeg in heavy large saucepan.
  • Season generously with salt and pepper.
  • Bring to boil over medium heat.
  • Reduce heat; simmer 4 minutes.

1/3 lb new potato, scrubbed and quartered
8 fresh extra large eggs
1/4 cup mayonnaise
1/4 cup plain yogurt
2 tablespoons Dijon mustard
3 tablespoons leeks or 3 tablespoons green onions, finely chopped
1 1/2 tablespoons fresh tarragon, finely chopped (or to taste)
2 teaspoons tarragon vinegar
1/4 teaspoon sea salt (to taste)
1/4 teaspoon white pepper (to taste)
6 leaves cos lettuce or 2 cups arugula leaves
1/4 cup walnuts, coarsely chopped

Steps:

  • In a large saucepan, over high heat, bring potatoes and enough water to cover to a boil. Reduce heat to low, and simmer 15-20 minutes. Drain potatoes, let cool to room temperature.
  • In a large saucepan, gently place eggs and fill with water to 1-inch above the eggs. Bring to a boil, then remove from heat and cover tightly for 15 minutes. Transfer eggs with a slotted spoon to a bowl of ice and cold water and let stand 5 minutes to cool. Peel eggs and coarsely chop.
  • Combine eggs and remaining salad ingredients in a large bowl with a wooden spoon, until well combined. Chill, covered tightly, until serving.
  • To serve, rinse lettuce of choice and spin dry or dry between paper towels. Arrange one leaf of romaine (Cos) on each salad plate (or divide arugula among the plates), then top with a scoop of the egg and potato salad. Sprinkle some chopped walnuts on top.
