This recipe is a great way to start your day. The addition of spam to these fried potatoes is wonderful! Definitely try this one, it will quickly become a favorite!

Number Of Ingredients 10

4 to 5 large potatoes (peeled and cubed)
1 green pepper (chopped (I used a combination of green and red sweet peppers))
1/2 cup chopped green onion or regular onion
1 12 ounce can of spam, chopped
1/2 cup all-purpose flour
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon garlic powder
1/3 cup cooking oil (vegetable, canola or olive)
2 to 3 tablespoons bacon drippings ((optional))

Steps:

  • Combine the cubed potatoes, chopped peppers, onion and chopped spam in a large mixing bowl.
  • In a smaller bowl whisk together the flour, black pepper, salt and garlic powder. Add flour mixture to chopped potatoes and spam mixture and toss to coat all ingredients
  • Heat oil and bacon drippings in a large skillet on top of the stove. Add the potatoes and spam and brown uncovered on high for about five minutes.
  • Cover and turn down heat to medium and cook 10 minutes or until potatoes are tender. Remove cover and cook until potatoes are browned and crispy. Makes 6 to 8 servings.

Wimpy fries. If you like fried potatoes and cheese (who doesn't?) you are going to love this. Absolute family favorite and easy to make. The jalapeno sauce, which is optional, is very mild and adds a lot of flavor, not heat. Also, sometimes I like a couple of egg's over easy on the side with mine, just a personal preference. Enjoy.

Number Of Ingredients 10

3 tablespoons oil
2 (12 ounce) cans Spam, small cube 1/2-inch
1 large green pepper, diced
1 large onion, diced
4 lbs potatoes, skin on, roughly cubed 1/2-inch to 3/4
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
12 slices processed cheese
1 (2 ounce) bottle tabasco green jalapeno sauce (optional)

Steps:

  • Add oil, spam, green pepper, onion, potatoes and spices to a large skillet over medium heat. If you like a little spice add a couple of good shakes of jalapeno sauce, it's very mild. Mix with an egg flipper then cover tightly with aluminum foil and set timer for 5 minutes.
  • After 5 minutes flip mixture over and repeat like this for 30 minutes (5 minutes cover, flip, etc) if it starts to stick to the pan add 3 or 4 tbs water, this helps to make steam which will cook the potatoes.
  • When you see the potatoes breaking down around the edges stick a fork in one, if it goes in you will know it is done.
  • This make 6 servings so when you plate it take 2 cheese slices per plate and pull them into stripes and lay on top of fries (an extra slice of cheese at this point never hurts either), nuke for 45 seconds on high and serve.
  • Optional: Some people like a couple of shakes of jalapeno sauce on top, some do not. It adds a lot of flavor, not a lot of heat.
  • DO NOT USE REGULAR HOT SAUCE IN PLACE OF THE JALAPENO, JUST LEAVE IT OUT.
  • Also, when you cut up your potatoes don't make them all exactly the same size, you will get a better texture in the finished product this way.
  • Enjoy.

8 medium red potatoes (about 2 inches long; 1 3/4 pounds)

Steps:

  • Generously cover potatoes with cold water in a 3-to 4-quart pot and add 1 tablespoon salt. Boil until almost tender, 10 to 15 minutes. Drain potatoes. Transfer to a baking sheet and lightly crush to about 3/4 inch thick with a potato masher, keeping potatoes intact as much as possible.

2 tablespoons brown sugar
4 tablespoons lemon juice
1 cup ketchup
3 tablespoons Worcestershire sauce
1/2 teaspoon prepared mustard
1/2 cup water
1 cup celery, diced
1 green pepper, diced (I use 1/2 pepper)
1 lb ground beef
1 large onion (I use 1/2)
hamburger bun

Steps:

  • Brown ground beef and drain.
  • Combine remaining ingredients bring to boil, add beef, reduce heat and simmer for 30 minutes.
  • Serve over toasted hamburger buns, open face style.
