Steps:
- Preheat oven to 300 degrees F (150 degrees C).
- Place sausage links on a sheet pan and bake for 15 to 20 minutes, or until done. Cut each link in half lengthwise, and then into 1/2 inch slices. Set aside for later.
- In a 4 quart saucepan over medium heat, saute the onions and the pancetta for 10 minutes, or until onions are almost clear. Add the garlic and saute for one more minute. Add the chicken base OR bouillon, water and potatoes and bring to a simmer for 15 minutes. Add the kale, cream and reserved sausage, simmer for 5 more minutes and serve.

Steps:
- Add diced celery, potatoes and onions to a medium saucepan, and cover with just enough water to cover vegetables. Cook until fork tender.
- Meanwhile, brown and crumble sausage; drain excess grease if needed.
- Add browned sausage to potato mixture.
- In a small saucepan, melt butter. Add flour, stirring for 30 seconds with whisk. Add milk and cook and stir until thick.
- Once milk sauce is thick, add it to the potato mixture. Bring the soup to a boil until thickened and hot.
- Season with nutmeg, starting with one shake. Taste and add up to three shakes. Season generously with salt and pepper to taste.

- Using a large saucepan, brown onion in butter.
- Add potatoes, carrots, green peppers, sausage, water, salt and pepper. Cook on low, for about 45 minutes or until the potatoes are creamy.
- Add milk and cook until heated through and then add instant potato flakes. If you want a creamy potato soup add a 1/2 cup potato flakes, or if you want your soup thick like stew add 1 cup of potato flakes.
- Let soup sit for approximately 5 minutes in order to thicken and then serve.

- Heat a large pot over medium-high heat. Cook and stir Italian and kielbasa sausages in the hot skillet until browned, 5 to 7 minutes. Drain grease.

SAUSAGE POTATO SOUP
This Creamy Sausage Potato Soup is made with hot or sweet Italian sausage with potatoes and vegetables. it's an easy soup recipe for the stove top or the Crock Pot!

- Cook the Sausage: Remove the casings from the sausage if you purchased links. Preheat a large pot over medium heat. Add the sausage and cook and crumble to break it apart. Once cooked halfway through, cover partially and continue to heat, stirring occasionally, until cooked through. It'll take around 10-12 minutes total. Set the sausage aside and reserve 1 tablespoon drippings. (Butter can be used if you don't have drippings.)
- Add the drippings to the pot along with 2 tablespoons butter over medium heat. Add the diced onions, celery, and carrots and cook for 4 minutes. Add the garlic and cook for 1 minute.
- Add the flour and cook for 2 minutes. Add the chicken broth in splashes, and use a silicone spatula to "clean" the bottom of the pot to add more flavor the soup. Slowly stir in the heavy cream, hot sauce, soy sauce, and seasonings.
- Bring to a boil, then reduce to a simmer. Clean the potatoes and pat them dry. Cut into 1-inch cubes and add them to the soup. Simmer uncovered for about 40 minutes, or until potatoes are fork tender. Add the sausage back and stir to combine.
- Reduce heat to low and stir in the cheddar cheese (if desired).
- Garnish with red pepper flakes and parsley. Serve!

- Brown sausage and onion in a skillet. Drain well.
- Place potatoes, celery and carrot in bottom of crock pot. Add sausage and onion mixture. Pour chicken broth over vegetables and sausage.
- Turn crock pot to low and cook 4 to 5 hours.
- During the last 5 minutes of cooking add evaporated milk and cheddar cheese. Do a taste test for salt and pepper and add, if needed.
- Note: If a thicker soup is desired, add -- 1 tablespoon of cornstarch dissolved in 2 tablespoons of cold water.
- Serve and enjoy!

- Add celery, onions, and carrots;,cook and stir for 2 minutes.
- Add thyme, basil and salt.
- Add flour and stir until mixed.
- Slowly add the chicken broth and water, stirring until the mixture comes to a boil.
- Add potatoes; cover and simmer for 20 minutes, until potatoes are tender.
- Puree 2 cups of the soup in a blender, (careful, it's hot).
- Return the pureed soup to pot and add milk and peas.
- Cook until the peas are hot, about 5 minutes.

- Simmer the potatoes, onion, salt and water for 20 to 30 minutes until the potatoes are very tender. Do not drain. Mash it all up in the pot.
- In the meantime, cook the sage sausage in a skillet, breaking up large pieces. Drain fat.
- Add the milk, cream, sage and the cooked sausage to the potato mixture. Combine, stirring well to incorporate the additions.
- Heat 5-10 minutes.
- For Christmas soup, very thinly slice red pepper. For Confetti soup, mince various colors of bell peppers.

Steps:
- Cook sausage in a little bit of water until just done.
- Cook off water, or pour out of pan and pan fry sausage until well browned.
- Wash potatoes (or peel if desired) and cut into bite sized chunks.
- Remove sausage from pan.
- Mix soup mix with water and use to deglaze the pan.
- Add potatoes.
- Bring to a boil, cover, then simmer for about 10-15 minutes , until potatoes are done.
- Cut Sausage into disks about 1/2 inch to and inch thick.
- Add to pan and stir well.
- Simmer, with the cover off until sausages are heated through and the liquid is slightly thick.
- Serve with crisp green salad and saute'd onions and peppers with crusty italian bread.
BEEF AND PASTA CONFETTI SOUP
I was in the mood to make up a soup this cold winter evening and this is what I came up with. We have found we really like the shell pasta the best. I've also started cooking my noodles and veggies together. I cook the noodles for about 5 minutes, add the frozen vegetables and bring to a boil again. I then cook them for another 7 minutes and drain.
