CREAMY NO-EGG POTATO SALAD



Creamy No-Egg Potato Salad image

I don't like chopped boiled eggs in potato salad so I developed this recipe using pickles and pickle juice for tang! The fresh veggies are crunchy and delicious. Yes, there are still eggs in the mayo-based dressing but you can sub an egg-free mayo. Try it - it's yummy!

2 lbs potatoes
2 stalks chopped celery
1 chopped green pepper
1/2 cup chopped onion
1/2 cup chopped pickle
1 1/4 cups mayonnaise
2 tablespoons pickle juice
2 teaspoons spicy brown mustard or 2 teaspoons Dijon mustard
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Boil potatoes in water for 25 minutes, drain and set aside to cool.
  • Combine remaining ingredients in large covered container and place in refrigerator while potatoes are cooling.
  • When potatoes are cool enough to handle, peel and cube them.
  • Add to vegetable mayonnaise mixture and toss.
  • Cover and chill at least 6 hours or overnight.
  • Delicious!

4 cups boiled red potatoes with skins left on and cubed.
1/2 cup celery chopped
1 teaspoon mustard
3/4 cup of real mayonaise
1/4 teaspoon celery seed
1/2 cup sweet pickle relish
salt and pepper to taste.

Steps:

  • 1. Mix the mayonaise, mustard, and celery seed in a large serving bowl.
  • 2. Add cubed potatoes, relish and chopped celery and mix lightly. Season with salt and pepper. Refrigerate.
  • 3. Cooks tip: You can eat this potato salad right away, but it is better to let it sit for the flavors to blend. I make the potatoes the day before and chill them. You can use other potatoes, but red potatoes absorb dressing readily.

1 cup mayonnaise
1 cup celery, finely chopped
½ cup dill pickle relish
½ cup sweet pickle relish
½ cup bread and butter pickles, cut into large chunks
½ cup minced onion
1 tablespoon yellow mustard
1 tablespoon apple cider vinegar
1 teaspoon salt, or more to taste
1 teaspoon garlic powder
½ teaspoon freshly ground pepper, or more to taste

Steps:

  • Place the cut-up raw potatoes in a mesh basket inside a multi-functional pressure cooker (such as Instant Pot®). Add 1 cup water. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 3 minutes. Allow 10 to 15 minutes for pressure to build.
  • Let cooker sit for 1 minute after it beeps. Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Pour potatoes into a large bowl and set aside to cool for 15 to 20 minutes.
  • Combine mayonnaise, celery, dill and sweet pickle relish, bread and butter pickles, onion, mustard, vinegar, salt, garlic powder, and pepper in a bowl. Stir well. Pour over the potatoes and stir gently to combine. Serve warm or cool.

1/2 cup plain yogurt
3 tablespoons tarragon vinegar
Salt and pepper
1/4 cup finely chopped red onion or green onion
1 cup diced celery
1 cup diced red bell pepper (1/4 cup reserved for garnish)
4 hard boiled eggs, chopped
Lettuce leaves
2 pounds all purpose potatoes, peeled and quartered
1/4 cup mayonnaise

Steps:

  • Bring potatoes to a boil and simmer, covered, for 20 to 30 minutes or until just tender. While this is cooking in a glass mixing bowl combine the mayonnaise, yogurt and vinegar. Toss with 1/2 teaspoon salt, freshly ground pepper, red onion, celery, 3/4 cup of bell pepper and 2 of the chopped hard boiled eggs. When potatoes are just tender, drain and pat dry and cube them into 1inch dice. Toss them with ingredients in the bowl and adjust seasoning. Center salad on a bed of lettuce and garnish with remaining chopped egg and bell pepper.
