- Boil potatoes in salted water for 10-15 mins until tender. While the potatoes are cooking, mix together the remaining ingredients to make the dressing. Drain the potatoes and while still hot, mix together with the dressing.
- Tip into a secure container to take with you.

FARRO SALAD WITH ROASTED SWEET POTATOES, RED ONION, AND GOAT CHEESE
I love me a farro salad! The hearty grain is an amazing base for all sorts of veggie combinations and it's super convenient to work with since you can cook it several days ahead. I tend to follow a loose formula: farro plus roasted veggies, a bright herb, a crunchy nut or seed, some creamy cheese, and a zingy dressing. Here, sweet potatoes and red onions caramelize gorgeously in the oven, while the earthy goat cheese and zippy vinaigrette balance out the sweetness. Feel free to play-roasted beets or winter squash would be lovely, as would hazelnuts, almonds, or feta.

Steps:
- Preheat the oven to 425°F (220°C).
- Spread the sweet potato rounds and onion wedges on a baking sheet, drizzle with 3 tablespoons of the oil, and season with salt and pepper. Roast, shaking the baking sheet halfway through, until the sweet potatoes are golden brown and tender, 15 to 20 minutes. Let cool slightly.
- Cook the farro according to the package directions. Drain.
- In a medium bowl, season the warm farro with the vinegar, remaining 1 tablespoon oil, salt, and pepper. Add the sweet potato, onion, radish, dill, pistachios, and goat cheese. To finish, drizzle the salad with the lemon juice and sprinkle with smoked paprika, flaky sea salt, and pepper. If the dish seems a little dry, drizzle it with extra oil.
PERSIAN INSPIRED SALAD WITH SWEET POTATO AND SPINACH
From the blog "Sprouts in the Hood" and influenced by Najmieh Batmanglij's recipes, this salad is unusual, delicious and works as a main dish for 2 or as a salad course for 4. I roasted my sweet potato and used spring onions in place of the garlic stems. I also skipped the red pepper flakes and saffron, though I'm sure each would be a fine addition.

- Microwave sweet potato until soft. Run cold water over potato, while peeling skin off. Set aside.
- In a skillet, brown the onions and garlic in butter or ghee. Then add sweet potato, garbanzo beans, rose water, hot pepper flakes, turmeric, saffron and salt.
- Let mixture cool then add dill, spearmint, parsley, garlic stems and spinach.
- Dress with some lemon juice and olive oil.
- Garnish with a dollop of yogurt and pine nuts.

POTATO SALAD
This is just a good old fashion spud salad. The celery and red bell pepper add a little crunch and color. If you like a mustard style simply double the amounts. Tastes even better if it's had a chance to mingle flavours. Tip: you can wash your eggs well and boil them in with the potatoes, then plunge them into ice water while potatoes are draining. The ice water will make them easier to peel.

- In a medium sauce pan boil potatoes over MedHi/High heat 10-15 minutes or until just fork tender.
- Drain and rinse with cool water to stop cooking process.
- Pour into large bowl and set aside to finish cooling.
- In a medium bowl mash boiled egg yolks and pickle juice together with a fork.
- The juice helps to dissolve the egg yolk.
- Mix in Mayo, dill pickle, sweet relish, onion, celery, red bell pepper and both mustards.
- Add Egg Whites (I like to dice into 1/2 pieces) to cooled potatoes.
- Add Dressing mixture gently stirring to cover all potatoes.
- Top with black pepper to taste.
- Refrigerate, 30 minutes, the longer it has to mingle the better it gets.
- It's even better the next day.

- Place a steamer basket in a saucepan with 1/2" of water.
- Place the potatoes in the steamer.
- Bring to a boil over high heat.
- Reduce heat to medium, cover& cook 20 minutes, or until tender.
- Rinse under cold water briefly & drain.
- Place in large serving bowl.
- Meanwhile, heat the oil in a medium nonstick skillet over medium heat.
- Add onion & garlic & cook stirring for 8 minutes, or until the onion is very soft.
- Add the vinegar, apple juice, mustard,parsley, & salt.
- Cook for 2 minutes or until heated through.
- Pour over the potatoes.
- Toss to coat.
- Than let stand at least 15 minutes to allow the flavors to blend.

This is my favorite potato salad now. This recipe came from Naomi Judd's cookbook. I don't use the hard boiled eggs because I don't care for them in my potato salad and I cut back on the mayonnaise,onion, pickle relish and leave out the mustard....you can adjust things to your own taste because what really makes this potato salad is the French dressing. - Cover potatoes in large saucepan with water. Bring to boiling and cook until fork tender, about 30 minutes. Drain. When cool enough to handle but still very warm, peel the potatoes and then cube. Place the warm potatoes in large bowl. Add the salt and French dressing, tossing to coat (You can even let the potatoes sit in the refrigerator overnight at this point.).
- Meanwhile, place the eggs in a medium saucepan. Cover with cold water. Bring to just under a boil and simmer for 10 minutes. Drain and return the eggs to the pot, covering with ice water. Let stand 15 minutes. Peel the eggs under cold running water, beginning with the large end. Cut into small cubes and reserve.
- To the potatoes, add the celery, onion, and pickle relish.
- In small bowl, stir together the mayonnaise and mustard. With a spatula, fold the mayonnaise mixture into the potato mixture until thoroughly blended. Add the egg and gently stir just to evenly distribute. This is one of those dishes that is even bettr the next day. (If you can wait that long).

- Combine sweet potatoes and onion in a large bowl. Add oil and toss to coat. Spread onto a large baking sheet.
