Pizza on the grill! I found this recipe a couple months ago while searching for a potato pizza recipe on Google. It is from a personal blog that includes a food section http://www.invisible-jet.net and is attributed to "Mia." I have made it once with a prepared wheat pizza dough, baking it instead of grilling it, and it was very tasty though a little greasy. The carmelized onions and Raclette (a mild, nutty semi-firm cheese from Switzerland), not to mention the fresh lemon juice, are really what make it interesting, and I imagine grilling it only serves to enhance the taste further. I read that Gruyere, Emmental, Jarlsberg or Swiss cheese are good substitutes for Raclette. An unusual, rich and satisfying pizza. Prep time does not include the time spent making the pizza dough.

1 pizza crust, 10 inches in diameter, pre-baked
4 potatoes
2 onions, sliced
2 garlic cloves, chopped
4 ounces raclette cheese, in thick slices
1/4 lemon
2 teaspoons dried oregano
2 tablespoons olive oil (plus more for drizzling)
salt
black pepper, freshly ground

Steps:

  • If you aren't using a pre-baked pizza dough, bake the raw dough until 10 minutes shy of being done before using in the recipe. The author mentions adding a thin layer of tomato sauce prior to baking the crust.
  • Bring a pot of lightly salted water to the boil and simmer potatoes in it for 20 minutes or until easily pierced with a fork. When done, drain, cool and cut into 1/4"-thick slices.
  • Meanwhile, in a medium skillet over medium-low heat, sautee the sliced onion with 1 teaspoon of the oregano and the two tablespoons olive oil until onions are translucent, or about 15 minutes; set aside.
  • To assemble the pizza: Drizzle the prepared crust with olive oil and season with salt, pepper and remaining oregano. Sprinkle with the garlic. Top with slices of potato, then tear the raclette into pieces and scatter over the potato slices. Finally, spread the onion slices on top of the potatoes and cheese.
  • Grill on medium-low heat for 5-7 minutes, then shut grill off and let pizza sit for 5 minutes or until the cheese has melted and the pizza is crispy and browned. Watch closely--If browning too quickly, move pizza to top rack of grill.
  • Remove to serving plate, drizzle with olive oil and season with salt, pepper and the fresh lemon juice squeezed over top. Serve immediately.

Thinly sliced potato is baked onto light, pizza dough to create an unimaginably good and unique pizza which is very popular in Italy.

1 lb pizza dough (if making my (search "my mother's favorite pizza") recipe, plan ahead 12-18 hrs or you can use your own recipe or bread machine) this recipe will also make more than a pound of dough, so you'll have a little leftover
4 to 5 yellow Idaho® potatoes
4 to 5 tbsp good quality extra virgin olive oil (I like De Cecco)
1 to 1 1/2 tsp Kosher or sea salt, more or less to taste
freshly ground black pepper, to taste (optional)
a sprig of fresh rosemary (optional)
6 to 8 oz of fresh mozzarella (optional)

Steps:

  • Potato pizzas are traditionally make in rectangular pans, but you can use any shape you like. Oil your pan slightly, with about a tablespoon of extra virgin olive oil.
  • Shape the dough into the shape of your pan, then place the dough onto it, drizzle about a tablespoon or more, extra virgin olive oil and rub it over the surface evenly, then set in a draft-free place for a few minutes while you prepare the potatoes.
  • Preheat the oven at this point, to 500˚F (260˚C) or the hottest your oven can be set. Do not use convection.
  • Using a mandoline slicer or food processor, slice the washed and dried yellow Idaho© potatoes (do not peel) very thinly and place in a bowl.
  • Add enough extra virgin olive oil to coat each slice (2-3 tbsp), then sprinkle lightly with the salt. Using your hands, mix the potatoes so they are evenly coated with oil and salt.
  • Optional: sometimes, mozzarella cheese is added at this point, but if you do, do so sparingly (I didn't add cheese).
  • Start layering the potato slices over the pizza dough in the pan, overlapping the slices slightly until all the dough is covered (unlike a traditional tomato pizza, you don't need to leave an edge of dough; I did so for the sake of the photos, or else the pizza would just look like slices of potatoes, but I'd recommend going all the way to the edge and will explain why, below).
  • Drizzle with another 1 tsp or so, extra virgin olive oil and spread carefully and evenly over the potatoes, with your hand or a brush.
  • Optional: sprinkle the some fresh rosemary, if desired (I did add rosemary to one half of my pizza).
  • Place pizza on the floor of the oven, or if you aren't able to use the bottom, put it on the lowest rack, for 4 minutes. After 4 minutes, replace the pizza onto the middle of the oven for another 8 to 11 minutes, or until the potatoes begin to brown. If desired, reset the oven to broil (grill) and place the pizza on the top rack to make the potatoes a little more brown and crispy (this is why it's best to place the potatoes all the way to the edge of the dough, and not leave any exposed crust, so that you don't have to worry about the crust burning while you crisp the potatoes).
  • Remove from the oven and cut into slices and serve hot, warm or cold.
  • This pizza reheats really well, just place it back on a tray into a 400˚F (205˚C) oven for about 4 minutes.

1 pound fingerling potatoes
Kosher salt and freshly ground black pepper
Good olive oil
8 ounces chorizo sausages, such as d'Artagnan, halved lengthwise, then sliced 1/2 inch thick diagonally
1/3 cup dry white wine, such as Chablis
8 ounces cold raclette cheese, rind removed and thinly sliced
6 to 8 sprigs fresh thyme
12 cornichons, sliced in fans
Crusty French bread and Dijon mustard, for serving

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the potatoes in a medium pot, cover with water by one inch, add 1 tablespoon salt, and bring to a boil. Simmer for 10 to 15 minutes, until the potatoes are barely tender when tested with a wooden skewer. Drain and cover with a kitchen towel to steam for 5 minutes. Cut in half lengthwise and set aside.
  • Meanwhile, heat 2 tablespoons olive oil over medium heat in a large (12-inch) sauté pan, add the chorizo, and cook for 8 to 10 minutes, turning often, until browned. Drain all but a tablespoon of the fat from the pan, add the potatoes, and toss to combine with the chorizo and fat. Off the heat, stir in the wine, 1 teaspoon salt, and 1/2 teaspoon pepper.
  • Divide the sausage and potatoes among four gratin dishes. Arrange the raclette in one layer over the potatoes and chorizo. Distribute the thyme sprigs on top. Bake for 8 to 10 minutes, until the cheese is hot and bubbly.
  • Remove the gratins from the oven, place the cornichons on top, and serve hot with the bread and mustard.

1/4 lb. Wisconsin Red Gold or baby red potatoes
1 12" pizza crust
1/2 c. raclette cheese, grated
1/4 c. mozzarella cheese, grated
Coarse salt and fresh-cracked pepper, to taste
3 T. olive oil
1/2 oz. white truffles (or substitute a bit of white truffle oil)

Steps:

  • Method (1) Slice potatoes on finest setting of a slicer or mandoline. Slices should be translucent when held up to the light. (2) Place potato slices in bowl of cold water for 2 hours to remove the starch. Diain and rinse again in fresh water, pat dry with paper towels. (3) Preheat oven to 450°F (4) Cover pizza crust with the grated cheeses, Cover cheese with potato slices and season pizza with salt and pepper. Drizzle with olive oil and bake until crust is done and potatoes are crispy, 8 to 10 minutes. (5) Generously shave truffles over top of baked pizza, or drizzle with truffle oil. Serve immediately.

800g raclette cheese , sliced
1kg new potatoes , halved if large
1 tbsp butter
1 curly lettuce (or endive), leaves separated
1 Baby Gem lettuce , leaves separated
2 red peppers , deseeded and sliced
2 yellow peppers , deseeded and sliced
150g jar pickled silverskin onions , drained
150g jar cornichons , drained
2 baguettes , or other crusty loaves, sliced
3 tbsp Dijon mustard
3 tbsp red wine vinegar
100ml sunflower oil
1 tbsp chives , finely chopped
250g assorted sliced cured meats (we used a mixture of salami, garlic sausage and Bayonne ham, but sliced gammon or Parma ham also works well)
1 x raclette grill machine with paddles

Steps:

  • Start by making the vinaigrette. Put the mustard and red wine vinegar into a bowl or jug and whisk together. Add salt and pepper then slowly add the sunflower oil, whisking as you go until the mixture is thick and smooth. Stir in the chopped chives and store in the fridge until needed.
  • Boil the potatoes for 15-18 mins or until tender. Drain, leave to steam dry for a few mins then add the butter, keep warm until serving.
  • Arrange all the other ingredients in bowls, plates and platters on the table. Set up and turn on the raclette machine according to manufacturer's instructions - you may want to set the raclette machine on a heatproof tray to catch any melty cheesy drips.
  • Let your guests help themselves to ingredients - if your raclette machine has a top hot plate use this to keep the potatoes warm or crisp them up and use to cook the peppers if you don't want them raw.
  • Get stuck in! Everyone should have their own mini handled tray on which to put a slice or two of raclette cheese. This then sits under the central grill until melted. With an arrangement of potatoes and/or cured meats etc on their plate, your guests can then scrape their own portion of melted cheese on top with a wooden paddle or spoon. Leave the jug of vinaigrette on the table so it can be drizzled over the potatoes or salad leaves to taste. Serve with crusty bread on the side.

4 medium potatoes (new potatoes or red potates are best)
1 pinch salt
8 ounces cheese (any kind, but Swiss Emmental or Gruyere taste great when toasted)

Steps:

  • Scrub the potatoes, but do not peel them. Use the tip of a knife to cut out any eyes.
  • Put the potatoes in a pan of cold, salted water. Bring it to the boil and cook them for 15 to 20 minutes.
  • Cut the cheese into thin slices.
  • Check that the potatoes are cooked by pushing a sharp knife into one. It should come out easily.
  • Drain the potatoes and let them cool a little. Cut them in half. Lay the cheese onto the cut side of each potato.
  • Put the potatoes under the broiler (or onto a grill rack) and cook until the cheese melts and starts to bubble.
