BROCCOLI SALAD WITH BAKED CROUTONS

- For the salad: Preheat the oven to 375 degrees F. Line a baking sheet with parchment.
- Cut the broccoli heads into florets and then chop in bite-size pieces. Place in a large salad bowl.
- When the oven is preheated, place the prosciutto on the prepared baking sheet. Cut biscuit dough scraps into bite-size pieces and place them on a separate baking sheet. Bake the biscuit scraps for 10 minutes and the prosciutto for 15, turning the baking sheets after 7 minutes. Allow to cool, then break the prosciutto into small pieces.
- Add the onions and prosciutto pieces to the salad bowl and toss gently to distribute.
- For the dressing: In a small mixing bowl, add the balsamic vinegar, maple syrup, mustard, chili paste, salt, pepper and garlic; whisk to combine. Whisk in the olive oil in a slow, steady stream until the dressing emulsifies and thickens.
- Pour a little less than half of the dressing over the broccoli mixture, or add to taste; toss to coat evenly. Top with biscuit croutons just before serving.
SUNNY'S QUICK STEAMED BROCCOLI SALAD

- For the broccoli: Steam the broccoli according to the package directions.
- Add the thyme, garlic and zest to a large bowl and brush or rub the ingredients against the bottom and sides of the bowl. Add the steamed broccoli and toss. Refrigerate until chilled.
- For the dressing: In a medium bowl, add the mayonnaise, sriracha, lemon juice, sugar and some black pepper. Whisk until the sugar dissolves.
- For the salad: Add the red onions, raisins and cranberries to the bowl with the dressing. Stir to combine.
- Discard the thyme from the broccoli. Add the dressing and gently fold until the broccoli is evenly coated. Serve chilled or at room temperature sprinkled with the almonds.
GARLIC SHRIMP AND BROCCOLI PASTA
Another light great tasting pasta. I love all the garlic. You can adjust the heat by playing with the pepper flakes!

Steps:
- Put the garlic and stock in a small sauce pan and bring to boil.
- Reduce the heat to low and cover.
- Simmer for about 20 minutes or until the garlic is soft enough to mash with a fork.
- Transfer the contents of the pan to a food processor or blender and puree until smooth.
- Set aside Bring large pot of water to boil.
- Add the pasta, stirring to make sure the strands don't stick together, and cook over high heat to desired tenderness.
- Meanwhile, put 1 Tbs of the water in a nonstick frying pan and bring to a boil over medium.
- Add the broccoli and onion, reduce the heat to low, cover, and cook for 3 minutes.
- Add the shrimp, dill, and the remaining Tbs of water.
- Stir, recover and cook for 4-5 minutes until shrimp is pink.
- Remove from heat When the pasta is done, drain and return it to the pot over very low heat.
- Add the garlic puree and mix well to coat the pasta.
- Add the broccoli shrimp mix and the seasonings.
- Toss together until well blended and serve immediately.
FARFALLE SALAD WITH GRILLED SHRIMP AND BROCCOLI

- Prepare grill.
- In a bowl toss shrimp with salt to taste. Thread shrimp on metal skewers and grill on an oiled rack set 5 to 6 inches over glowing coals until cooked through, about 3 minutes on each side. (Alternatively, shrimp may be cooked without skewers in a hot well-seasoned ridged grill pan over high heat.)
- In a 6-quart kettle bring 5 quarts salted water to a boil and cook broccoli until crisp-tender, about 5 minutes. Transfer broccoli with a slotted spoon to a colander and rinse under cold water to stop cooking. Drain broccoli well and transfer to a bowl.
- In same kettle of salted boiling water cook farfalle until just tender and drain in colander, rinsing under cold water to stop cooking.
- In a large bowl stir together tomatoes with reserved juice, vinegar, garlic paste, sugar, thyme, and parsley. Add farfalle, broccoli, shrimp, pepper, and salt to taste and toss to coat. Just before serving add oil to salad and toss to coat. Salad may be made 2 hours ahead and chilled, covered.
BROCCOLI MACARONI SALAD
This salad was a big hit at a church function I attended. The lady who brought it told me basically what she had done, and I quickly bought the ingredients and fixed the salad myself the next day so I could jot it down and share with you all. Cook time is for cooking the pasta - also allow cooling time for the pasta (at least 30 minutes). Once assembled, the salad neds to chill as well - at least 1 hour before serving.

- In a large bowl, combine noodles, veggies, raisins, and sunflower seeds.
- In a small bowl, combine mayonnaise, Miracle Whip, vinegar, and sugar well.
- Pour dressing over salad and mix well.
- Season with salt and pepper to taste.
- Chill for at least 1 hour before serving in a covered bowl.
- Stir again before serving and adjust seasonings if needed.
- If too dry, add a an extra spoonful of may or Miracle Whip if desired.

- To begin, pat the shrimp dry and toss them with the old bay seasoning, turmeric, cayenne pepper, and garlic powder. Now, heat the ghee over medium-high heat in a large skillet. Add the shrimp to the pan and sear for ~3 minutes on both sides or until the shrimp is pink. Remove the shrimp from the heat, toss with 1 tablespoon of lemon juice and set them aside.
- Now, add the broccoli slaw, purple onions, bell peppers, cilantro, tomatoes and bacon to a large mixing bowl and aside.
- Now, add all of the ingredients needed for the dressing to a small mixing bowl and whisk until creamy.
