Homemade Pizza Buns image

These are just like the ones they sell in the grocery stores. Why pay too much for them, when you can make them easily at home for a fraction of the cost?

2 1/2 - 3 cups all-purpose flour
2 tsp sugar
1 tsp salt
2 1/4 tsp instant yeast (or bread machine or rapid rise yeast)
1 cup warm water (quite warm - 120-130° F.)
1 Tbsp vegetable, canola or other neutral oil
1 1/2 cups pizza sauce ((make your own or a good store-bought))
3 cups sharp cheddar cheese (shredded)

Steps:

  • For the dough: In a large bowl or the bowl of a stand mixer fitted with the kneading hook, mix together 2 cups of the flour, the sugar, salt and instant yeast. In a measuring cup, combine the warm water with the oil. Add the water mixture to the dry ingredients and mix to combine. Knead by hand or with the mixer, add more flour in small increments, as needed, until the dough comes together into a smooth dough. It shouldn't stick to your hands or be dry and crumbly. Grease a bowl and place the dough ball into the bowl. Cover with plastic wrap and let rise until doubled, about 30 - 45 minutes, depending on how warm your kitchen is.
  • Prepare two baking sheets by lining each with a sheet of parchment paper. Set aside.
  • Remove the dough to a floured cutting board. Cut the dough evenly in half. Cut each half in half again. Cut each piece in half again and then in half again, to make a total of 16 roughly equal sized pieces.
  • Take a piece of dough. Form it in to a rough ball, then stretch in to a circle about 4-5 inches in diameter. (You don't need to stretch them completely at this point. Once the dough has rested a few minutes on the baking sheet, they will be easier to shape, so you will be going back and stretching them out a second time later.) Place the dough circle onto the prepared baking sheet. Repeat with each piece of dough, placing 8 on each on the prepared sheets (you can place them fairly close together as they don't spread much, but don't allow them to actually touch each other). Go back to the first pieces you formed and stretch them a little more, as needed.
  • With all your rolled dough on the baking sheets, using a teaspoon from your cutlery drawer, top each piece of dough with two heaping teaspoon of pizza sauce, spreading it over the top, going as far to the edges as you can without it going over the sides. Top with a generous amount of shredded cheddar cheese. Repeat with all the buns. Let stand 20 minutes, while you preheat the oven.
  • With racks in the upper and lower third of your oven, preheat oven to 375° F. with the rack in the centre of the oven. After buns have stood for 20 minutes or so (or until they look a little puffy around the outside edges), bake in preheated for 20-25 minutes , switching the pans from top to bottom half way through baking. Cook until well browned. Remove from oven and allow to cool on baking sheet for about 5 minutes, then remove to a cooling rack to cool completely. Enjoy immediately or cover and refrigerate.   • Freezing: These buns freeze really well. Freeze them on baking sheet and then transfer to a freezer bag. To enjoy straight from the freezer, no need to thaw. Just place the frozen buns on a baking sheet and warm in a preheated 400° oven for 7 or 8 minutes.

These are nice to serve for a snack. My Mom used to serve them for her Bridge Group. I have served them with a bowl of soup for supper. If you like pizza, I think you will like these. This mixture can be kept in the fridge for several days and spread on buns when you are ready to use.

1 lb side bacon
1 lb mozzarella cheese (shredded)
1 lb cheddar cheese (shredded)
1 stick pepperoni
2 (10 ounce) cans sliced mushrooms
1 medium onion (diced)
1 green pepper (diced)
24 ounces spaghetti sauce
1/2 teaspoon oregano (or to taste)
1/2 teaspoon garlic powder (or to taste)
40 buns

Steps:

  • Slice bacon into small pieces and then brown it.
  • Drain fat from bacon.
  • Cut the pepperoni into slices and then quarter the slices.
  • Add onion, green pepper, and mushrooms to the bacon and heat until onions begin to soften. Stir often.
  • Add spaghetti sauce, pepperoni, oregano and garlic powder and heat through.
  • Cool.
  • Stir in cheese.
  • Spread on open-faced buns and broil until bubbly and cheese melted.
  • Enjoy!

1 cup sugar
1 cup mashed potatoes
1/2 cup lard or shortening
3 eggs, beaten
1 1/2 teaspoon salt
1 1/2 to 2 packs yeast
1 cup warm water
5 cups flour

Steps:

  • Mix together well the sugar, potatoes, lard, eggs, and salt.
  • Dissolve the yeast in 1 cup warm water; then add that to the above mixture.
  • Stir in about 3 cups flour. Add the remaining 2 cups flour while kneading. Knead until the dough is no longer sticky but moist.
  • Let rise until doubled.
  • Preheat oven to 325 degrees F.
  • Roll out dough to a 3/4 to 1-inch thickness. Cut into bun shapes with a jar or doughnut cutter (or cloverleaf or crescent-shaped cutter) and pour on greased cookie sheets about 2 inches apart. Let them rise until puffy but not doubled (they should not be touching).
  • Brush with milk. Bake until lightly golden brown, about 12 minutes.

1 large russet potato (about 12 ounces/340 grams), peeled
4 tablespoons (56 grams) unsalted butter, at room temperature
2 tablespoons (42 grams) honey
2 1/2 teaspoons kosher salt
2 large eggs
One 2 1/4-teaspoon packet instant yeast
3 1/2 to 3 3/4 cups all-purpose flour, plus more for dusting
Neutral oil, for oiling the bowl and plastic wrap
Poppy seeds, for sprinkling

Steps:

  • Put the potato in a medium saucepan with cold water to cover. Bring to a boil over medium-high heat and cook until tender, about 18 minutes. Drain, reserving 3/4 cup potato cooking water. Let the water cool until lukewarm (90 to 100 degrees F).
  • Use a ricer or food mill to puree the warm potato into the bowl of a stand mixer. (You can also mash with a masher; just make sure to get the potatoes very smooth.) Add the butter, honey and salt to the warm potatoes and stir until the butter is melted and the mixture is smooth. Add 1 egg, the yeast and the lukewarm cooking water. Mix with the dough hook on low speed to combine.
  • Add 3 1/2 cups of the flour and mix on low to combine. Knead on medium-high speed, adding up to 1/4 cup more flour, if needed, to make a smooth, slightly sticky dough that forms a loose ball on the dough hook, 6 to 8 minutes. Turn the dough onto a floured countertop and knead a few times to make a smooth ball. Oil a large bowl, add the ball and turn to coat. Cover loosely and let rise until doubled in size, 40 minutes to 1 hour.
  • Line 2 baking sheets with parchment paper.
  • Punch the dough down. Dust a clean, flat work surface with flour. Turn out the dough and cut it into 8 equal pieces. Working with one piece at a time, pinch the dough under itself to form a ball. With the pinched side down, cup your hands under the dough and rotate on the counter to form a smooth ball. Use one hand to roll the ball into a 4-inch-long oval roll. Place on a lined baking sheet and repeat with the remaining balls of dough. Cover with lightly oiled plastic wrap and let rise until light and airy looking, 30 to 40 minutes.
  • Place an oven rack in the lower and upper third positions. Preheat the oven to 400 degrees F.
  • When the dough has completed the second rise, beat the remaining egg with a tablespoon of water in a small bowl and gently brush the rolls with the egg wash. Sprinkle with the poppy seeds. Bake, rotating from top to bottom and back to front halfway through, about 20 minutes. Cool slightly on the baking sheets, then transfer to racks to cool completely. Rolls can be made a day ahead. For longer storage, wrap and freeze.

These are very yummy, moist and focaccia like buns. The original recipe comes from a famours German chef (the German Jamie Oliver), called Tim Mälzer. I have modified it slightly to suit my taste. Feel free to sub other herbs and spices for the Italian blend I used. These are great for dinner or lunch perhaps served with a soup or topped with cheese.

200 g potatoes, cooked (best day old, 1 1/4 cup)
300 g flour (2 1/2 cups)
2 teaspoons baking powder
1 teaspoon salt
2 tablespoons olive oil
175 ml water (3/4 cup)
1 teaspoon mixed Italian herbs (or whichever type you would like to try)
grated cheese (optional)

Steps:

  • Preheat your oven to 200°C/400°F.
  • Grate the potatoes finely into a big bowl.
  • Add flour, baking powder, salt, herbs. Mix well. Add water and oil. Stir well to combine.
  • Using your hands form small balls, put them onto a paper-lined baking sheet and flatten slightly. Sprinkle with cheese if using.
  • Bake for about 30 minutes (you might want to check after 20 minutes).
  • Enjoy.
  • Note: These are great eaten directly from the oven, but can also be eaten cold.

The elementary school I attended back in the 1950's used to make these, and were a favorite of most everyone. My wife and I spent a lot of time trying to recreate these when we were first married. Our kids (now in their 30's) still request these when they come to visit. We use canned pizza sauce but spice it up. Left-overs are easily reheated in the toaster oven.

8 hamburger buns, split
1 pound ground beef
⅓ cup onion, chopped
1 (15 ounce) can pizza sauce (such as Contadina®)
⅓ cup grated Parmesan cheese
2 ¼ teaspoons Italian seasoning
1 teaspoon garlic powder
¼ teaspoon onion powder
⅛ teaspoon crushed red pepper flakes
1 teaspoon paprika
2 cups shredded mozzarella cheese

Steps:

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
  • Place bun halves, crust sides down, onto a baking sheet. Broil the buns until just toasted, about 1 minute. Watch them carefully, they burn easily. Set the toasted buns aside.
  • Turn oven heat to 350 degrees F (175 degrees C).
  • In a large skillet over medium heat, cook and stir the ground beef until the meat is browned and crumbly, about 10 minutes. Drain excess grease, and stir in the onion. Cook and stir the beef mixture until the onion is translucent, about 5 more minutes, then stir in the pizza sauce, Parmesan cheese, Italian seasoning, garlic powder, onion powder, crushed red pepper flakes, and paprika. Bring the sauce to a boil, and simmer for 10 to 15 minutes to blend the flavors, stirring often.
  • Spoon the beef sauce over the buns on the baking sheet, and top each bun with about 1/4 cup of the shredded mozzarella cheese. Return the buns to the oven, and bake until the cheese is bubbly and lightly browned, about 10 minutes.

  • Cover and allow the rolls to rise for about 90 minutes or until they're quite puffy.
