I haven't made this yet, but it sounds so yummy! Like the kugel desserts I've had, only a touch healthier...I'm putting it here for safe keeping.

Number Of Ingredients 10

12 ounces wide egg noodles
1 apple, diced
1 pear, diced
1/4 cup raisins
1/3 cup prune, chopped
2 tablespoons Smart Balance butter spread
1 cup egg substitute
1 cup nonfat cottage cheese
1 tablespoon honey
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 350 and spray a 9 x 13 dish.
  • Cook and drain noodles. Place into large bowl.
  • Add fruit and Smart Balance, mix well. Add remaining ingredients.
  • Spoon into prepared dish, and bake 35-45 minutes.

JM'S BREAKFAST KUGEL image

Yield 8-12 - varies with the size of servings

Number Of Ingredients 12

12 oz broad egg noodles
1 cup grated Cheddar cheese (1/4 lb)
4 oz cream cheese
3 eggs
1 1/2 cups milk
1/4 cup soft butter
1 cup sour cream
½ cup sugar
½ cup creamed cottage cheese
½ tsp salt
½ cup dried bread crumbs
1/4 tsp cinnamon

Steps:

  • Prepare pasta according to package directions. Drain and rinse well. Return to saucepan. Process cream cheese with eggs in food processor or blender until smooth. Add remaining ingredients except cereal and cinnamon to egg mixture. Process until smooth, once again, (about 20 seconds) and then pour over noodles and mix well. Pour into a well-greased 9 X 13" glass baking dish. Sprinkle with crumbs and cinnamon, mixed. Bake at 350̊F for 1 hour, or until golden. Serve hot with more sour cream.

Kugel is a comfort food that is nice for breakfast or brunch. This version is very easy to prepare. Also, I usually have most of these ingredients on hand.

8 ounces wide egg noodles
1 cup raisins
5 large eggs
1 cup sour cream
1/2 cup melted unsalted butter, cooled
1/3 cup sugar
4 cups whole milk
3 cups corn flakes, coarsely crushed
1/4 packed dark brown sugar

Steps:

  • Preheat oven to 350^F.
  • Butter a 13x9x2 inch glass baking dish.
  • Place uncooked noodles in pan and spread evenly over bottom.
  • Sprinkle with the raisins.
  • In a large bowl, whisk the eggs, sour cream, sugar and butter.
  • Add the milk, whisking until smooth.
  • Pour the mixture evenly over the noodles and let stand for 5 minutes.
  • Combine the cornflake crumbs and brown sugar.
  • Sprinkle evenly over the noodles.
  • Bake about 1 hour or until set in the center.
  • Cut into squares and serve either warm or room temperature.
