12 corn tortillas
1 cup Simply Potatoes Traditional Mashed Potatoes
salt & pepper
1 cup vegetable oil
shredded lettuce
queso fresco (mexican cheese)
sour cream
mexican salsa

Steps:

  • Prepare the mashed potatoes, add pepper and salt to taste.
  • Spread a spoon of the potatoes on the tortilla and roll it up (warm up the tortillas on the microwave for 30-40seconds to make them flexibles).
  • Warm the vegetable oil in a pan, and fry the tacos (the closing part down).
  • Turn them and once that they have a golden color take them out. Place them on paper to absorb the excess of oil.
  • Serve 3 pieces on a plate, top with shredded lettuce,Crumbled Queso fresco, spoon of sour cream and salsa. (Chopped tomato optional).
  • Enjoy!

Official Contest Entry: Simply Potatoes 5Fix. I love potatoes! My grandmother used to call me her "mashed potato girl" when I was little. I never outgrew my love of them and love to make and try new things with them! This potato casserole is double potato goodness with hashbrowns AND potato chips!

20 ounces simply potatoes garlic and herb hash browns (partially thawed)
1 cup sour cream
1 (10 1/2 ounce) can cream of chicken soup
1 1/2 cups crushed potato chips
1 cup grated cheddar cheese

Steps:

  • Preheat oven to 350 degrees. Grease a large casserole dish and set aside.
  • Empty the partially thawed bag of Simply Potatoes Garlic and Herb hashbrowns into a large bowl. In small bowl, blend the sour cream and cream of chicken soup together and then pour into the hashbrowns and toss until well mixed. Place hashbrowns in casserole dish.
  • In another bowl, toss the crushed potato chips with the grated cheddar cheese and then cover the hashbrowns with them.
  • Bake at 350 for 45 minutes.

Official Contest Entry: Simply Potatoes 5Fix. This is a very simple recipe that I taught myself to make a few years ago. It's so good and simple to make that I would recommend this recipe for everyone!

Number Of Ingredients 7

1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
5 garlic cloves
200 ml tomato paste
1 1/2 liters water
1 tablespoon vegetable oil
salt, to taste
cinnamon, will give it enhanced flavoring

Steps:

  • Peel the garlic then mince it.
  • Fry the garlic in a pan on medium heat until it turns a golden brown color.
  • Add in defrosted diced potatoes with onions packet. Cover and fry for 10 minutes.
  • Move everything to a pot.
  • Add the tomato paste then the water. Stir it really good and let it come to a boil then add a little salt and cinnamon for flavor (Optional).

Official Contest Entry: Simply Potatoes 5Fix. I think this is one of easier recipes to follow and put together that I make and it taste good to. I scaled it down from a recipe that was given to me about twenty years ago, and added leeks. Just make sure you clean the sliced leeks in water.

1 (20 ounce) bag frozen Simply Potatoes® Shredded Hash Browns
1 (10 3/4 ounce) can cream of chicken soup
1 large leek (sliced and diced)
1 cup hot milk
1 1/2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 350 degrees. Slice the white part of leek and dice, put in small bowl of warm water to clean.(sand should go to bottom). Add potatoes, soup, cleaned leeks, milk, and 1 cup of cheese to a large casserole dish and mix together, sprinkle remaining cheese on top and bake for 30-40 minutes or top is golden brown.
