2 tablespoons butter
1/3 cup olive oil
1 (20 ounce) package Simply Potatoes Red Potato Wedges
1/2 cup basil pesto
2 scallions

Steps:

  • Place butter and oil in a large frying pan on medium heat. Cook potatoes on all sides until golden brown.
  • When potatoes are browned, place potatoes in serving bowl, mix in pesto then sprinkle sliced scallions on top and serve. Enjoy!

Animal-style skillet potatoes are diced potatoes cooked with a touch of Thousand Island dressing and topped with melted cheese and fragrant caramelized onions, a dish inspired by In-N-Out's (in)famous animal-style fries! Now, you can have the flavors of In-N-Out in the comfort of your own home - perfect as a side dish for breakfast, lunch or dinner!

1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
1 medium yellow onion, finely chopped
4 tablespoons olive oil, divided
1/3 cup thousand island dressing
3 slices American cheese

Steps:

  • First, start caramelizing the onions: heat 2 tablespoons oil in a large skillet over medium heat for 1-2 minutes. Place the onions in the skillet and let cook, without stirring, for 5-8 minutes, until the bottom sides have started to brown. Once the bottom sides have started to brown, reduce the heat to low and continue cooking, stirring occasionally, until the onions are thoroughly browned, about 20 minutes.
  • After the onions have been cooking for about 15 minutes, start cooking the potatoes. Heat remaining 2 tablespoons oil in a separate skillet over medium heat for 1-2 minutes. Add potatoes and cook, covered, until the potatoes are easily pierced with a fork, about 15 minutes. Stir occasionally.
  • Stir the Thousand Island dressing into the potatoes and stir gently to coat. Tear each slice of cheese into four pieces and place on top of the potatoes. Place the lid on the skillet and cook 1-2 minutes, until the cheese has melted.
  • Top with caramelized onions and serve.

3 (14 ounce) cans chicken broth
1 (20 ounce) bag Simply Potatoes O'Brien Hash Browns
1 (10 3/4 ounce) can cream of chicken soup
1/2 lb Velveeta cheese (cut into one inch cubes)
8 -10 pieces fried bacon (cut into small pieces)

Steps:

  • Bring chicken broth to a boil, then add hash browns. Boil for 10 minutes, then add soup and cheese. Stir until dissolved. Add bacon pieces to each bowl.

Ever make to much bacon at breakfast? Here is a great way to use it up at dinnertime. This is such a simple, but hardy side dish. Works great with BBQ or grilled meals! And if you do potluck, you will be a hit, I promise!

6 -7 medium potatoes, washed and cubed
5 -6 tablespoons unsalted butter (Smart Balance works great, with or without Olive Oil)
2 teaspoons kosher salt, coarse
1/2 teaspoon ground black pepper (add a little cayenne if you want some heat)
1 cup shredded cheddar cheese, sharp (more if you like it cheesy)
4 -5 slices bacon, cooked crisp & crumbled
1/2 cup ranch dressing, I use hidden valley

Steps:

  • Preheat oven to 425.
  • While preparing potatoes add butter to a 9x13 dish and stick in the preheating oven to melt.
  • Remove melted butter, add salt & pepper and stir well. Add potates and toss to coat.
  • Roast for 30 to 40 minutes, stiring every 10 min to get a crispy outside and super tender inside.
  • Remove from the oven and sprinkle with cheese, top with crumbled bacon. Drizzle with dressing from one corner to the opposite corner diagonally in a zig-zag pattern.
  • Return to the oven until the cheese is melted. Careful not to leave to long as to dry out the dressing.
