FRESH CORN AND TOMATO SALAD

3 tablespoons white wine vinegar
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
6 ears fresh corn, shucked
2 cups red or orange grape tomatoes, halved
8 ounces mozzarella pearls or fresh mozzarella, cut into small cubes
1 bunch scallions, thinly sliced
1 1/2 cups fresh basil leaves

Steps:

  • Whisk together the vinegar, 2 teaspoons salt and some pepper in a small bowl. Gradually whisk in the oil, starting with a few drops and then adding the rest in a steady stream, to make a smooth dressing.
  • Shear off the corn kernels with a sharp knife over a bowl (you should have about 4 cups). Toss in the tomatoes, mozzarella and scallions. Pour the vinaigrette over the salad and toss to coat. Cover and let stand for at least 15 minutes and up to 2 hours. Before serving, tear the basil over the salad and stir.

Summer in a side dish! This is a Dave Lieberman recipe that I adore. You can serve this any time of the year, but I think it's best during the summer. If you're looking for a delicious and different potato salad, this is it! **Added note - You may not need to add the entire amt. of dressing..do it to taste. 1 lb baby red potato, cleaned
5 medium ears of corn, shucked
1 pint grape tomatoes, halved
1 small red onion, peeled and sliced thinly
1 bunch fresh basil, rinsed and dried
1/4 cup extra virgin olive oil
2 lemons, juice of
1 teaspoon kosher salt
pepper, to taste

Steps:

  • Put potatoes into a big pot of salted water and bring to a boil. Cook approximately 15 minutes or until fork-tender.
  • Scoop potatoes out into a bowl filled with ice water (to stop the cooking).
  • Cook the corn in the same boiling water for about 5 minutes.
  • Remove cooled potatoes to a cutting board and cut into quarters. Put in a large salad bowl.
  • Add corn to the bowl of ice water, until cooled. Drain.
  • Cut the kernels off of each ear of corn and add to the salad bowl.
  • Add the tomatoes, onion and whole basil leaves (you can tear or julienne them, if you want).
  • Add olive oil and lemon juice and toss gently to combine.
  • Season with salt and pepper.
  • Serve immediately or you can let the flavors meld.

1 pound baby red potatoes, halved
1 pint (2 cups) cherry tomatoes, halved
3 scallions, thinly sliced
1/3 cup pitted black olives, halved
1/3 cup chopped fresh flat-leaf parsley
2 tablespoons capers, rinsed and drained
1 tablespoon chopped fresh thyme leaves
1/4 cup extra-virgin olive oil
1 large lemon, zested
Kosher salt and freshly ground black pepper

Steps:

  • Add the potatoes to a medium saucepan with enough cold water to cover by at least 2 inches. Set the saucepan over medium heat. Bring the water to a boil and continue boiling until the potatoes are tender, about 15 to 20 minutes. Drain the potatoes in a colander and allow them to dry for 5 minutes.
  • In a serving bowl, add the potatoes, tomatoes, scallions, olives, parsley, capers, thyme, olive oil, and lemon zest. Toss gently until all the ingredients are coated and season with salt and pepper, to taste. Refrigerate for 1 hour and gently toss again before serving.

Steps:

  • In a blender or food processor blend together the vinegar, the oil, the basil, and salt and pepper to taste until the dressing is emulsified. In a large saucepan combine the potatoes with enough cold water to cover them by 2 inches, bring the water to a boil, and simmer the potatoes for 15 minutes, or until they are tender. Drain the potatoes, let them cool, and quarter them. In a large bowl combine the corn, the potatoes, the tomatoes, the dressing, and salt and pepper to taste and toss the salad gently.

2 pounds medium Yukon Gold potatoes, cut into 1/4-inch thick slices
2 tablespoons olive oil, divided
2 poblano peppers
4 medium ears sweet corn, husked
6 green onions
2/3 cup sour cream
1/4 cup mayonnaise
2 tablespoons lime juice
1 cup crumbled Cotija cheese
1/4 cup chopped fresh cilantro
1-1/2 teaspoons grated lime zest
1/2 teaspoon salt
1/4 teaspoon pepper
Lime wedge, optional

Steps:

  • Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 5 minutes. Drain potatoes and toss with 1 tablespoon oil., Grill poblanos, covered, over high heat until skins are blistered and blackened on all sides, 8-10 minutes, turning occasionally. Immediately place peppers in a small bowl; let stand, covered, 20 minutes. Reduce grill temperature to medium heat., Brush corn with remaining 1 tablespoon oil. Place potatoes in a grill basket. Grill corn and potatoes, covered, over medium heat until tender and lightly browned, 12-15 minutes, turning occasionally. Cool slightly. Grill green onions until blackened, 5-6 minutes. Cut into 1-in. pieces and place in a large bowl. Peel off and discard charred skin from poblanos; remove stems and seeds. Cut peppers into 1/2-in. pieces and add to onions. Cut corn from cobs, add corn and potatoes to peppers., In a small bowl, whisk sour cream, mayonnaise and lime juice until blended; stir in cheese, cilantro, zest, salt and pepper. Add to potato mixture, stir to coat. Refrigerate, covered, at least 1 hour before serving. If desired, top with additional Cotija cheese, cilantro and serve with lime wedges.

1 tablespoon olive oil
1 1/2 cups fresh corn (cut from about 3 ears) or thawed frozen
1/2 cup buttermilk
2 tablespoons mayonnaise
1 tablespoon white-wine vinegar
3 large scallions, chopped

Steps:

  • Cut potatoes into 3/4-inch wedges. In a large saucepan of boiling salted water cook potatoes until just tender, 8 to 10 minutes, and drain well.
  • In a large skillet heat oil until hot but not smoking and cook corn, covered, over moderately high heat, shaking skillet occasionally, until browned, about 3 minutes. Cool corn slightly and combine with potatoes in a large bowl. Potatoes and corn may be cooked 1 day ahead and chilled, covered.
  • In a small bowl stir together buttermilk, mayonnaise, and vinegar. To potatoes and corn add buttermilk mixture, scallions, and salt and pepper to taste, tossing to coat.

1 1/2 cups fresh basil leaves, packed
salt and pepper, to taste
2 1/2 lbs red potatoes, small, quartered (do not peel)
6 ears corn, shucked
1/2 lb cherry tomatoes, halved and seeded
1 cup red onion, chopped

Steps:

  • Whirl the vinegar, oil, basil, salt and pepper in a blender to prepare the dressing.
  • Cook the corn; remove kernels from the cobs and cool completely.
  • Cover the potatoes in water (about 2 inches higher than the potatoes). Cook until tender (approx. 10-15 minutes). Drain and cool slightly. Toss with most of the dressing and set aside.
  • When completely cool, toss with the remaining ingredients and the balance of the dressing. Add additional salt and pepper to taste.
  • Best served at room temperature to allow the flavors to come through.
  • In a hurry? Use one tube of prepared basil in place of fresh basil. Shake the dressing to mix, do not use blender. Steam a large bag of frozen, petite yellow corn and cool it. I sometimes toss everything together, except the cherry tomatoes, while it's still warm.

Recipe courtesy Dave Lieberman From the Food Network Site. I made this for thanksgiving last year, and it went over really well. It's been requested again, this year. The recipe asks to cook your own corn, but I've found drained canned corn is just as good. Go easy on the basil and onions. The thinner the onion is sliced, the better, and you probably won't need a whole small onion. The recipe says to serve immediately, but this is one of those recipes that if you let the flavors mingle over night, it tastes all that much better. Use the best kind of olive oil you can find. A good olive oil is one that you can't smell. If you use a cheaper kind, all you'll taste is the oil.

1 lb baby red potato, scrubbed
5 medium ears of corn (about 3 pounds)
1 pint grape tomatoes, halved lengthwise
1 small red onion, peeled and sliced thinly (about 1/2 to 3/4 cup)

2 large lemons, juiced

Steps:

  • Place the potatoes in a large pot of salted water and bring to boil. Cook until just fork tender, about 15 minutes. Fish out the potatoes with a spider or slotted spoon and place them in a bowl of ice cold water to stop them from cooking.
  • Shuck the corn and break each ear in half. Cook in the same boiling water for 5 to 7 minutes until tender but not soft. Remove the cooled potatoes to a dish-cloth to drain. Immerse corn in the same ice bath until cool. Cut each potato into quarters and place in a large bowl.
  • Remove corn from water and also let drain. Use a chef's knife to cut the kernels off each ear. Add kernels to bowl. Add grape tomatoes, onion, and whole basil leaves. Add olive oil and lemon juice and toss gently to combine. Season, to taste, with salt and pepper. Serve immediately.

High summer produce comes together in this simple mix, tangy with lime juice and full of fresh herbs. Even in the height of the season, corn gets a touch sweeter when heated, and the easiest way to do it is in the microwave. It takes just a few minutes to zap the corn cobs in their husks, which makes them easy to shuck. The silks will slip right off the sweeter and still-crisp corn. Picking basil and cilantro leaves by hand then tearing them right over the salad keeps their delicate fragrance intact. Serve this with anything off the grill or alongside tacos or sandwiches.

  • Microwave the corn in their husks on high for 3 minutes. Shuck the corn - the silks will come off easily. Cut the kernels off the cobs, transfer them to a large bowl and add the tomatoes.
  • Finely grate the zest of the lime directly over the corn mixture, then squeeze the juice from the lime all over. Add the oil, a generous pinch of salt and the chile, if using. Mix well, then tear the herbs over the salad and gently fold them in. Season to taste with salt and serve, or refrigerate in an airtight container for up to 1 day.
